Cacique does carry shredded queso quesadilla cheese right where youd find other shredded cheese brands, but do not use it. Only use Cacique rounds of cheese. Besides Asadero Cheese and Queso Quesadilla Cheese, Oaxaca Cheese, and Queso Fresco Cheese are both other options of Mexican cheese that work for this queso dip recipe. Take a look at Cacique brand packaging before heading to the store. Queso Blanco never uses processed American cheese.

The legend has it that young, 14 years old girl called Leobrada, living in Reyes Etla, Oaxaca, was left in charge of cheese production at her home.

Still, just like any other child, on one occasion, she got easily distracted and forgot to take care of the temperature of the curdled milk.

As a result, this mixture lost its moisture and crumbled when cut.

To hide this mistake and avoid getting into problems with her parents, she added hot water to the mixture, causing it to melt and creating a stringy, chewy mass.

She named this mass quesillo.

To her surprise, Leobradas parents were delighted with the flavor of a said strange mix.

Quesillo became very popular among the whole neighborhood almost immediately.

As a result, more and more families started producing mentioned buttery sensation.

And not too long after that, it spread into whole Mexico.

These days, during the Guelaguetza festival, the city of Reyes Etla organizes a Quesillo Fair. This event is promoting the consumption of local products and informing the public about the making of quesillo.

Authentic Mexican Queso Dip

Queso Blanco takes just a few minutes to make. I melt 10 ounces of cheese and milk on low heat over the stove top. Any hotter and the dairy may foam and create a crust that sticks to the sides of the saucepan. I always try to avoid this as I dislike the texture of the crust in my dip.

Authentic Queso Dip is easy to make. Cicique Asadero Cheese works because its the perfect Mexican melting cheese with a mild flavor. Heating the cheese with half & half on the stove top allows the cheese to become soft and melt. I like to add chopped green chiles, diced tomatoes, and cilantro to the Queso Dip to develop those Mexican flavors even more.

Love their asadero cheese. Been coming here close to 20 years. GREAT place and nice land to walk around and check out their mini zoo!!

When you are traveling north side from the last Spanish Mission, the San Elizario, you will see a very clean, crisp, building with “Licon Dairy” sign. Stop by. They sell a few products and are frequented regularly by the nearby locals. For a tourist, this is worth a stop because you get to support a local business and you get the very best asadero cheese you have ever tasted. The also sell a package of rolls for your cheese. The rolls come from across the street, San Elizario Bakery. I would recommend you stop there. The rolls are indescribably delicious. If you have children, you MUST stop at the Licon Dairy as they have a small petting zoo. I saw miniature donkeys, goats, llamas, and at least one camel. I saw families and children delighted with the animals. Absolutely a great treasure find on my Spanish Trail Mission. It is 19 miles from the Airport and on my next trip, I may just swing over for the cheese and bread.

Ideal Substitutions For Asadero Cheese

Honestly, the best thing to do is use a kind of cheese that you like. Even professional chefs disagree over what the idealsubstitution for asadero cheese is, so youre perfectly fine using any kind of cheese you enjoy eating.

As far as texture goes, string cheese is probably the closest thing. Both Asadero and string cheese are made using a process called pasta filata. This technique involves literally stretching out the cheese dough in order to give it a stringy texture.

While string cheese and Asadero feel pretty similar, they dont taste quite the same. Asadero is closest in taste to Monterey Jack. Its quite mild and creamy, meaning that cheeses like provolone, muenster, and teleme are also good substitutions.

Finally, its worth noting that Asadero and Oaxaca cheese is pretty similar. The biggest difference is where theyre made. While a hardcore enthusiast of Mexican cuisine might be able to spot the difference, you can probably get away with using Asadero in place of Oaxaca and vice versa with no issues.
