How Can You Tell Real Parmesan Cheese

Should you shred your own cheese at home? How much money ...

You can find the real Parmigiano -Reggiano right alongside all the Argentinean and New Jersey parmesan at almost any sizable cheese counter, and you can tell by the signature pin-prick patterns, the words Parmigiano -Reggiano embossed all over every square inch of the rind, as shown in the accompanying photos.

Details For Comparing Cheese

Over the past two months, Ive been collecting prices from the grocery store most times Ive been shopping. I have tried to get prices for various sizes, brands, and types of cheeses.

Here are some details that you will want to know to get the whole picture:

Stores I went to: WinCo, Walmart, Costco, and SmithsBrands I compared: Kraft, Cheswick, WinCo, Tillamook, Cache Valley, Great Value, Sargento, Kroger, Kirkland, and PreciousTypes of cheeses: Colby Jack, Monterey Jack, Cheddar, Mozzarella, Colby and Monterey Jack, Swiss, and Mexican BlendSizes : 6 oz. , 8 oz. , 16 oz. , 32 oz. , and 5 lbs.

Keep in mind, I did not compare every single cheese at these stores. I selected a few, randomly, and went from there. I didnt want to spend all day at the store, especially with my daughters.

Now that you know all the details, I think you can understand my comparison a bit better. Lets start comparing to see whether a block of cheese or a bag of pre-shredded cheese is cheaper!

Coat Your Cheese Grater In Flavorless Cooking Oil

Time is of the essence when youre shredding cheese.

The longer you leave the cheese out of the refrigerator, the warmer it will get. Warm cheese will quickly clump.

A few sprays of cooking oil on the grater means the cheese can slide easily over the holes.

This will make the whole process a lot quicker. Not to mention easier!

Shred The Cheese Onto Wax Paper

HOW TO MAKE THE BEST CRISPY SHREDDED BEEF ROLLED TACOS WITH CHEESE AND GUACAMOLE

Youve shredded all your cheese onto the counter.

But you didnt consider how youd move it into its storage container. So now you have to use your hands to scoop it up and transfer it.

You can try to be light-handed, but its inevitable youll end up squishing some of the cheese together.

Shredding the cheese onto wax paper is a MUCH better idea.

Once youre done shredding, the wax paper makes it really easy for you to transfer the cheese into its storage container. You dont have to handle it at all.

Simply lift the wax paper up by its corners to make a funnel, and slide the cheese off it.

Under Italian law, only cheese produced in these provinces may be labeled Parmigiano -Reggiano, and European law classifies the name, as well as the translation Parmesan, as a protected designation of origin. So within the European Union, per DOC regulations, Parmesan and Parmigiano -Reggiano are the same cheese.

Best Way To Shred And Store Cheese

Ill be honest, Im not a huge fan of manually shredding large amounts of cheese. I mean, who is? It gives you hand cramps, tired arms and shredded skin if you start getting sloppy. You wont last long shredding your own cheese that way. This is why it is critical that you know how to shred cheese with a food processor. Most food processors will come with a handy-dandy attachment that will shred a block of cheese in seconds! Seriously! It should look something like this:

To prove my point, Ive created a little video on how to do it. Tune in, tune up and prepare yourself for a fascinating tutorial hosted by an amateur host sporting her 12 year old sorority fleece accompanied by frizzy workout hair.

P.S., when I asked my husband to film this, his response was, So you want me to film you cutting the cheese? Yes, dear love. I do.

And he did.

Somebody had to make the joke.

So there you have it. Me in all my college fleecey glory sharing one of my best kitchen tricks.

But the best is yet to come. Tomorrow I plan to share the bloopers reel of filming this video. Yes, the video above is only a minute long but trust me, I am prone to blooping my heart out when filming things like this.

Lastly, I leave you with some lovely recipes to try out your freshly shredded cheese on.

Anti-caking agents are applied to coated prepackaged shredded cheese. In addition to preventing clumps in the bag, it also does not melt. Another thing that makes it so expensive is that it tastes like cheese all rolled into one. You can rate yourself yourself, save money and feel good about it if you do it.

Cheese For Making Pizza

Mozzarella is the obvious choice here. I grab the Whole Milk Mozzarella for $4.99 a pound . There are other cheeses I do like better for pizza like Brick and Tuma but they arent carried at Trader Joes. Both those cheese melt just like Mozzarella but they have more flavor to them.

Pick up some Parmigiano Reggiano or Pecorino Romano to grate on top of your pizza. If you dont make your own crust, the french baguette or ciabatta that you find at TJs can make for a tasty crust.

Walmart Sued Over Suspected Wood Pulp In Cheese

Wal-Mart Stores Great Value food brand has been slapped by a lawsuit over a cheese product it sold that allegedly contained wood pulp.

The plaintiff, Marc Moschetta, claims he was induced to purchase Great Values 100% Grated Parmesan Cheese at a premium price because he believed it was, indeed, 100 percent cheese. But it contains 7 to 10 percent cellulose, a filler and anti-clumping agent derived from wood chips, according to the Feb. 23 New York complaint, which accuses the retail brand of deceptive business practices.

