All arrivals from high-risk countries are subject to the requirement of a pre-departure negative RT-PCR test, taken no longer than 72 h prior to arrival. They are also subject to 14 days quarantine.

Travelers who have received their final vaccination for COVID-19 more than 10 days ago, are exempt from quarantine. It is required to show proof of vaccination, including the dates.

Also, travelers that have been confirmed positive for SARS-CoV-2 disease in the last 90 days prior to entry into the country are exempt. Proof can be the result of an antibody test taken no more than 14 days before arrival or an RT-PCR document showing the date of infection.

The quarantine may be shortened to 10 days if a negative test result is obtained on day 8.

Romanian food is a mix of local Dacian traditions and foreign influences, mostly from ancient Roman, Turkish, Hungarian, and Balkan cuisines.

Ancient Dacians existed on a diet consisting mostly of roasted meats, fruits, honey, and aromatic wines. They excelled at breeding cattle and growing crops but they werent as skilled at preparing dairy products. They drank raw sheeps and cows milk and ate their vegetables boiled.

Because of the countrys prime geographic location, ancient Romanians were always under the threat of invasion so they learned to eat on the move. They became accustomed to eating raw herbs and salad vegetables and dry curing raw meat.

The Roman occupation brought with it dishes and culinary techniques like pastries , soups, breads, and cold-pressed olive oil. This was followed centuries later by the Ottoman influence and the introduction of now common dishes like meatballs, kebabs, sour soups , stuffed peppers , cabbage rolls , and Turkish delight.

From the 1700s onwards, Romanian food started to become more westernized and modernized with Austro-Hungarian, Russian, French, Greek, and Italian influences making their way into different parts of the country.

– December 20th, 1989 – Protests arise in Timisoara. Workers and revolutionary groups protest peacefully but are suppressed. Gradually, these events begin occurring in the provincial cities and in Bucharest. – After his return from an urgent diplomatic trip to Iran, Nicolae Ceausescu became aware of the scale of the protests. The National Assembly expects the people to show support for their leader, and Ceausescu gives a speech from the balcony of the Central Committee . The crowd begins chanting revolutionary slogans, and riots begin soon after. Ceausescu is in total confusion after the end of his speech. – Ion Iliescu, a Romanian politician with close ties to Moscow, appears on television. The Romanian army is now on the side of the protestors. Ceausescu and his wife Elena flee Bucharest, and are caught on the same day near Targovishte. – The Ceausescus trial takes place between 13:20 and 14:40, and is carried out by a revolutionary tribunal put together by Ion Iliescu. The ruling, the death penalty for the pair, is announced at 14:45, and is carried out at 14:50.

A couple of summers ago I became interested in cheese-making. I was talking to someone who casually mentioned she made fresh mozzarella and ricotta cheese. My ears perked up. I mean, up until that day I always thought any type of cheese-making involved a cave. Not so!

My cheese-making adventure began with goat cheese and from there I’ve been experimenting with mozzarella and now homemade ricotta cheese. The best ricotta cheese recipe is made with sheep’s milk. Sheep’s milk is hard to come by in the U.S. so I am using cow milk. Ricotta production is dates back to the Bronze Age. Evidence of specialized milk boilers has been found in various pastoral sites.

1945 – The Romanian Communist Party, largely a minority, acquires power with the help of the Red Army and NKVD. Elections are held, and 71% of Romanians vote for the Communists.1947 – Romania remains a communist monarchy until 1947, when King Mihai I abdicated the throne and left the country. The Peoples Republic of Romania is formed. During the same year, the Treaty of Paris awards Bessarabia to the Soviet Socialist Republic of Moldova and Bukovina to Ukraine, countries which are satellites to the Soviet Union. However, northern Transylvania was returned to Romania.

1812 – The region of Bessarabia is occupied by the Russians. Relations between the Turks and the Russians begin to deteriorate.1821 and 1848 – Rebellions arise, aiming to attain independence for Wallachia, Moldavia and Transylvania. A government was established from June through September in 1848, however, the Ottomans quickly crushed this revolution.1859 – Alexandru Ioan Cuza unites Moldavia and Wallachia. In 1861, this unified state was named Romania. 1866 – Carol I is chosen for Prince of Romania, following the overthrow of Prince Cuza.

Finishing Up The Vanilla Cake With Romanian Cheese

DIVIDE the cheese mixture over the puff pastry sheet, it should be a thin layer. FOLD the bottom gently upward to the center and then also fold the top to the middle.

Let the pastry overlap slightly so the roll will be closed. The ends will still be open at this point.

TRANSFER the package onto the prepared round parchment paper and place the pastry in a circle so the ends will touch each other, leaving a hole in the middle.

CLOSE the package by sticking the ends together with a bit of water. Use a fork to poke holes in the top of the puff pastry.

S For How To Make Ricotta Cheese

In order for the whey to drain properly make sure you hang the ricotta from your faucet. Every now and then give it a gentle squeeze.. When no more liquid drips, it’s ready to transfer to a glass container.

Note: you will definitely need a thermometer for this. I use a candy thermometer, however, if you don’t have one you can use an instant read thermometer and dip it into the liquid every now and then. Now, here’s a kitchen hack for you: If you don’t have a candy thermometer, take a small office binder clip and place the rod of an instant read thermometer along one arm of the clip. Using a bread tie, tie the rod of the thermometer to the clip arm. Attach to the side of the pan! Voila!!!! Make sure that the tip of the thermometer rod never touches the bottom of the pan or your reading will be inaccurate.

BTW…You might want to save a bit of the whey in case you feel your ricotta is too dry.

How To Serve Placinte

The Romanian cheese pies should be served immediately. They are fine to eat when cooled as well, but just like it is with most yeast baked goods, eating them when super fresh is best.

They are mostly served as a snack.

However, they make a wonderful and filling main meal when served together with tomato and onion salad, green salad with yogurt dressing or a fresh vegetable salad similar to the Shopska salad.

Yeast dough:

  • In a large bowl mix together the flour, yeast, sugar, and salt.
  • Slowly start adding the lukewarm water, mixing with a spoon until the flour is incorporated. Knead the dough for about 10 minutes or until it stops sticking too much to the walls of the bowl, flouring your hands from time to time if necessary.
  • Cover the bowl with a kitchen cloth and let rise in a warm place for about 1 hour or until doubled in size.
  • Alternatively, you can prepare the yeast dough in a food processor using the appropriate kneading accessories. I knead this kind of dough for about 3-4 minutes in the stand mixer.

Filling:

  • Crumble the feta cheese finely, but don’t turn it to a paste, it is enough if you use a fork to crumble it.
  • Chop the scallions and the dill very finely.
  • Mix everything together and adjust the taste with salt and pepper.
