I come from a dairy loving family to say the least. We followed doctors orders and had a glass of milk on the dinner table every night growing up. To this day my dad still drinks at least a glass a night of skim milk because its the best choice. Its not even an argument I want to get into there pick your battles as they say!
In addition to our daily milk glass, I have always been a cheese loverand when I say cheese lover, I mean addict. In my mind every meal should have it in one form or another. And being a 4th generation Texan, Tex-Mex is the very source of cheesy inspiration I could have survived on for the rest of my life. Except I cant. In fact, dairy was playing its role in killing me.
I realize this is a rather bold statement and really sounds dramatic to be honest. But its true. Nobody could have loved the stuff more than I did, but as time went on I saw the writing on the wall the wall being my inflamed brain.
After a few years of really feeling helpless and often wanting to die, I finally started implementing additional dietary changes. You see, I had already been gluten free after my diagnosis with Hashimotos thyroid disease in 2008 and thought that my lifestyle was relatively healthy, at least compared to most people I knew. But I kept digging. I looked at veganism, grain free, dairy free, macrobiotic, paleo, primal, and so on.

New research suggests that when your child’s skin is scratched open, food allergens can get into the body more easily to make contact with the immune system. Direct contact between open skin and food, such as peanuts, may increase the chance that an allergy will develop to that food. The immune system may be more prone to developing a food allergy if the first exposures to the food are through scratched open skin.
The opposite may be true if the immune system is first introduced to the food by eating it. If the first exposure to a food is through the digestive tract, the immune system may more likely tolerate the food.

Living With A Dairy Intolerance Or Allergy
So, you or someone you love is dairy free. Now what? Some individuals who are lactose intolerant may still be able to consume dairy by using a product such as lactaid. This product is said to help break down the lactose found in dairy products such as milk and cheese to allow digestion without stomach discomfort. But for those with a dairy allergy or for whom this type of product is not effective, eliminating dairy may be the only option. That was the case for my husband who, in addition to being gluten free like I mentioned in my last post, is also dairy free. He has personally chosen to simply eliminate dairy from his diet and add very few dairy alternatives in its place. The number one dairy free item we use is almond milk. I have found it to be a great replacement in pancakes, waffles and baking, as well as for smoothies. I always recommend using the plain, unsweetened variety. Or, better yet, you can make it yourself as I have recently started doing after reading several articles about some questionable ingredients used in the name brand products. I have included the recipe below if youd like to give it a try.
We also use rice milk , but, much less often. I find rice milk to be better for cooking as opposed to baking, such as for making dairy free mashed potatoes.

Heavy Soy Diet In Prison Led To Lawsuit
When Rod Blagojevich was elected governor of Illinois in 2002, he changed the prisons diet.
The meats in the diets were often mixed along with 60-70% soy protein, even cheese is replaced with fake cheese. This was all due to financial reasons.
