My Love Affair With Mac And Cheese
I have a mini love affair with mac and cheese. As a child, I would take it any way I could get it out of a box or made from scratch by Mom. Wait what am I saying, I do that now Mounds of cheese melted into a velvety, creamy sauce and tossed with pasta. Yes, please!
There are lots of recipes for macaroni and cheese in the world and to be completely honest, Id probably love most of them. That said, I do think there are a few key elements for the best mac and cheese.
How To Make It
Im going to walk you through how I make mac and cheese in my own kitchen. If you want to watch me do it, theres a quick recipe video above that shows each step.
Step 1, Warm milk in a saucepan or in the microwave. Warm milk helps to make the whole sauce making process go a bit quicker and according to Julia Child, warm milk prevents a lumpy cheese sauce.
Step 2, Make a roux with butter and flour. Basically a roux is a cooked paste made with butter and flour. When milk is added later in the recipe, its this butter-flour paste that helps the cheese sauce to thicken.
Step 3, Whisk in the milk and thicken the sauce. When the roux is a golden color and smells nutty , I whisk in the warm milk. As the milk heats up with the roux, it thickens and turns silky smooth.
Step 4, Adds spices and the cheese. When the milk is a silky thickened sauce, I whisk in a few spices and the shredded cheese. When the cheese has melted into the sauce, I always taste and check for seasoning. Its likely that some salt needs to be added.
Step 5, Stir in slightly undercooked pasta, add to a baking dish, and bake. As I mentioned above, I undercook my pasta by 2 minutes, drain, and then rinse it of excess starches. This makes sure that my sauce stays creamy while it bakes in the oven. The macaroni and cheese bakes for about 30 minutes.

I grew up in a boxed mac and cheese household, and just like when I learned how to make homemade mashed potatoes, when I discovered how easy homemade macaroni and cheese was to make, I had no idea why we hadnt just been making it from scratch all along.
It takes exactly the same amount of time, and if you keep a basic stocked kitchen, cheese and any sort of pasta in your house, YOU HAVE THE INGREDIENTS TO MAKE THIS.

Best Cheese For Mac And Cheese
A combination of Gruyere and mozzarella cheese. Gruyerefor the most superior flavour with the best melting qualities for creamy sauces such as this theres no contention in my view. And mozzarella for stretch nothing does the cheese pull like a good mozzarella!
But honestly, any cheese that melts well works is excellent with Mac and Cheese, such as cheddar, tasty, Colby, Swiss, Pepper Jack, Emmental.
Stovetop Mac And Cheese Option
I love the golden brown edges and top that baking the macaroni and cheese creates, but you dont need to bake it if you dont want to. For a stovetop mac and cheese, simply add the pasta to the cheese sauce and then let it sit, covered for a few minutes. This time gives the pasta a chance to absorb some of the sauce. - You can also freeze stovetop or baked mac and cheese for up to two months. To reheat, defrost overnight and bake or warm on the stove until heated through. Or bake from frozen. It will take about 1 hour.

How To Make Baked Mac And Cheese
Its a straightforward recipe, starting with a basic butter-flour roux that is used to thicken milk to make the cheese sauce. For first timers, I think the short video below will help give you the confidence that youve got this!

Tips For The Best Mac & Cheese
Freshly grated cheese dont use pre shredded. They have anti caking agents that can make the sauce grainy
No bloated overcooked pasta Cool macaroni slightly and lightly coat in butter. This stops the macaroni from absorbing more liquid while baking, resulting in bloated overcooked pasta and less sauce
Stir constantly once you add the milk to ensure your sauce is silky smooth
Plenty of sauce Because I like my Mac and Cheese saucy, not dried up so you can cut it like cake!
Can you make Mac and Cheese ahead of time? Most recipes are not suitable for making ahead, but this recipe is! The best way is to cool pasta then toss with sauce and adding breadcrumb topping. Cool, refrigerate or freeze then bake on the day of.
How long can Mac and Cheese stay in the fridge? This Macaroni Cheese recipe is good for 3 to 5 days in the fridge. Most will not keep well because theres not enough sauce so it gets absorbed by the pasta and youre left with dry, sauceless pasta.
Freezing? Yes! Assemble, cool, do not bake, just freeze it. Thaw then on the day of, bake per the recipe.
Add ins? This recipe is great as it is, but theres tons of add-in options. Add shredded chicken, sautéed onion and bell peppers/capsicum, bacon, hot sauce , dried herbs of choice

