If youve got a pulse, I assume you love creamy mac and cheese. The question of Why we love it is a real nature vs nurture debate.
The Nature side says that all people are born with an instinctual drive to consume melted cheese, the highest form being Creamy Homemade Mac and Cheese.
While the Nurture side would argue that this love addiction is likely inherited from our parents pushing boxed mac and cheese on us like street peddlers from the time that we could hold a fork. To their credit, we loved every bite.

Do You Need To Bake Mac And Cheese
Creamy mac and cheese recipes that start with a roux-based sauce , do not need to be baked before serving. A creamy stovetop mac and cheese recipe is designed to go straight from the pot to the plate — no oven necessary. You could also serve this mac and cheese without baking — it will just be really saucy. By contrast, Southern-style mac and cheese recipes must be baked in order to cook the egg and help the dish set.
The Best Stovetop Mac And Cheese Recipe
I should probably say right now that this recipe is the real deal. Because on the special occasions when I indulge in creamy mac and cheese, Im not interested in healthy shortcuts. Gimme all the carbs + all the cheese, please. ?
Lets talk about this delicious recipe thats ready to go in about 20 minutes from start to finish and only requires one pot.
For most of my homemade mac and cheese making life, Ive always done the two-pot method one for cooking the pasta, and one for making the cheesy sauce which totally works! But dishes have always been the bane of my existence. AND when I started posting on Instagram about my macaroni and cheese recipe experimenting this month, I heard from many of you who recommended the one-pot method. Because apparently cooking the pasta in the sauce itself releases all of those starches into the saucewhich makes it extra creamyand also helps bind the sauce to the pasta even better. Also, the entire process only takes about 15 minutes to cook. And also, no need to wash the extra pan.
Sounded like a win-win-winwinwin to me.
Sure enough, after testing a few batches, Im now a total convert to the one-pot camp. Works like a cheesy charm! ?
Also, lets talk about your cheese options here.
Also, if you want an even creamier mac and cheese, youre welcome to use half cheddar, and half gouda or fontina . But 99% of the time, I keep things simple with straight cheddar and never regret it.
The skys basically the limit here.

Can You Bake Leftover Mac And Cheese
Yes, you can reheat leftovers in the oven or in the microwave. Cover the dish loosely with foil and reheat in a 325 degree F oven just until warmed through. You can remove the foil cover during the final few minutes to allow the top to brown or the edges to get crispy.
To reheat individual servings, just cover loosely and microwave for about 30 seconds .
Secret Ingredient Creamy Mac And Cheese
First, I dont want to be all secretive and click-bait-ish with my secret ingredient title. Although uncommon, Im probably not the only one to ever add these special ingredients to mac and cheese.
Furthermore, theres actually more than one secret, or special, ingredient to my recipe. Here they are.

Stick With The Stovetop
All too often, baked macaroni and cheese takes on more of a casserole feel than the creaminess you’re looking for here. To prevent that, cook it entirely on your stovetop rather than finishing it in the oven. The sauce won’t get overly thick and clumpy on the stovetop, meaning the end result will be creamy and silky smooth just what you’re after.
Variations Of Crock Pot Mac And Cheese
- Pasta Shapes to mimic the classic recipe, I normally use elbow pasta. But any short-cut pasta works just as well! Medium shells, penne, rotini, etc. Just note that different pastas will have slightly different cook times, so use the recipe times as an approximate.
- Cooking Liquids like I mentioned above, I prefer the taste and consistency of chicken broth, evaporated milk and heavy cream. However, feel free to test out different proportions of those liquids, or try out different liquids. Just note that I can only vouch for this recipe as written.
- Cheeses As with most mac and cheese recipes, the types of cheese called for are not the only ones you can use. Monterey Jack, Pepper Jack, Colby, Gruyere, sharp cheddar any and all!
- Seasonings feel free to add in additional seasonings that you love in your mac and cheese.

Trick : Use The Microwave To Reheat Mac And Cheese
To make sure mac and cheese do not end up too oily, I like to reheat it in the microwave. I like this trick better than the pan one because it is simple and I get the creamy taste that I love.
Now to be fair, reheating pasta in the microwave does tend to change the texture. However, it is great for lunch or when you are in a hurry.
So here are the steps:
The time you set on the microwave depends on how cold your food is. When you stop to mix the mac and cheese, also check the consistency of the cream. You can add more milk to make it creamier.
Pro tip: You can also use heavy cream as a substitute for milk to add flavor. We also have heavy cream substitution ideas for you.
Once its reheated, just add the toppings and dressings you like to enjoy the refreshed bowl of mac and cheese. And as soon as you finish the leftovers, you can start planning for the next time you cook it.
You will love these mac and cheese recipes that will help you satisfy your craving for the cheese galore.
So, whenever you feel like breaking the daily routine and cooking something with a bit of a twist, you can enjoy some great mac and cheese.

The Best Cheese For Mac And Cheese
Sharp Cheddar is my first choice for flavor however you can certainly use your favorite cheeses. Mix it up and use a bit of gruyere, or even pepper jack for a little kick. If you have bits of cheese leftover, you can combine them all together in this easy homemade cheese sauce.
This recipe has a special ingredient that is a little bit unconventional but makes it extra yummy AND it is optional. The addition of cheddar cheese soup makes the sauce a little bit extra velvety and just adds a little something. I think its much better than Mac and cheese with Velveeta! Give it a try! .

