How To Make Homemade Cream Cheese
This Homemade Cream Cheese could not be easier to make, because everything you need to make rich, creamy, and tangy cream cheese is most likely already in your fridge.
Believe it or not, my Homemade Cream Cheese is actually made with milk. I use whole milk in this recipe to get the richness we all know and love in a thick cream cheese. It starts with milk, then I use lemon juice. Thats right: these 2 ingredients create a reaction which curdles the cheese. Then its just the process of straining the cheese from the whey, and what I have left is the beginnings of my cream cheese.
After blending thoroughly, I transfer the mix to an airtight container and store it in the fridge. This way, I always have cream cheese waiting on me for baking, cooking, and of course, spreading onto a freshly toasted bagel!
How To Make Chocolate Loaf Cake With Chocolate Cream Cheese Filling
In a large mixing bowl, whisk together the dry ingredients: all-purpose flour, cocoa powder, salt, baking powder and baking soda. Set this mixture aside.
Cream the butter and sugar on a stand mixer bowl until the mixture is light, creamy and fluffy. You can scrape the sides here with a spatula from time to time as needed.
Once fluffy, add the eggs one at a time to the creamed mixture. Mix the eggs well after each addition.
Next, you are going to alternately add the flour mixture and the buttermilk. The order will be like this:
- With the machine running at low speed. Add 1/3 of the dry ingredients, beat to incorporate.
- Add 1/2 of the buttermilk and increasing the mixer speed, mix it well. Add another third of the flour mixture. Beat well.
- Add the remaining half of the buttermilk, and finally, beat in the remaining flour mixture. The resulting chocolate batter should be lump-free and smooth, but dont beat it more than you have to.
Pour half of the chocolate batter on a greased 9×5 loaf pan. Spoon the cream cheese batter over the top, being careful to keep it contained at the center. Top the cream cheese with the remaining batter, covering much of the white as you can.
Bake the loaf cake at 350 F for 50-55 minutes. The cake is done when a toothpick tester comes out with a few moist crumbs. Let the cake cool slightly, then pour the chocolate glaze on top.

So as you consider the right consistency for the butter and cream cheese, it should be a little cool to the touch, but soft enough that if poked, it makes an indention without your finger going straight through it.
As for ratio of butter to cream cheese, I use a little less butter and a little more cream cheese. If youre going for a cream cheese frosting, I say really go for it. Theres not a big decrease in butter, but just enough to make sure it doesnt steal the show.
Once youve combined your cream cheese and butter so that its nice and smooth , its time to add the powdered sugar. I know its tempting to reduce the amount of powdered sugar and might seem harmless, but this is what adds volume and structure to the frosting. If you reduce the amount of powdered sugar, just know that itll affect the final consistency. If youre looking for a pipe-able frosting, be sure to use the full amount.
The final ingredient is the vanilla extract, which adds nice flavor to the cream cheese frosting for that last final touch!

Use a regular full-fat cream cheese brick at a cool room temperature. Do NOT use whipped or spreadable cream cheese made for bagels. Ive found that some off-brand cream cheese bricks have an unappealing, almost watery texture. Go with a quality brand when possible.

When it comes to cakes, I up the powdered sugar by just a bit. A cup to be exact. Although youll find that they way the recipe is written below, I double the frosting for a cake. Its enough frosting to generously frost a three layer 8-inch cake and have frosting between the layers and on the outside of the cake.
