Tools You Need To Make Goat Cheese
- Large, non-reactive pot that can hold at least ½ gallon of liquid.
- Long wooden spoon: Any will do, but I like a sturdy one where the spoon part isn’t very curved, making it easier to clean.
- Large flour-sack style dish towel: I usually use one of these that I got at IKEA, but Amazon also sells them in packs of 12.
- Large Cambro bread proofing/food storage bucket: I use a 6 liter one, but you’ll need one that holds at least 3 liters. These are also great for proofing bread dough or storing large quantities of chicken stock.
- Large colander, preferably with side handles: It should be big enough to hold a half-gallon of goat milk and comfortably sit inside the bucket, without falling all the way to the bottom.
Storing Homemade Goat Cheese
This time, I just salted it. Sometimes I keep it in a plastic container in the fridge and sometimes I lay plastic food wrap on my cutting board and add half of the cheese on top of it
Then I wrap the cheese and roll it around a bit to make a nice cylinder. Its fun to roll this cylinder in seasonings. Like in black pepper or cayenne pepper if you are brave enough. Or you can roll it in sweet stuff like diced dry cranberries and chopped nuts.Then I place the cylinders on a plate and place them in the fridge.
Usually, there will still be some more whey extracted from the cheese in the first 24 hours so make sure to place the cylinders on a plate to catch it. If you store your cheese in a container, place it in the fridge and just turn it a bit to get rid of the whey if there is any.

Adding Chevre Culture And Rennet
Once the milk reached 80 degrees Fahrenheit, I remove the pot from the heat and turn the heat off. Then, I add 1/16 teaspoon of chevre culture and stir it until it dissolves in the milk
Next, I dilute 3 drops of rennet in 1/3 cup of cool water, and add one tablespoon of the diluted rennet to the milk.
Again, I stir it in well.
Tools That We Are Going To Need
Once we have all of our ingredients, lets gather the tools that we are going to need to make this goat cheese
A pot its important that its a stainless steel pot with a heavy bottom to prevent the milk from scorching when we heat it. Also, make sure that its large enough to hold the amount of milk that you are going to process.
A skimmer this can also be a spoon but I find that a skimmer works better to mix the milk and to make sure that the culture dissolved in the milk.
A thermometer we are only going to heat the milk to 80 degrees Fahrenheit so any kitchen thermometer should be able to read this temperature.
1/16 measuring spoon we will use this measuring spoon to measure the culture.
1/3 cup measuring cup to dilute the rennet in.
Large mixing bowl to line with the cheesecloth and to catch the whey. We will also need it when the cheese is ready so we can salt and mix it.
A cheesecloth I linked to a proper cheesecloth but just so you know, I am using the flour sack towels from Walmart as my cheesecloth. They work great and much cheaper. Also, make sure that you have some sort of string to tie and hang the cheesecloth with. I am using yarn.
Cheese mold this is also optional. I just bought this cheese mold set and I cant wait to use it! Youll see below that I roll my cheese into a cylinder or I just keep it in a container, but now that I have the cheese mold Ill be able to make it a bit prettier!

Heat And Culture The Milk
Heat the milk to 86°F and add one packet of chevre culture. Stir the culture into the warm milk gently but thoroughly, put the lid on the pot, and allow it to sit undisturbed on the countertop for at least 12 hours. I like to culture the milk either right before I go to bed at night or first thing in the morning. It will gradually coast to room temperature over time, and thats perfectly fine. The rennet and the bacteria in the chevre culture packet you added will be working their magic during this time.

Allow The Curds To Drain
Now, tie the corners of the cloth and hang the bundle over a pot or bowl to finish draining. My fancy-shmancy draining apparatus is a heavy-duty rubber band and a carabiner hooked through my kitchen cabinets. One more rubber band attaches my bundle to the carabiner and Im ready to let this drain for 12 hours, give or take. When no more whey drips from the bundle, and the cheese is as firm or as soft as you like it, youre ready to finish your cheese.

Did you know that when comparing goats cheese to cows milk, it is lower in fat, calories, and even cholesterol levels, while providing more calcium?
It also tends to be easier on the stomach than cows milk/cheese, thus many people who have issues with cows milk/cheese can eat goats cheese.
On top of that, this homemade cheese uses just three ingredients and tastes absolutely delicious!
Hanging The Curds To Drain
In the morning, youll wake up to a pot of coagulated milk It looks a bit like the consistency of yogurt
I set a large mixing bowl on the counter
Line it with cheesecloth, and transfer the coagulated milk from the pot into the lined bowl
Then, I collect the sides of the cheesecloth and tie them with yarn before I hang the cheesecloth on the handle of my kitchen cabinet.
I always make sure to place the mixing bowl under the cheesecloth to catch the whey. There are many things that you can do with the whey. How To Make Vegan Goat Cheese
You will find full instructions and measurements in the recipe card at the bottom of the post. This is a summary of the process to go along with the process photos.
- Add raw cashews to a bowl. Pour boiling hot water from the kettle over the top so that the cashews are completely submerged.
- Leave them to soak for 1 hour. Drain and rinse.
- Add the soaked cashews to your blender jug along with distilled white vinegar, lemon juice, almond milk, refined coconut oil, salt, onion powder and garlic powder and blend until smooth.
- Leave this in your blender while you work on your agar agar mix.
- Add cold water and agar agar powder to a saucepan. Bring to a boil on medium heat, stirring continuously.
- When it reaches a boil, set a timer and boil it for 1 minute, stirring all the while.
- You will notice it getting thick and gelatinous.
- Then quickly remove it from the heat and pour it into the blender jug on top of the previously blended cheese mix.
- Blend briefly to mix everything together well.
- Pour this out into two 4.5 inch round springform pans and smooth down.
- Sprinkle with dried herbs.
- Place into the refrigerator until set. It should start setting right away but be fully set and firm to the touch within an hour or two.
- Once set, gently remove it from your springform pans or bowls and serve.
Can You Grate Goat Cheese
Yes, and it would taste amazing for mac and cheese. You can spray a few drops of cooking oil to lubricate the grater. Then grate chevre the same way you would with any other cheese.
Grated chevre may give your foods a unique taste. Making mac & cheese sauce with it, however, might be a challenging task. Yet, theres always a solution to thicken Mac & Cheese if you have an issue with the sauce being too runny.

How To Make Homemade Goat Cheese
9. Next pour some of the whey into the cheesecloth covered colander without dumping out the cheese.
10. Using your bread or cheese knife, slice the cheese into approximately one inch squares like this:
Also slice the cheese horizontally all the way around so that it is divided in two. You dont want the cheese to be too thick so that the whey can drain. Just do the best you can with this, it doesnt have to be exact.
11. Carefully scoop the cheese curds using your cheese ladle into the cheesecloth. You can gently pour the curds into the ladle and then carefully deposit the curds into the cheesecloth.
Scrape all of the cheese out of the pot into the cheesecloth.
