Queso Blanco – How to Make Mexican White Cheese. Fresh Mexican Same-Day Cheese.

Ingredients:

½ pound of chorizo sausage

¼ cup of diced onion

¼ cup of diced green bell pepper

one 14. oz can of diced tomatoes with green chili peppers

one pound of Velveeta cheese

½ teaspoon of chili powder

salt and pepper to taste

Instructions:

Step 1: In a large skillet, cook the chorizo sausage over medium heat until it is fully cooked. Drain any excess grease and set aside.

Step 2: Add the onion and bell pepper to the skillet and cook until they are soft. Stir in the diced tomatoes with green chili peppers, chorizo, Velveeta cheese, chili powder, cumin, salt and pepper. Cook until the cheese is melted and bubbly. Serve with tortilla chips or bread for dipping. Enjoy!

    Homemade Queso Fresco Recipe

    Place the milk in a large pot. Heat it until the milk is about to boil, that is, between 178°F to 190°F .

    If you do not have a thermometer, you will notice that the milk begins to form some little bubbles around the edges of the pot before boiling, that would be the exact moment that is called to the point of boiling.

    Turn off the heat and then add the yogurt. Stir for 10-15 seconds and let it sit for 2 minutes.

    Add half the vinegar and mix again for 10 seconds. Then let it sit for another 2 minutes. Stir in the other half of the vinegar and mix slowly for one minute.

    After that, you will notice how the milk has become a curd and has started to separate from the whey. Set aside until it reaches room temperature .

    Line a large colander with 2 layers of cheesecloth or a clean kitchen towel and place it over a large bowl.

    With a slotted spoon, transfer curds to the prepared colander.

    cover the exposed top with cloth, and allow to drain for about 20 minutes.

    When most of the whey has drained off, lift the edges of the cheesecloth up and twist, wrapping the cheese into a ball, then carefully squeeze off excess whey.

    Place the cheese on a container and add salt to taste. Mix well with a wooden spoon but try to not overmix otherwise youll end up with cream cheese.

    Now is the time to shape. You can use cheese molds , I used some cookie cutters I had, but also a regular bowl can work just fine.

    Ingredients For White Queso Recipe:

    • White American Cheese I find this at the deli counter at my local grocery store. If you cannot find it, you can use Velveeta Blanco in this recipe instead.
    • Milk I usually use milk as it makes this cheese dip creamier. You can use heavy cream or half and half as well.
    • Butter Dont skip the butter and make sure to use a high quality butter not margarine for this recipe. I prefer Land O Lakes butter but any 100% butter will work great in this recipe.
    • Green Chiles I use the canned ones and they work awesome. You can use fresh diced fresh green chiles as well if any are available in your area.
    • Cumin Dont skip the cumin in this recipe. Its add the perfect flavor to this dip recipe that you will miss! If you dont have cumin, check out Best Substitute for Cumin.
    • Garlic Salt Garlic powder would work as well. If you use garlic powder, I recommend using ¼ of the total amount.

    Sure, it does have to be kept cold. But if you pack it on ice then set it on a bowl over ice, youre golden. You can use something fancy like this or literally just set a bowl of it over a larger bowl of ice. It will be gone in minutes!

  • Place the half gallon of milk in a large pot on medium heat. While the milk is heating place a colander over a large bowl and line colander with cheese cloth.
  • Heat the milk to 170° F, remove from the heat and then add the vinegars to the milk and stir it a couple times. Let it sit for 30-45 minutes.
  • Cut the curds with a knife.
  • Using a slotted spoon remove the curds and add to the cheese cloth in the colander. Stir the salt into the curds once all the curds are in the cloth.
  • After all the curds are in the colander gather the edges of the cheese cloth and form a ball and tie it off with butchers twine or some twist ties.
  • Hang the cheese cloth over your sink faucet and allow to drip for 30 minutes. After 30 minutes you can form a ball from the curds, remove from the cloth. Once it stops dripping you can place in a sealed container in the refrigerator until ready to use.
