More About Sicilian Cheese

The cheese of Sicily is rustic, often salty, and almost always uniquely flavorful. In addition to Ricotta Salata, Sicily is known for many other types of aged sheeps milk cheeses referred to as Pecorino Siciliano. Within this group, there are many cheeses. All are denser, richer and aged longer than Ricotta Salata is. Two examples are Incanestrato and Pepato .

Caciocavallo is another cheese Sicily is known for. It is made from cows milk and has a semi-hard texture and salty, grassy flavor.

Heres How To Make Fresh Ricotta:

To make about 1 pound, pour 3 quarts whole milk , ¼ cup white vinegar, and ½ teaspoon kosher salt into a large, heavy-bottomed pot over medium heat. You can subtly change the flavor by choosing different acids: Lemon juice will give it a hint of lemon, while plain white vinegar wont alter the flavor too much. I highly recommend experimenting with different acidsmy partner has gotten really into making his own vinegar, and his pumpkin-beet vinegar made for a really interesting ricotta.

Bring the mixture to the absolute barest simmer you can, adjusting the heat as necessarythe mixture should be steaming, but not bubbling. If you have a thermometer, 180185° is the sweet spot but 10° in either direction will still net you some tasty cheese.

Once you reach that temperature range, maintain it for about 25 minutes without stirringwe want big fluffy curds, and stirring will break those up. Youll notice the milk start to separate pretty early and curds will start forming throughout the heating process.

Try your fresh ricotta in salad, incorporated into ricotta gnocchi, or spread on slices of toasted baguette with a little lemon zest, olive oil, and freshly cracked black pepper. Whatever you plan on using your fresh ricotta for, plan on making more than you needthat first quality control taste test never stops at just one spoonful.

Can I Use This Almond Ricotta To Top Vegan Pizza

I happen to think the texture works fabulously for topping vegan pizza, and I far prefer it to any store-bought vegan cheese. I also dont enjoy the slimy texture of many homemade vegan mozzarella recipes Ive attempted. So if youre in need of a great vegan pizza cheese, give this recipe a try.

The trick is to dollop the almond ricotta on the pizza rather than trying to cover every inch of the pie. Its not stretchy or melty, but the creamy flavor and texture make this an elegant solution for people wholike mearent really into oily vegan cheese substitutes. How Ricotta Cheese Is Made In Italy | Regional Eats

Soak the blanched almonds overnight. Or for at least 6 hours.

Chefs note: If youre in a rush, you can use un-soaked almonds and use more water when blending. Though it wont blend quite as smooth.

Add the almonds and the rest of the ingredients to a food processor. Blend till smooth.

Chefs note: For quick almond ricotta then only add half of the water, to begin with, and increase the amount of water, if/as needed. This will stop you from having to drain the cheese at all.

Youll probably need to stop and scrape down the sides of the jug a few times.

Taste and adjust any of the seasonings as needed. I.e., more nutritional yeast for cheesiness, acidity with either lemon juice or ACV, more flavor with garlic/onion powder, etc.

Optionally, place the mixture in a cheesecloth or nut milk bag and let it drain for between 2-3 hours . You could also allow it to chill in the fridge to further set/harden, or use it immediately.

Is Mascarpone Like Ricotta

No, mascarpone is made entirely from cream, and as such as a creamy texture, a very smooth flavor, and a very high fat content . It is classed by the FDA as a semi-soft cheese.

Because of its high fat content and a moisture content similar to cream cheese, mascarpone is more like cream cheese than like ricotta. Ricotta is more similar to cottage cheese, only without any added cream to keep the curds together.

So in short, if you ever need to substitute mascarpone, its best to use cream cheese instead of ricotta. And if youre looking to substitute ricotta, look for some low fat cottage cheese.

Our Taste Test of Ricotta Cheese From the Supermarket

I should put Parmesan cheese in big quotations here, because this vegan version is definitely not cheese. Yet, it tastes quite similar to the real deal! Im loving this vegan Parmesan cheese recipe and I think you will, too.

