Whats The Differencebetween New York And Philadelphia Cheesecake
Believe it or not, this cheesecake rivalry isnt necessarily one between states. The Philadelphia cheesecake name actually comes from the cream cheese brand. In fact, youll usually see Philadelphia Cheesecake referred to simply as cheesecake, while New York style is a different variation. The main difference is that New York Cheesecake uses fats beyond the cream cheese to get its thickness, usually sour cream and eggs. In classic cheesecake, there is no need for eggs, especially if its not baked.

How To Make Cream Cheese:
As I said above, the method for making cream cheese is actually very similar to making ricotta Heat your milk, add a coagulant, leave to curdle, drain and blend!
Okay, theres a little more to it than that, but you get the gist.
- optional add-ons dried herbs, garlic powder, dried chillies
Note* You could alternatively use half whole milk and half heavy cream OR completely use whole cream for soft cheese that is richer/creamier
You will also need a cheesecloth or a fine-mesh sieve
Begin by pouring the milk in a saucepan. Heat the milk and bring it to boil over medium-high heat.
As soon as it boils, add the lemon juice and then turn off the heat.
Set aside for a few minutes while the milk curdles. Youll notice curds forming and a yellow-ish liquid being left behind.
Within a few minutes, all of your curds should have formed. Pour the curdled milk through a cheesecloth and a sieve to strain all the liquid whey.
Alternatively, you can use a slotted spoon to scoop out all the curdles, while leaving the liquid whey in the pot.
Note* This leftover whey can then be used in a variety of ways. Ive talked about this more in my DIY How To Make Paneer At Home post.
Rinse the curdled milk with cold water by pouring the water over the sieve. This will help to get rid of any extra whey, clinging to the curds.
Squeeze the curdled milk as much as possible to drain any last drop of the liquid whey.
How to eat it?
And a bazillion other ways.

My Honest Review Of The Philadelphia Cheesecake Recipe
The first thing I noticed about this cheesecake was how brown the edges were. It looked almost like the beginning stages of a Basque burnt cheesecake a cheesecake known for its deep, dark browning. This most likely has to do with the fact that this cheesecake is baked directly in the oven without the protection of a water bath. The center was rather pale, and it also sunk in the center. It wasnt the most attractive cheesecake but it wasnt ugly, either.
Taste-wise, the cheesecake was fairly standard. The crust was crunchy and had a nice texture, but was rather bland. A bit of cinnamon or vanilla extract could have helped it take on more personality. The cheesecake itself was smooth, creamy, and not too sweet. The tang of the cream cheese was still present and provided a nice contrast to the sweetness.
While there was nothing to dislike about this cheesecake, there was also nothing to love, either. The flavors were mild and muted, and nothing stood out as exciting or interesting. This recipe could come in handy if you wanted to create an off-the-cuff cheesecake using fresh fruit you picked up at the market, but its not worth making again without a little extra love. Try adding lemon zest, some additional extracts, or topping it with something fun like macerated fruit. The cheesecake is so incredibly simple that it needs a pop of excitement to bring it to life.
Ill be keeping this recipe in my back pocket, but only as a base formula I can riff on.

How to make delicious, soft homemade Cream Cheese using a super-simple method and 3 ingredients you probably already have in your kitchen
If Id know how simple it was to make DIY cream cheese, I would have been making it months ago. Somehow Ive managed to go through DIYs for DIY Homemade Ricotta Cheese and DIY: Homemade Herb Butter without trying this simple cream cheese method, which is actually a bit of in-between method of both of them.
In fact, Im still being surprised at just how many ingredients you can make/get from a single dairy product. Cream cheese, cheese, butter, buttermilk, whey and more.
Smooth and creamy soft cheese only requires three ingredients, that you probably already have Whole Milk, Lemon Juice and Salt. It can also be customised in any way youd like with herbs, pepper, sweet chilli, etc or used for a variety of sweet or savoury purposes.
You are able to experiment with the milk used as well: Combining milk and cream in equal parts instead of just using milk, or even using heavy cream alone. Obviously the more cream you use, the richer and creamier your final product. However, it would also up the fat levels.
I thought Id keep things super simple for the first time trying homemade cream cheese and I loved it so much that I didnt feel the need to complicate or change the recipe in any way.

If Youre Making A Philadelphia Cheesecake A Few Tips
When youre ready to bake a Philadelphia Classic Cheesecake, here are a few things to keep in mind.
1. Lightly coat your springform pan in nonstick cooking spray: This will prevent the edges of your cheesecake from sticking to the sides.
2. Consider using a water bath: If the idea of brown edges on a pristine white cheesecake bothers you, consider baking this recipe in a water bath. Just wrap the springform pan in foil, place it in a large baking dish filled with 1-inch of water, and bake until the center is no longer jiggly. Your edges will be less likely to brown this way.
3. Try adding some spices to the crust: The crust is rather plain, so feel free to add cinnamon or other spices to add some additional flavor. Half a teaspoon of ground cinnamon would completely transform it.
4. Try adding some additional flavoring to the base: Lemon zest, oil, or extract would help take this cheesecake to a whole new level.
5. Dont rush the cooling time: It needs the full four hours to set so be patient.

History Of Cream Cheese
Cream cheese is made from cows milk-whole or skim. It is soft, smooth, creamy, white, slightly salty, slightly sweet, rich, and spreadable. It was first made in Europe in the Neufchatel-en-Bray village of Normandy, Franceand so naturally it was called French Neufchatel. It had a different texture from the one I described: more semi-soft than soft, and somewhat grainy.
Though first recorded in 1543, it dates back to 1035 and is considered to be one of Frances oldest cheeses. Eaten fresh or after eight to 10 weeks of maturity, the taste is similar to Camembert : nutty, salty, and mushroomy.
In 1969, it was granted AOC status, a French certification authenticating that the cream cheese was indeed made in Neufchatel region of France. It comes in various shapes and sizes: cylindrical, square, boxed-shaped, and heart-shaped. It could be commercially-, farm- or artisan-made. The artisan version is usually encased in a white rind.
Cream cheese was first documented in England in 1583. The version we are familiar with here in the United States was first made in the late 19th century. The U.S. Department of Agriculture decreed that American commercial cream cheese must have at least 33% milkfat and 55% moisture with a pH balance between 4.4 and 4.9, and the milk must be cow. You can, however, make your own artisan cream cheese using yak, goat, sheep, buffalo, llama, or whatever your animal milk preference, other ingredients, and under whatever production process you choose.
