This cheese falls in line with the nutrition of other cheeses on this list, but it stands out because of its raw label. Its important to clarify the difference between raw milk and raw milk cheese. Raw milk has not been pasteurized to kill off the good or bad bacteria, so drinking raw milk is dicey. However, when it comes to making raw cheese, the microorganisms in raw milk are a welcome taste and aroma variable for cheesemakers. In the US, cheese made from raw milk has to be aged for at least 60 days to decrease the risk of pathogens, and cheesemakers are required to follow specific FDA food safety protocols and conduct testing throughout the production process. Those who are immunocompromised in any way should probably skip the raw cheese options like this one.

Land O Lakes Is Reliable But Limited When It Comes To Cheese

As a matter of fact, theyre the best-selling brand of butter in the US, according to Food & Wine. Theyve also got a full line of milk, cream, eggs, margarine, and spreads that are widely available almost everywhere. So, while this cheese might be great for sandwiches, we wouldnt call it a go-to for all your cheese-based recipe needs.

What Makes Grated Parmesan Cheese Different

The grated Parmesan cheese found in bottles or shakers is different than Parmigiano-Reggiano, although this kind is regulated in the U.S. It has to be a cows milk cheese, aged for at least 10 months, Supan says.

Given the lower price and mass-produced nature of this cheese, chances are good the milk isnt coming from grass-fed cows, she adds, meaning its already not going to be as nutritious. However, to prevent clumping, this grated cheese also contains additional ingredients and fillers.

This is where things can get scary, Supan says. The extra ingredients are harmless if theyre kept in the amounts that they should be. But when companies have done quality-control testing, the actual amount added to the cheese is sometimes nowhere near where its reported to be. For example, experts have found wildly varying levels of cellulose in cheaper brands up to 10%, when the actual amount listed is 4% or less.

That leaves you questioning, How much cheese am I truly buying? Supan says. If youre not getting things in the correct amounts, then that nutrition facts label is also going to be off. Youre not getting as much protein or calcium as it says. Youre also creating a health risk by adding in so many fillers and youre already starting with a somewhat inferior product in the first place with that cheese.

Smaller Portions Fewer Symptoms

Maybe you cant enjoy a big glass of milk with cookies, but you can try a smaller serving. Start with a 4-ounce glass instead of a full 8 ounces. Gradually increase the amount of dairy you eat until you begin to notice unpleasant symptoms. Listen to your body. It will tell you when youve reached your limit. If you want to avoid lactose completely, try lactose-free dairy milk or non-dairy drinks, such as soy milk.

No New Members Allowed

Four years ago, Agri-Mark closed the doors on taking any new members. The co-op is also implementing a supply management regime, Conant said.

Everyone hates to call it a quota system, but yeah, this is one co-op going it alone and saying were committing to our farmers that we can sell the product theyre making, he said.

Agri-Marks farmers have been steadily increasing production over the last several years, even as milk prices have languished.

Its been a lot for the co-op to handle, Conant said. They want to slow it down so they can at least manage the growth. Thats why they closed membership.

Agri-Mark lost $2.9 million last year, which was reduced to a $1.3 million loss thanks to favorable tax laws. This year the co-op is getting hit with the loss of a lucrative market in China for a byproduct called permeate.

Cheesemaking results in a liquid called whey, which can be separated into protein and lactose. The lactose is dried and becomes permeate, which is like sugar.

Farmers can use it to feed their animals, Townley said. It makes your animals eat more, specifically hogs love it, so they can go to slaughter faster.

Agri-Mark was selling $12 million worth of permeate to Chinese hog farmers every year, until the trade war between the United States and China broke out. Then, Chinese hogs contracted African swine flu, which wiped out half of the population, with another 20% of the hogs expected to die before the disease is eradicated.

Cooperation From The Start

Just over a century ago, in 1919, a group of farmers in Cabot, Vermont, had a problem: They were producing more milk than the local community could consume. Then they had a bright idea: If they pooled their excess and transported it to other towns, or turned it into longer-lasting products such as butter and cheese for wider distribution, they could generate a healthy income and divide it among themselves. The Cabot cooperative was born.

In the 1940s the group, then 56 farms, added a cheese-making facility, and in the 1960s and 1970s, with added capacity from even more farms, it started making cultured productssour cream and cottage cheese. But those goods were sold locallywithin about a 40-mile radius and to a few Vermont ski areas and restaurants, none of which advertised their use of Cabot cheese. In the early 1980s the co-op, by then comprising about 500 farms, finally started marketing to food-services groups in Boston. But not until 1989 did it realize that its products had much greater growth potential.

When suppliers are shareholders, however, they do have the power to put the management team in a tricky position. Our farmers provide high-quality milk they could vote to pay themselves well above market rates. But they understand that if the co-op is to survive and thrive over the long term, our branded products must be priced competitively enough to sustain customer demand.

What is lactose and why are some people intolerant?

Lactose is a type of sugar found in milk and other dairy products. In the body, lactose is broken down into simple sugars by an enzyme called lactase. People are lactose intolerant when their bodies dont make enough lactase. Without lactase, the lactose cant be properly digested and causes gastrointestinal distress. Some people are more intolerant than othersit all depends on how much lactase your body is able to make.

Does this mean lactose intolerants can never have cheese?

Were happy to report there are some cheeses that lactose intolerant individuals can still enjoy without gastrointestinal consequence.

While fresher cheeses have a high percentage of lactose, aged cheeses have much of their lactose transformed into less harmful lactic acid. Lactose is also separated and drained off with the whey during the aging process, which brings the lactose percentage down with it.

The most common test for the diagnosis of lactase deficiency is the hydrogen breath test. This test is done at an outpatient clinic or doctors office. In practice, many doctors will ask patients who suspect they have lactose intolerance to avoid milk and dairy products for 1 or 2 weeks to see if their symptoms subside, and will then confirm the diagnosis with the hydrogen breath test. The hydrogen breath test measures the amount of hydrogen in the breath after drinking a lactose-loaded beverage.

Our Big Sustainability Push

The Best Cheese To Buy At The Grocery Store…And What To Avoid!

Although Cabot had always operated with respect for ESG issues, we began a more deliberate push toward sustainability in the mid-2000s. By that time I had moved up from vice president of the Cabot-branded product division to SVP of finance for the commercial division, which included Cabot, McCadam cheese, and Agri-Mark whey products. Roberta gathered usRichard, me, our manufacturing chiefs, some of her team members, and an outside consultantfor a serious powwow.

I remember the meeting vividly. She threw something like 30 corporate sustainability reports on the tabledocuments prepared annually by big companies such as GE and IBM and smaller ones such as Green Mountain Coffee Roasters and told us we needed something similar: Financial reports were no longer enough. She explained that an ESG report wouldnt fall under marketing. It was an operational imperative.

Roberta has always been a visionary: In 1995 she predicted that demand for organic products would skyrocket. Although we were way too early and then gave up on the business too soon, the market ultimately proved her rightwhich meant we eventually jumped back in. We suspected that in her new push for sustainability tracking and reporting, her instincts were still good and her timing had improved. So we backed her. Cabot was going to become a much better, more transparent organization in terms of everything from our treatment of cows and fields to our farm, factory, and transportation emissions.
