How To Make Keto Tuscan Chicken Mac And Cheese Pasta

Add the olive oil and shredded chicken to a skillet over medium heat.

Stir in ½ tsp of Italian seasoning and saute until the chicken is warmed through.

Remove, and set aside.

Preheat the oven to 375 degrees.

Melt the butter in the skillet over medium heat.

Mix in the minced garlic

and roasted red peppers.

Pour in the heavy whipping cream,

1 tsp of Italian seasoning and salt and pepper to taste.

Saute until the sauce has thickened.

Stir in the spinach until wilted.

Mix in 1 cup of the shredded cheese until completely melted.

Add in the chicken

and palmini noodles, and stir to combine.

It is a low carb take on the classic Mac and Cheese casserole. And while regular Kraft Mac and Cheese Dinners have 43 grams of carbohydrate, this Mac and Cheese recipe has just 10g net carbs, so it is permitted if you are on a low carb or Keto diet.

The secret to this low carb Mac and Cheese is the noodles.

Instead of trying to pull the wool over your eyes and using cauliflower in place of real noodles, Ive found a great noodle substitute called ImPASTAble Penne to share with you today. Its got the same taste and feel of regular high carb pasta, but only has 8g net carbs per serving.

What does net carbs mean?

This is an important concept in low carb and Keto diets, so its best to understand the idea behind it. The way we calculate net carbs is to take the total amount of carbohydrate in a food and subtract the fiber, because our body can’t digest it or get any energy from it. It passes right through you, without making a dent in your low carb diet.

My favorite type of mac and cheese has a crispy top on it. Theres something to be said for the traditional shells with cheddar cheese sauce style, but it pales in comparison to a well cooked mac and cheese with an extra crunchy and cheesy topping.

To achieve that crisp youre normally going to turn to bread crumbsbut carbs! In place of bread crumbs, were using pork rinds. Pork rinds crisp up just as nicely and give a lovely flavor to the final dish. One word of caution in the preparation of this dish is that both the bacon and pork rinds have a good amount of salt in them, meaning you may want to take it easy on the amount of salt used. Simply add a healthy dose of crushed pork rinds to the top of your cauliflower with cheese sauce and bake!

Cellulose is completely safe and harmless, but it can affect how well your cheese melts. In other words, if you’re looking for a silky smooth cheese sauce, stick with block cheese and shred it yourself.

Feel free to combine your favorite cheeses as desired. We suggest a blend in the recipe below, but if you really want to take it to the next level, have fun buying gourmet cheeses like Grayson, and Red Leicester Yard Bird in Miami uses these, and their mac n’ cheese is to die for . If you want a velvetier texture, you can also add 1 tablespoon of cream cheese and adjust the liquid as needed. This is optional of course.

KETO MAC AND CHEESE 2 WAYS! How to Make Cauliflower Mac & Cheese Low Carb Pasta Mac and Cheese!

Store the Keto Mac and Cheese in a food storage bag or container. Add the casserole dishs contents to the bag or container and then put it in your fridge for as long as five days or in the freezer for up to six months. You can defrost the macaroni and cheese in the refrigerator before reheating it in the oven or the microwave.

Tips For Cooking Cauliflower:

Cauliflower comes in many different forms, frozen, raw, in steam bags, riced, etc. so HOW you prepare you cauliflower will make a huge difference in this recipe.

You can purchase a whole head of cauliflower if you prefer, which is the cheapest option, then cut it down into small florets. When using raw cauliflower, you have a few different options on how to cook it.

You can:

  • boil it
  • roast it

Roasting the cauliflower will give it a nice added flavor! Just take note that fresh cauliflower is dry, so you will need to add some fat like butter or oil to your cauliflower so browns nicely.

If you boil your florets, whether on the stove or in your microwave, it is important to make sure you let your cauliflower FULLY COOL before adding it to your cheese sauce. This will prevent your sauce from being watery or runny.

The best way to do this is to lay the cooked and drained cauliflower out onto a sheet pan. Then allow the steam to evaporate fully. Once its cooled and the steam is gone, you can continue with the recipe.

I find it is easiest to microwave my mini florets for 10 minutes in a bowl of water. This will allow the cauliflower to boil and soften up just enough without taking up too much time!