This vegan Parm is great sprinkled over savory meals in lieu of real Parmesan. Whether youre vegan, dairy free, avoiding animal rennet, looking to limit your consumption of animal products, or just plain curiousthis recipe is for you.

Im not the first person to come up with a vegan Parmesan cheese substitute. Ive tried several recipes over the years, but none quite hit the mark. When I was wandering around Whole Foods the other day, I came across a vegan Parmesan blend in the refrigerated section. It used hemp seeds instead of raw cashews like Ive used before. I was intrigued.

I didnt buy that vegan Parm, but the idea stuck with me until I couldnt ignore it any longer. Hemp seeds seemed like a great choice since theyre tender, nutty, nutritious, and nut free . Hemp seeds are also tiny, which meant that I could simply stir the ingredients together instead of making a mess in my food processor.

So, I bought some hemp seeds on another grocery store run, and came home and started experimenting. Bingo! Meet the best vegan Parm Ive ever had. Youll only need five ingredients for this dairy-free wonder.

Vegan Ricotta Cheese Recipe

This vegan ricotta cheese recipe is easy, uses simple ingredients and perfect for everything from lasagna to pizza. The flavor is spot on!

This recipe was originally published on 11/18/13

This is the perfect alternative for any recipe that calls for traditional ricotta cheese. Dairy free ricotta made simply and with whole foods!

Whatever your reason for needing to cut dairy, its amazing to see what options are out there and what you can do with other ingredients to mimic the flavor and texture of items with dairy.

How Is Cheese Made

Cheese is made by combining milk with a starter culture of bacteria that digest the milk sugar, called lactose, and produce lactic acid. Its this starter culture that helps determine the ultimate flavor of the cheese. Next, an enzyme called rennet is added which causes the milk to curdle, producing solid lumps called curds, leaving behind a protein-rich liquid called whey.

The whey is drained away and the remaining curds are cooked, cut up and pressed together, squeezing out still more whey, and aged for several weeks, up to 12 months or even longer. Salt and other flavorings are added, and the resulting product is cheese.

These days, the fat content of the cheese is controlled by manipulating the fat content of the milk thats used to make it. Each cheese has its own particular fat content. In general, higher-fat cheeses are creamier, such as mascarpone, and lower fat cheeses are harder, such as Parmesan.

Fat-free cheese is cheese that is made using fat-free milk. But how is fat-free milk made?

Whole milk ricotta cheese I buy from Hyvee. A lot of recipes use this ...

August 4, 2011 by Joel MacCharles

I dont think Ill ever become a cheesemaker but I find it fascinating to learn to make things that I otherwise take for granted this its important to me that I learn a bit about how to make cheese. When it comes to ricotta, its super easy, limited equipment or special ingredients are needed and the results are very quickly achieved. Ricotta is a fantastic gateway drug into the world of making cheese.

Ingredients/ Equipment

  • 2 liters of skim milk whole milk will produce richer results
  • 0.5 teaspoon of salt
  • 3 tablespoons of distilled white vinegar
  • Colander

  • Pour cold milk into a large pan. Stir in salt.
  • Place the milk on medium and gently raise the heat to a near-simmer. If you have a thermometer , remove at 180 degrees farenheight. If you do not, look for small bubbles to be forming . I stir regularly to prevent scorching and to ensure the heat is distributed through the pan.
  • Remove from heat and turn off burner.
  • Add vinegar and stir for 1 minute. You should see small curds starting to appear .
  • Cover pot and let rest for 2-3 hours
  • Line a colander with a few layers of cheesecloth. Pour the contents of the pot through it and let it drain. If you are impatient , gently shift the colander back and forth and more whey will drain on dry parts of the cloth that hasnt been clogged with tiny cheese particles. You could let it rest like this but I waited a total of 10-15 minutes after draining.
  • Thats it!
