After years of searching, I finally found the best creamy mac and cheese recipe around. Super cheddary, rich, and easily made on the stove top in under 30 minutes This is going to be making many more appearances on our family table.

Lets talk about this delicious recipe thats ready to go in about 20 minutes from start to finish and only requires one pot.

For most of my homemade mac and cheese making life, Ive always done the two-pot method one for cooking the pasta, and one for making the cheesy sauce which totally works! But dishes have always been the bane of my existence. AND when I started posting on Instagram about my macaroni and cheese recipe experimenting this month, I heard from many of you who recommended the one-pot method. Because apparently cooking the pasta in the sauce itself releases all of those starches into the saucewhich makes it extra creamyand also helps bind the sauce to the pasta even better. Also, the entire process only takes about 15 minutes to cook. And also, no need to wash the extra pan.

Can You Bake Leftover Mac And Cheese

Yes, you can reheat leftovers in the oven or in the microwave. Cover the dish loosely with foil and reheat in a 325 degree F oven just until warmed through. You can remove the foil cover during the final few minutes to allow the top to brown or the edges to get crispy.

To reheat individual servings, just cover loosely and microwave for about 30 seconds .

Secret Ingredient Creamy Mac And Cheese

First, I dont want to be all secretive and click-bait-ish with my secret ingredient title. Although uncommon, Im probably not the only one to ever add these special ingredients to mac and cheese.

Furthermore, theres actually more than one secret, or special, ingredient to my recipe. Here they are.

  • Seasoned croutons add more flavor than panko or traditional bread crumbs. Typically, I make homemade croutons. You can also use store-bought, seasoned bread crumbs, crushed. Actually, you can use any flavor you want. Furthermore, you can use panko if you dont have croutons.
  • Sriracha, ground red pepper, or hot sauce Just a pinch or splash adds just enough flavor just the slight hint of heat. Thats all you need.
  • Cream cheese Cream cheese keeps mac and cheese creamy and adds flavor. Use full-fat cream cheese.

    Stick With The Stovetop

    All too often, baked macaroni and cheese takes on more of a casserole feel than the creaminess you’re looking for here. To prevent that, cook it entirely on your stovetop rather than finishing it in the oven. The sauce won’t get overly thick and clumpy on the stovetop, meaning the end result will be creamy and silky smooth just what you’re after.

    • Pasta Shapes to mimic the classic recipe, I normally use elbow pasta. But any short-cut pasta works just as well! Medium shells, penne, rotini, etc. Just note that different pastas will have slightly different cook times, so use the recipe times as an approximate.
    • Cooking Liquids like I mentioned above, I prefer the taste and consistency of chicken broth, evaporated milk and heavy cream. However, feel free to test out different proportions of those liquids, or try out different liquids. Just note that I can only vouch for this recipe as written.
    • Cheeses As with most mac and cheese recipes, the types of cheese called for are not the only ones you can use. Monterey Jack, Pepper Jack, Colby, Gruyere, sharp cheddar any and all!

  • Start by heating a large pot or dutch oven over medium/high heat. Then add butter, and allow it to melt fully.
  • When the butter is melted add the all-purpose flour and whisk until the butter and flour form a crumble or paste.
  • Slowly add milk to the pot by pouring slowly, and whisking constantly. Continue to whisk the roux over medium/high heat for about 4-6 minutes or until the roux thickens.
  • When the roux is thick, remove from heat, and then its time to melt the shredded cheese!
  • Congrats, youve made your roux! This will give your mac the thick and creamy texture youre looking for.
