We look forward to this time of year. This is because were able to order the Brick Cheese. I know we can get in the summer but it has to stay cold. So the cost of shipping in the summer puts out of range. As the cheese ages the taste gets better everyday. You will not be disappointed ordering this cheese. I would bet you order another right after finishing the first one.

The Best Substitutes For Brick Cheese

  • How to choose a brick cheese substitute.
  • Wisconsin brick cheese was first made in the late 1800s and its name has a double meaning: on one side, this type of cheese is indeed shaped like a brick and on the other, the curd was originally pressed by cheesemakers using bricks.

Unlike many other types of cheese, including many brick cheese replacements, Wisconsin brick cheese is barely known internationally. In fact, even in the United States, it is not really popular and its distribution is mostly limited to the state of Wisconsin.

Brick cheese is a great melting cheese and when its young, its flavor is nutty and mild, but the longer it ages the more intense and tangy it becomes. This type of cheese is perfect for pizza and grilled recipes.

When youre out of brick cheese or you cant get your hands on it, you can try one of the following Wisconsin brick cheese substitutes.

    How Myzithra Is Made

Myzithra is made with a combination of raw milk and the whey from production of other sheeps and goats milk cheeses. After bringing the milk to a boil, producers cut it with whey, generally at a ratio of about 7 parts milk to 3 parts whey. Rennet or an acidic ingredient such as lemon juice may also be added to form the curds, which are gathered in cheesecloth and hung to drain for two or three days. The resulting soft cheese can be eaten immediately or rubbed with salt and aged until it hardens. The drained whey can be added to the next batch of myzithra to help kick-start the curds.

How To Choose A Brick Cheese Substitute

Wisconsin brick cheese isnt well-known so there arent many recipes that specifically call for this kind of cheese. As a result, it can be substituted with any cheese of your taste that makes for a good melting cheese, which is the main characteristic of brick cheese.

There isnt really a closer or farther substitute for brick cheese in terms of flavor or texture, because its a fairly unique cheese that at the same time shares many similarities with most types of cheese.

You can substitute brick cheese with any of the alternatives we mentioned, however, when making pizza, you can make a safe choice and go for mozzarella, which is usually considered the pizza cheese par excellence.

Where To Find Brick Cheese In Michigan

Vac Pack Mild Specialty Brick 14 OZ.

One of the things I like to do on this website is carefully monitor what people are searching for and try to provide the specific information they requested. Today, I had a search for where to find brick cheese in Michigan. In case you dont know what brick cheese is, check out my earlier post on it. I recently took a trip to Wisconsin and brick cheese could easily be found at all the cheese places I visited. But I do not find the same to be said in Michigan. I prefer to use brick cheese over mozzarella on my pizzas , so I tried to find it whenever I can. The brick cheese I had in Wisconsin was superior to anything I have been able to find in Michigan so far. Below is a list of the places I have bought brick cheese from before. As I discover more, I will add them to the list.

**NOTE** Zingermans Creamery in Ann Arbor sells a cheese called Detroit Street Brick. This is NOT the traditional brick cheese. This is a goat cheese that contains green peppercorns.

With the dough out of the way, I turned my attention to the cheese. Detroit pizza is unusual in two ways when it comes to cheese. The first is the use of Brick cheese, a high-fat aged cheese from Wisconsin with a uniquely tangy, salty, buttery flavor that’s hard to replace with alternatives. The second is the edges. If you’ve ever been to Pequod’s or Burt’s Place in Chicago, or, better yet, had a pizza from Windy City Pie in Seattle , then you’re familiar with the concept of a crispy, blackened cheese crustthe shelf of crisp, lacy cheese that surrounds the edge of the pizza. This is where the real magic of Detroit-style pizza lies, and, as I found out, getting it is not exactly straightforward.

For my testing, I ordered a ton of Brick cheese from Amazon. If you order in bulk, it’s relatively inexpensive, and worth it if authenticity is what you’re after. When I visited Dave Lichterman, the man behind Windy City Pie, in his Seattle kitchen a few months ago, he showed me how he makes his cheese crust. He starts by filling out a pan with dough, then lays overlapping slices of cheese on top, letting each one ride off the edge of the pan to line the sides, where they crisp and bake into shape.

**** The crust doesn’t come out quite as nice when you use a pair of cake pans, but you do end up with more of it because of the two extra edges, so it’s a pretty fair trade.

    ***** Not literally a ton.

    The Iconic Old Spaghetti Factory

The Old Spaghetti Factory in Gastown, in the heart of Vancouver, Canada is my favourite restaurant. My mom took me to the Old Spaghetti Factory for my 13th birthday in 1972, we sat in the tram car section of the restaurant, on the antique wooden chairs at a vintage wooden table. Today the chairs are all antique-looking, press-back chairs, but in those days, there wasnt a matching chair in the restaurant.

The Tiffany lamps cast a warm, olden-days glow that reminds you that this is a special time, in a special place, fit for special people.

I think weve visited one of the Old Spaghetti Factory franchises at least once a year, for the past 40 years. The restaurant in Gastown was the original. It is a fun restaurant with a predominantly spaghetti menu, that includes still-warm, sourdough bread with garlic butter as much as you can eat , salad with house dressing, your choice of the main dish, coffee or tea, and spumoni ice cream for dessert for one price around $10 to $15 per person. Drinks are extra. There is a childs menu, to keep the meals within a family budget.

    Finding The Perfect Chewy Crust

I decided to start my testing by focusing on the crust. For these tests, I used low-moisture mozzarella and a jar of Rao’s for the sauce. Since I already have an easy recipe for foolproof pan pizza, I started there, figuring I could tweak it to make it work for a Detroit pie. That recipe uses a basic no-knead method: Flour and water are combined with yeast and salt and mixed together in a bowl, just until a shaggy dough forms. The bowl is then covered and set aside overnight. During that overnight rest, yeast multiplies and produces bubbles of carbon dioxide that slowly expand and rise, in effect kneading the dough for you. In the morning, you wind up with a stretchy, relaxed dough with plenty of gluten development.

A little too much gluten development, as it turned out.

After a few more experiments , I decided to throw in the towel on the no-knead method and switch to a more traditional kneading-based approach.**

** NB: No-knead is still a fantastic way to make pizza or bread if a rustic crumb is what you’re after!

*** Technically, an autolyse is made before salt is added, but I’ve never really found a big difference between adding the salt at the start and adding it at the end.

Buy Velveeta or Cheaper Walmart Brand Cheese Block Substitute? Taste Test Comparison and Review

If you are unable to find Mizithra cheese near you, a good substitute is Romano cheese.

The Old Spaghetti Factory actually uses a blend of Romano and Mizithra at their restaurant.

If neither of those cheeses is an option for you, dont miss out on this dish. Just use some shredded Parmesan cheese. Its delicious too!

    Types Of Brick Cheese

While authentic, cellar-ripened brick cheese can be a potent cheese, not all cheeses that go by the name of brick cheese are actually made the same way. Many supermarket brick cheeses are mild and neutral flavored, sort of like a cross between Monterey Jack and mozzarella. These cheeses lack the distinctive flavors that result from the bacterial cultures, brine solution and smear ripening of true brick cheese. Sometimes they’re dipped in a solution containing annatto, which gives the surface of the cheese a peachy-orange color similar to that produced by the Brevibacterium linens bacteria.