The lawsuit seeks a jury trial and alleges material misrepresentations under New York law and laws in 42 other states. The 8-ounce cheese costs $2.98 on Walmart.com.

We know earning customer trust starts with high standards for the products we carry, Walmart spokesman Randy Hargrove told CNBC. We take this matter seriously. We will review the allegations once we have received the complaint and will respond appropriately with the court.

The case has not yet been granted class action certification, but attorney Jason Sultzer said others have expressed interest in joining the case against Walmart.

The unsavory chance of finding wood pulp in cheese products has been around for years.

Costco Kirkland Signature Tex Mex Shredded Cheese Review

I put this cheese on everything!

Please note that this review was not paid for or sponsored by any third party. I purchased this product with my own money and the opinions in this review are strictly my own. I am not affiliated with Costco or any of its suppliers. I am just a fan of the company. I write these reviews to help my fellow shoppers.

Today I would like to share with you my favorite cheese from Costco. I use this cheese on pretty much everything, grilled cheese sandwiches, tacos, to make pizza, in casseroles, fajitas, stuffed peppers, zucchini boats and on top of chili to give you just a few ideas. Im talking about the Costco Kirkland Signature Tex Mex Shred. Its a blend of pizza mozzarella, cheddar, and monterey jack with jalapeno pepper cheese. Although it was the jalapeno pepper cheese this definitely is not overly spicy. It has a subtle heat/spice to it but is not the kind of overpowering spicy. I have even used this on foods that you would not want to have something spicy with like Italian lasagna and it works just fine. It tastes absolutely delicious and works well with so many things that I believe this is a staple item everyone should have in their house. If you like mozzarella, cheddar and a little bit of heat in your cheese youll love this.

Cheese Crackers are too Simple to Make at Home!

Stores like Walmart rarely make their own store brand products. Instead, companies that make the products package them in the brand packaging for the store. We cant say for sure who makes these shreds, but the ingredients are very similar to Violife and Good Planet cheese alternatives. So they will likely taste and melt similarly.

When Should I Use Block Cheese

If you ask me, you should use block cheese whenever possible! In fact, I can’t really think of any recipes I’d outright choose shredded cheese over block cheese. I swear it just tastes better – do a taste test!

Block cheese also happens to be cheaper than shredded cheese. And you get a lot more bang for your buck when you go ounce by ounce. Another bonus? Block cheese has a longer shelf life than shredded cheese!

But one of the times I think it’s most beneficial to choose block cheese over shredded cheese is when you’re adding it to pasta or a roux – especially mac and cheese! This is when you’ll really notice a difference in how it melts, and you’ll get a much smoother dish if you shred your own cheese.

See how smooth and creamy my mac and cheese sauce is? A lot of that is thanks to using block cheese instead of pre-shredded cheese!

That about covers it – I think it’s time to go eat some cheese!

The Birth Of Low Moisture Mozzarella

In the 1930s, Midwestern dairy producers saw an opportunity. Mozzarella had already become a popular product but took days to produce and lacked the shelf life necessary for long distance shipping. The first step toward solving the problem was achieved by increasing the temperature at which the milk was curdled, effectively drying the final product. The Stella Cheese Company of Campbellsport, Wisconsin, then developed a bacterial ratio that decreased the curdling process from three days to just one, which translated to major cost reduction. Compared with East Coast mozzarella, this new variation was firmer, higher in fat concentration and slightly yellow in appearance. Cheese companies labeled the new product Pizza Cheese, due to its greatest source of demand, until the FDA codified it as low moisture mozzarella under its 1965 Standards of Identity. Defined as a cheese with no less than 45-percent milk fat and between 45- and 52-percent moisture, this is the mozzarella that accompanied pizza on its rise to popularity in America.

While fresh mozzarella must be torn or cut, low moisture mozzarella is firm enough to be shredded, diced or sliced. Each preparation lends itself to specific uses in the pizzeria.

Cost Consistency And Taste

While blocked cheese might seem expensive in comparison to the shredded packs, it can be deceiving. Youre technically paying for the convenience of not having to shred the cheese yourself, and the addition of cellulose or potato starch means that youre actually paying for less real cheese, and more filler products. Blocked cheese can last a long time, and youll generally need to add less cheese to a dish for more flavor.

Pre-shredded cheese also heats up and melts quickly, but often not in uniform manners. The inconsistency in the way it melts and then solidifies can be a pain, especially when trying to create beautiful dishes.

This isnt all to say that you shouldnt buy pre-shredded or pre-grated cheese. Its super helpful to have, especially when short on time or to use in a pinch. However, its important to consider just what youre spending money on with the processed stuff. Sometimes it makes sense to grab blocks or chunks and shred/grate as needed. And if you dont want to go through the hassle? Italian delis and speciality stores are a great place to go to purchase fresh, real grated cheese.
