Powdered Or Evaporated Milk
Powdered milk is a great substitution because of its longevity. It makes for the best milk substitution if you suddenly run out of fresh milk.
Powdered milk is made by simply combining the milk powder with regular water and can then be used to make the sauce.
Generally, it creates a creamier milk that is also much sweeter than regular milk. This sweetness is well-balanced by the normal levels of salt in the recipe and is very appetizing.
Evaporated milk is milk that has a lower water content but isnt in a powdered form. This version of milk can also be used as a substitution, and may even work better than powdered milk.
It has an even sweeter taste than regular and powdered milk, so you might need to thin or dilute the flavor with regular milk or water, or by balancing it with other flavors.
Condensed milk is an extremely sweetened version of evaporated milk and has an almost syrup-like consistency. We wouldnt use this for macaroni and cheese unless it has been diluted.
We felt like we had to mention condensed milk, purely because a lot of people often confuse it with evaporated milk.

Making homemade is easy, yes, but its nowhere near as braindead as packaged mac & cheese. It may taste a bit weird at first, but it really comes in handy when you make a small error when making it (eg. After browning, distribute crumbs on top of mac.
Then you cover it with shredded cheese and bake it for like 15 minutes. My dad always made what he called firehouse special which is a pound of ground beef, 2 boxes of mac and cheese, bacon , and hot sauce all cooked together. 1 3/4 cup of water add milk to the cooking water .
After browning, distribute crumbs on top of mac. We buy this stuff in bulk from costco. While noodles are cooking, prepare your extra ingredients and heat them over.
If you cant taste any ketchup, try with a bit more until you like it. Undercook the noodles by 2 minutes. Place mac in oven for 5 min to crisp crumbs and upper layer of mac.

Macaroni And Cheese Variations
This recipe is easy to adapt to other variations. Here are some of our favorites:
Baked Mac and Cheese: Once the pasta and cheese sauce are combined, add it to a baking dish and bake with a little more cheese and breadcrumbs sprinkled on top. We shared this Baked Macaroni and Cheese a while back.
Garlic Mac and Cheese: Fresh garlic and roasted garlic are excellent in this recipe. Add either to the butter just before adding the flour. For fresh, Id use 2 to 3 cloves. For roasted garlic, you can increase to 6 cloves or more. See our recipe for making roasted garlic.
Use a Variety of Cheeses: Cheddar isnt the only cheese to use. Try easy melting Gruyere, Fontina or Monterey Jack. For more flavor, a bit of parmesan or pecorino cheese is lovely, and for a more adult dish, try blue cheese!
Spiced Macaroni and Cheese: Mustard , nutmeg, and a pinch of cayenne pepper are classic additions to the cheese sauce. Smoked paprika is also delicious.
Broccoli Mac and Cheese: A kid favorite! Stir roasted broccoli or steamed broccoli into the pot before serving. Heres how we make roasted broccoli.
Lighter Mac and Cheese: Swapping half of the cheese sauce for pureed cauliflower cuts calories and still tastes incredible.

Is Butter Really Necessary For Mac And Cheese
Another frequent question about mac and cheese is that is butter really necessary to make mac and cheese?
Actually, no. Butter isnt really necessary. The only reason butter is added to mac and cheese is to make it creamier and thicker. It adds flavor to the dish. But, if you are not using butter, you should at least use a substitute for it. Otherwise, your mac and cheese will become thinner, less dense, and overall less delicious.
If you like your mac and cheese to be thick and creamy but dont want to add better, using substitutes is a good option. You can also use them according to your taste palette and preference.
Some of the substitutes that you can use are mentioned below:
1. Margarine
You also dont have to worry about proportions when using margarine. You can use margarine in a 1:1 ratio with butter.
2. Sour Cream
Sour cream is another great alternative to butter in mac and cheese. It checks of not one but two boxes. You can substitute sour cream for milk and butter. It gives a great depth and texture to the dish. If you like tanginess in your dish, sour cream will be the perfect alternative to butter.
I would suggest using less sour cream. It has a high fat and calorie content, so dont use too much. Also, using a lot of sour creams may make the mac and cheese too tangy.
3. Plain Yogurt

Try Mac And Cheese With Buttermilk
Buttermilk is not just a plausible substitute for milk when making Mac and Cheese it actually takes this scrummy dish to another level.
How it works:
- It adds so much creaminess its unbelievable, and it also gives another tangy hint of flavor to the taste.
But do you know what buttermilk is?
You would be forgiven for thinking that buttermilk is a combination of butter and milk. It would be a fair guess going by the name.
However, that is incorrect. Buttermilk is the fluid that is left over when churning butter.
Its quite thick, has a slight tanginess about it, and can be kept considerably longer than regular dairy products, including ordinary milk.
It stores well and is quite handy which means, you can keep any leftover around and use it to make Mac n Cheese again and again.