Super Creamy Mac and Cheese is insanely rich and delicious. One taste and you will be hooked. Whether eaten as a side or a main dish, this is a recipe you will want to make over and over. Three types of cheese give Super Creamy Mac and Cheese a whole lot of cheese flavor.
We have sharp cheddar , wonderfully melty Monterey Jack, and last but not least Velveeta.
Im not a huge fan of Velveeta but theres no question it gives mac and cheese a wonderfully creamy texture.
Wonderfully cheesy and totally indulgent.
Life should have more mac and cheese.

Ingredients In Homemade Mac And Cheese
- Butter and Flour These are the base of the roux, which is used to thicken the sauce.
- Milk and/or Half and Half You can make this mac and cheese with all whole milk, all half and half, or a blend of the two. I usually use a blend of two.
- Seasonings Keep it simple with salt, pepper, garlic powder, mustard powder, and a hint of cayenne.
- Cheese The most important part! I use a blend of cheddar, Monterey Jack, and Pecorino Romano cheese. Pick an aged cheddar for the most flavor. Of course, you can also experiment with your favorite cheeses. Try subbing some of the cheddar for American cheese for a more classic blue box style mac. Or try Gruyere, provolone or fontina!
- PastaUse hearty macaroni noodles , and cook them in salted water for the best flavor.
Help Why Is My Mac And Cheese Oily Instead Of Creamy
Q: Ive been on the hunt for the perfect mac and cheese recipe and have tried 5 different recipes, but I keep running into the same problems: the cheese separates, the dish is too oily, and there is no creamy texture. Most recipes Ive tried use a roux-based cheese sauce. Is that the issue?
Is there a fail proof recipe out there?
Sent by Megan
Editor: Megan, Ive found the creamiest mac and cheese starts with a mornay sauce, which is probably the roux-based sauce your recipes used. To keep the sauce from separating, make sure to grate the cheese so it melts quickly, stir it into the hot milk mixture off the heat, and coat your noodles with the sauce as quickly as possible.
My favorite baked mac and cheese recipe is Martha Stewarts, but you might also want to give our roux-less stovetop version a try:

Okay guys, let me guess one of your kids favorite meals probably chicken nuggets, and Id guess macaroni and cheese too. Am I right? Thought so lol. My kids LOVE mac and cheese. Of all forms, all flavors, even the Kraft easy mac that you microwave. They go nuts. So over the years Ive made several varieties of homemade mac and cheese, to try to get them to please for the love of all things holy, eat something I cooked for you!!.
This macaroni and cheese dish isnt just for the kids it has some grown up flavors, and its a little bit healthier. Although, as youre eating it, you wont be able to taste that its healthier all youll taste is a deliciously creamy sauce and some amazing flavors. Want to know the secret?
Yep, almond milk! Do you guys drink this stuff? Its actually pretty good and its really good for you
You can choose any pasta shape that you like for this macaroni and cheese classic elbows, some penne, rotini, anything! I love the curly and fun shape of cavatappi Part of the unique flavors of this dish comes from the cheeses used the white cheese you see there is gruyere. It. Is. Amazing! Its rich, nutty, and delicious. I paired it with a sharp cheddar.
I chose to garnish mine simply with just a few extra crumbles of bacon, but it would also be delicious with some fresh chopped chives or just some minced parsley.
I hope you all try this one
Dont Overcook Your Pasta
The biggest mac and cheese no no? Overcooking your pasta! So instead of cooking your macaroni according to package instructions, only cook it for 7 minutes! This will yield a very al dente pasta that wont get mushy when you add the cheese sauce. Even overcooking your pasta 1-2 minutes can make it soggy and unappealing, so really keep an eye here!

Making Mac And Cheese Ahead Of Time
- Make as directed , transfer to baking dish and cool completely. Cover tightly with foil and refrigerate 1-2 days ahead.
- Before baking, let dish sit on counter for 30 minutes.
- Bake at recipe temperature for 25-35 minutes, until hot and bubbly.
As a caveat, this recipe, as with most mac and cheese recipes, loses some of its creaminess when made ahead. This dish has been tested when made right away, which yields the best results.
I would increase the amount of sauce slightly if you need to make this recipe ahead of time.
Creamy One Pot Macaroni And Cheese
I have all kind of macaroni and cheese recipes on the blog, and today I have a Creamy One Pot Macaroni and Cheese to add to the collection. This is a great recipe to make for lunch when your kids are in the mood for something simple, hot, and filling, and you need something that comes together in without any fuss. This recipe is so easy and we loved the extra creamy results.
This recipe is extra easy because you cook the macaroni right in the milk that helps to make the sauce. Theres no water to boil or noodles to rinse. You just cook it all in one pan and its done in about 15 minutes. This is literally just as easy as that blue box stuff, but it tastes like real food and doesnt have a fluorescent orange glow to it. Trust me, that fake mac n cheese is just gross once you start making your own.
My other stove-top macaroni and cheese recipe is still a favorite, but I dont always have canned milk on hand. The difference between the two is that this recipes makes a really thick and sticky macaroni and cheese , and the other recipe has almost a runny sauce to it. They are both excellent but different enough that I wanted to share both recipes.

How To Make A Roux
First time making a roux? No problem! Check out this super simple tutorial:
Congrats, youve made your roux! This will give your mac the thick and creamy texture youre looking for.
Be Careful With The Roux
Though a roux is important for thickening up your cheese sauce, you want to make sure that you don’t add too much of your flour and butter mixture because otherwise the sauce can get too thick, which negatively impacts the creaminess. Too much butter and flour will make your sauce more like glue than a creamy, rich sauce.
