The Best Ricotta Cheese

Whether itâs baked into an awesome ricotta torta, stirred into pasta, or eaten straight off of a spoon by the flickering light of the refrigerator in the middle of the night , ricotta is one of the great dairy products of the world. Seldom does a week go by when Ed doesnât stop by DiPaloâs across the street for curds of some form or anotherfresh mozzarella or stracciatella, perhapsbut itâs the fresh ricotta days I look forward to the most.

Spread a spoonful of their ultra-creamy stuff on a slice of pizza bianca, sprinkle it with salt and cracked black pepper, drizzle it with great olive oil, and go to town. You know why I donât make as many ricotta cheesecakes as I should? Because I eat it straight out of the jar before I get a chance.

Old-fashioned ricotta is made by taking the curds left over from cheese production , adding an acid to them, then heating them until whatever proteins are leftover coagulate. The curds are then strained, drained, and sold. The word ricotta means âtwice cooked,â in reference to this process.

Modern ricotta, on the other hand, is generally made with fresh whole or skimmed milk to which acid is added directly. As a result, most packaged ricottas are a bit fattier and creamier than ricotta made by the traditional method. This is totally cool by us.

How To Make Homemade Ricotta Cheese With Milk

If you want a ricotta that is closer to a traditional ricotta and made with only milk, heat the salt and milk to 185 F. Turn off the heat, and gently stir in the acid, just a time or two around the pan, then let rest, untouched for 20 minutes. During this time, keep the temperature at about 185 degrees F. It can go down to 175 F or up to 190 F, but try to keep it in that range. I just take a look at the thermometer every so often and turn on the heat for just a little while until it gets in that range. After the resting period, spoon out the curds and strain through a cheesecloth-lined strainer.

The whey should be clear with a bit of a greenish tinge. If you whey is still milky, you can add a little more acid to help the remaining proteins coagulate.

After the ricotta is done straining, I either give it a good whipping or put it in the food processor for a few seconds. It does wonders for the texture. It becomes so smooth and creamy.

How Much Cheese You Would Like To Substitute

Choosing how much cheese you would like to substitute in your recipe is the first step to finding a proper alternative.

If necessary, add salt and pepper to taste and how much you need will depend on how many dishes mozzarella cheese is used in.

For example, if your recipe calls for a single type of mozzarella, you can simply replace how much cheese your recipe requires with an equal amount from a different block of cheese.

The Step By Step Instructions

Soak the blanched almonds overnight. Or for at least 6 hours.

Chefs note: If youre in a rush, you can use un-soaked almonds and use more water when blending. Though it wont blend quite as smooth.

Add the almonds and the rest of the ingredients to a food processor. Blend till smooth.

Chefs note: For quick almond ricotta then only add half of the water, to begin with, and increase the amount of water, if/as needed. This will stop you from having to drain the cheese at all.

Youll probably need to stop and scrape down the sides of the jug a few times.

Taste and adjust any of the seasonings as needed. I.e., more nutritional yeast for cheesiness, acidity with either lemon juice or ACV, more flavor with garlic/onion powder, etc.

Optionally, place the mixture in a cheesecloth or nut milk bag and let it drain for between 2-3 hours . You could also allow it to chill in the fridge to further set/harden, or use it immediately.

Pina And Vincenzo Agostino Sicily Ricotta Salata And Black Pig Salsicce

Pinas Rare Breed Nero dei Nebrodi pigs around Mirto, Sicily

Salumeria Agostino is a tight knit, family enterprise with Pina Agostino, the nearly 70 year old norcina at the heart of it. The family have 70 hectares of land high up in the Nebrodi mountains in the north of Sicily where they farm the black Nero Dei Nebrodi pig. These pigs live outside all year round and are only housed when the sows come to give birth when theyre provided with shelter in the form of typical stone, gorse and fern strewn huts which provide as natural as possible cover. They have so much woodland to range that they are wild, unpredictable animals our other suppliers who keep rare breed pigs generally feed them once a day to keep them more tame but these Sicilian pigs are only fed in the most extreme conditions of heat and snow. They also keep goats, sheep and cows and Pinas husband Vincenzo makes a range of traditional cheeses including our Ricotta Salata. What Is Mozzarella Cheese

Mozzarella is an Italian cheese, made by a unique process in which cheese curds are warmed and stretched, giving mozzarella that silky smooth, cheese-pull-eriffic texture that no other cheese can rival! The cheese is gathered together as it is pulled, forming the characteristically smooth mozzarella balls, which are then cut from the mass of stretchy cheese curds. In fact, the word mozzare in Italian actually means to cut off, hence the name mozzarella.

This process, like many others in the world of food, used to be done solely by hand each and every day, and the resultant fresh cheese was highly sought after in Italy. Now, thanks to advances in food technology as well as cold storage, mozzarella of excellent quality can be pulled in commercial facilities many days before use.

Mozzarella is traditionally made with milk from the Italian water buffalo, but as the popularity of this cheese became more widespread to areas of the world where water buffalo are not as plentiful, the use of other types of milk became necessary. Nowadays, youre most likely to find mozzarella cheese made from cows milk, but there are products made from sheeps and goats milk as well!

Heres How To Make Fresh Ricotta:

To make about 1 pound, pour 3 quarts whole milk , ¼ cup white vinegar, and ½ teaspoon kosher salt into a large, heavy-bottomed pot over medium heat. You can subtly change the flavor by choosing different acids: Lemon juice will give it a hint of lemon, while plain white vinegar wont alter the flavor too much. I highly recommend experimenting with different acidsmy partner has gotten really into making his own vinegar, and his pumpkin-beet vinegar made for a really interesting ricotta.

Bring the mixture to the absolute barest simmer you can, adjusting the heat as necessarythe mixture should be steaming, but not bubbling. If you have a thermometer, 180185° is the sweet spot but 10° in either direction will still net you some tasty cheese.

Once you reach that temperature range, maintain it for about 25 minutes without stirringwe want big fluffy curds, and stirring will break those up. Youll notice the milk start to separate pretty early and curds will start forming throughout the heating process.

Try your fresh ricotta in salad, incorporated into ricotta gnocchi, or spread on slices of toasted baguette with a little lemon zest, olive oil, and freshly cracked black pepper. Whatever you plan on using your fresh ricotta for, plan on making more than you needthat first quality control taste test never stops at just one spoonful.