How Do You Make Mac And Cheese Without Milk
You can make mac and cheese without milk by adding cream cheese to your recipe instead. This will create a creamy, velvety texture. You can also use any of the plant milks, such as almond milk, soy milk, oat milk, etc. Alternatively, try a bit of whipping cream and some vegetable broth to create a rich, milk-like sauce, or some plain yogurt for a slightly sourer flavor.
Any of these ingredients should work to create a delicious version of mac and cheese without milk, so check what youve got in stock and whether anything can be swapped in.

How Do You Make Homemade Macaroni And Cheese
Homemade mac and cheese starts with a flour/butter mixture called a roux. You melt the butter, add the flour and whisk until it becomes thick. Then you slowly, slowly add the milk. Warming the milk up a bit first helps keep the sauce thick, and it takes less time to heat up to a simmer. If combined properly, your roux/milk mixture should be rich and creamy once all the milk has been incorporated. Next, add the cheese and a few flavor boosters and pour that creamy goodness over cooked noodles and pop it in the oven to bake.

How To Make Homemade Roux For A Creamy Sauce
To make a simple and flavorful roux, start by melting a stick of butter in a medium saucepan.
Whisk in the salt and pepper. A very important step is to continue stirring for a good 2-3 minutes until roux turns a bit darker in color. It becomes richer and even more fabulous.
Slowly whisk in the milk until mixture is thick and creamy. This step will take a couple minutes over medium heat.
Stir in cheese until creamy and cheese is melted through. I prefer a finely shredded mild cheddar. It melts quickly and has a perfect cheddar flavor.

The Dish Didnt Have Time To Rest
Much like letting a great cut of meat rest after grilling, macaroni and cheese will taste its best if its given a bit of time to rest before people start digging in.
After your mac and cheese is done, its tempting to dig right into it, said Menapace. However, the chef recommended at least 10 to 15 minutes of resting time after the dish is removed from the oven. This will allow the sauce to set back up around the noodles. Otherwise, itll just be runny and ripping hot.

Best Milk For Mac & Cheese
- Plain Oat Milk:Oat milk does kind of taste like oats, but under the cheese and anything else you want to put in your mac n cheese it shouldnt be strong enough to notice. Oat milk has a thicker texture than regular cow or soy milk.
- Soy Milk: Soy milk is not as thick as oat milk, and you can put almond milk in that category as well. Some companies put other natural thickeners in the milk to give it texture, but in our experience, its not thicker than oat milk.
- Non-Dairy Cream or Whipping Cream: These are thick just by nature and can be found in non-dairy forms, and whipping cream is much thicker. As you stir whipping cream, youll get a peak after a while, so make sure you really want the texture to be firm and creamy.
- Cashew Milk: This is like almond milk and will give a nutty tinge to it, but it will still have the consistency of almond milk. Any nut milk is the same.
- Goat Milk: This makes it a bit creamy and sweeter.
- Coconut Milk: Its creamy texture out of the can where its more of a solid will do best for creaminess.

Can I Sub Water For Milk In Mac And Cheese
Yes, you can use water for milk in mac and cheese. However, we recommend using pasta water instead of plain water. Pasta water is the leftover water that you drain off the noodles after boiling them. This will help keep your noodles from seeming to be so watered down, like they might be with just plain water.
How This Trick Makes Better Mac & Cheese
When you cook pasta noodles, usually you do so in a pot of boiling water water that is poured off after cooking.
However, in this case you use milk instead, reserving the milk after the pasta cooks. The use of milk makes the pasta itself creamier, and reserving it keeps any starch washed off the pasta in the milk, which is then used to make the sauce.
Some milk is absorbed into the pasta as it cooks, but you need to reserve enough to make your sauce. So youll want to measure out a portion thats more than the amount the recipe calls for. The amount will vary from recipe to recipe, but Ive been successful with doubling the milk. A lot will be absorbed by the noodles, and some will evaporate.
Remember this: Cook the pasta in milk. Use twice as much milk as called for in your recipe for the sauce.
Stir the milk frequently as it comes to a boil and while the pasta is cooking. Once the pasta is cooked, strain the warm milk into a separate bowl or pot, and proceed with making the cheese sauce according to the recipe instructions.
No matter what kind of pasta you use, and whether or not you use a roux to make the sauce, this method works like a charm for the creamiest mac and cheese youve ever had.
