How To Avoid Cracking The Top Of Cheesecake
Let me start off by saying that if you get some cracks in your keto cheesecake its not a sign of failure, and it also doesnt mean that it wont taste delicious. Cracked cheesecake happens to us all one time or another. However, this is a guide to help us avoid getting cracks as much as possible. Here are a few tips:
- Over-beating the eggs can cause cracks. To prevent this you can lightly scramble the eggs before adding them to the batter.
- Tap the pan on the counter to remove any air bubbles before putting the cheesecake in the oven.
- In my experience cooking your cheesecake at a lower temperature such as 325 degrees has helped with cracking.
- Baking the keto cheesecake until its just barely done is important. You want the edges to be set, but the center still has a very slight jiggle.
- Grease the sides of the pan. Cheesecake can shrink when it cools and can then lead to cracks. Greasing the sides of the pan will help.
- Changing the temperature of the cheesecake too quickly will lead to cracking. Let it cool in the oven with the door cracked for 30 minutes before removing from the oven.
- Running a thin paring knife around the edges of the cheesecake will loosen up the cheesecake and help avoid cracks.

When looking at the best dairy foods on a keto diet, it is crucial that you distinguish which dairy to avoid. These foods include low fat cottage cheeses and low-fat fruit yogurts. If you look at the carb content on low-fat yogurts, often it is enough to make your hair stand on end!

- One 8-ounce block of grass-fed cream cheese
- 810 thin slices of pepperoni and genoa salami
- 4 tablespoons of finely diced pickles
- Bring cream cheese to room temperature and whip until it has fluffy consistency
- Spread the cream cheese in a 1/4 inch thick rectangle in the center of a large piece of plastic wrap
- Spread pickles over the top of the cream cheese
- Place the salami over the cream cheese in overlapping layers so that all cream cheese layers are covered
- Place a second pice of plastic wrap over the salami layer, and gently press down on it
- Flip the entire rectangle over so the bottom cream cheese layer is now on top
- Carefully peel back the plastic wrap off the top of the cream cheese layer
- Begin rolling the entire dish into a long shape, removing the bottom layer of plastic wrap as you go
- Place the pinwheel in tight plastic wrap and refrigerate entirely for at least four hours
- Slice the log of cream cheese and salami into preferred thickness for serving