A Few Things To Keep In Mind:
Cook the pasta a minute or two short of what the box recommends. Since were going to bake it a bit longer in the oven, it could get mushy if it were cooked all the way through on the stove top.
Starting with ingredients all at room temp will help to keep your sauce from breaking and curdling. Set your cheese and other dairy out for a bit to get it to room temp as a little extra insurance that wont happen.
Unlike some other potluck-friendly dishes, I wouldnt recommend making this dish in advance. It is best served fresh, right after being baked.

|2 lbs sharp cheddar cheese|
|2 lbs elbow macaroni|
- Melt butter in 3 quart or larger kettle, cook onion in butter until soft.
- Add flour mixed with salt, mustard, and ginger, and cook, stirring constantly until bubbly.
- Remove from heat, add milk, stirring or whisking continuously.
- Put back on heat and continue stirring until sauce thickens.
- Remove from heat, stir in worcestershire sauce and cheese.
- Stir until cheese is melted.
- Mix with elbow macaroni cooked according to package directions.
- Bake in a 400°F oven in two buttered 11X15 shallow pans,or three buttered 2 quart casseroles, or two 3 qt casseroles.
- Bake uncovered for 20 minutes, then covered for an additional 15-20 minutes.

Macaroni And Cheese For 50
This large quantity pasta recipe makes approximately 3 13″ x 9″ x 2″ pans or 2 12″ x 20″ x 4″ pans. Serving size is about 1 cup. This recipe can be cut in half to serve 25
3 1/2 pounds elbow macaroni or favorite short pasta
3 sticks butter or margarine
8 ounces all purpose flour
2 tablespoons salt
1 medium onion, grated or finely minced
1 gallon whole milk
4 pounds sharp Cheddar cheese shredded. A combination of Swiss, Fontina, mozzarella, Colby or Monterey Jack may also be used
1 pound bread crumbs
6 ounces melted butter or margarine
Preheat oven to 350º F. In large stock pot, cook macaroni according to package directions. Drain. Melt butter in the same stock pot or in a large saucepan. Stir in flour, salt, dry mustard and onion. Cook, stirring frequently, 5-10 minutes.
Add milk gradually, stirring constantly with a wire whisk. Cook until thickened and onions are softened. Add cheese to sauce and stir until cheese melts.
Pour over pasta and mix thoroughly. Pour into pans. If using topping, add bread crumbs into melted butter and mix well. Divide evenly and sprinkle over macaroni and cheese. Bake about 35 minutes or until hot and bubbling
Variations:Bacon or Ham: Cook 2 pounds of bacon until crisp, cool, crumble. Mix bacon into cooling pasta. Reduce salt if necessary
Ham: Add 3 pounds chopped ham. Mix into pasta before adding cheese sauce. Reduce salt if necessary
Seasoned: Sauté 5 or more finely minced garlic cloves in 3-4 tablespoons of the butter

And stir together until its all melted. Go ahead and turn off the heat.
Now its time for seasoning! Add about 1/2 teaspoon salt, 1/2 teaspoon seasoned salt If youre sensitive to salt, start really low and work your way upand remember that the cheese imparts quite a bit of salt to the mix.
BUTand this is importantbe careful not to UNDERSALT the mac & cheese. It really needs ample salt to put the flavor over the top.
*I also use paprika, cayenne pepper, even ground thyme every now and then. Play with different ground spices and see what you like best.
And finally, add plenty of black pepper, of the Black Dust variety. Honestly, I love freshly ground pepperbut not in homemade Mac & Cheese. For me, it has to be the powdery stuff.
Now THATs what Im talkin about.
And guess what? You can just steam some fresh broccoli and spoon some of this over the top. Kids from all over the land will show up at your doorstep.
