    How To Make Mac And Cheese Sauce

    Step 1: Make Roux by this point, you already know the ins and outs of a roux and how to make it , so were going to skip to step 2.

    Step 2: Whisk in Milk slowly add milk to the roux, whisking constantly so it doesnt burn. Continue to whisk for around 4-6 minutes, or until things begin to thicken.

    Dont rush this process. we PROMISE things will thicken!

    Step 3: Remove from Heat once things are thick, turn the heat off.

    Step 4: Whisk in Shredded Cheese then, add shredded cheese, garlic, hot sauce, salt, and pepper and whisk until the cheese melts.

    Give your cheese sauce a taste and add more hot sauce, as desired.

  • Start by heating a large pot or dutch oven over medium/high heat. Then add butter, and allow it to melt fully.
  • When the butter is melted add the all-purpose flour and whisk until the butter and flour form a crumble or paste.
  • Slowly add milk to the pot by pouring slowly, and whisking constantly. Continue to whisk the roux over medium/high heat for about 4-6 minutes or until the roux thickens.
  • When the roux is thick, remove from heat, and then its time to melt the shredded cheese!
  • Congrats, youve made your roux! This will give your mac the thick and creamy texture youre looking for.

    I have six kids and a husband with a taste palate of a 12-year-old-boy, which means we eat a lot of mac and cheese in our house. A lot of mac and cheese.

    So naturally I created this easy homemade mac and cheese recipe so that we could consume less of the boxed varieties. Because I really care about feeding my family healthy meals that they actually enjoy! And did I mention that they love mac and cheese?!

    Once you taste this homemade mac and cheese you and your family will say “goodbye” to powdered cheese forever, and say “hello” to this creamy dreamy real-cheese version again and again!

    This homemade mac and cheese recipe is made with only 8 ingredients in 15 minutes! That’s the same amount of time it takes to make the boxed varieties, but with no preservatives or artificial ingredients!

    How To Make Homemade Roux For A Creamy Sauce

    To make a simple and flavorful roux, start by melting a stick of butter in a medium saucepan.

    Whisk in the salt and pepper. A very important step is to continue stirring for a good 2-3 minutes until roux turns a bit darker in color. It becomes richer and even more fabulous.

    Slowly whisk in the milk until mixture is thick and creamy. This step will take a couple minutes over medium heat.

    Stir in cheese until creamy and cheese is melted through. I prefer a finely shredded mild cheddar. It melts quickly and has a perfect cheddar flavor.

    How To Choose A Cheese For Making Mac And Cheese:

    Before you select a cheese for your mac, check the recipe: Does it call for making a béchamel? This will influence your cheese choice. If you are starting with a béchamel, you wont need to worry much about your sauce breaking or splitting . But if the recipe doesnt have a béchamel base, youll want to use a combination of cheeses: one for flavor and one thats processed for stability.

    Beyond that, the best cheeses for mac and cheese balance flavor with meltability. Ideally, the cheese is sharp and flavorfulneither too stinky or too blandwith a creamy, gooey texture when melted. TBH, most cheeses cant offer both qualities, but combining a few types will solve that problem.     I have all kind of macaroni and cheese recipes on the blog, and today I have a Creamy One Pot Macaroni and Cheese to add to the collection. This is a great recipe to make for lunch when your kids are in the mood for something simple, hot, and filling, and you need something that comes together in without any fuss. This recipe is so easy and we loved the extra creamy results.

    This recipe is extra easy because you cook the macaroni right in the milk that helps to make the sauce. Theres no water to boil or noodles to rinse.     The first thing you need to do is crush whatever crunchy topping youve chosen. If youre using potato chips, crackers, or cheese crisps, you can either place them in a zip top bag and roll over the bag with a rolling pin , or whir them in a food processor. If youre going the rolling pin route, be sure to push out any air in the bag before zipping it closed.

    To make your own breadcrumbs from leftover bread, start by removing any particularly tough or thick crusts. Tear the bread into pieces, place it in the bowl of a food processor fitted with the steel blade, and pulse until your desired crumb size is reached.

    Stick With The Stovetop

    All too often, baked macaroni and cheese takes on more of a casserole feel than the creaminess you’re looking for here. To prevent that, cook it entirely on your stovetop rather than finishing it in the oven. The sauce won’t get overly thick and clumpy on the stovetop, meaning the end result will be creamy and silky smooth just what you’re after.

    Two: Add Milk And Seasonings

  • Next comes the milk. If the roux is hot, the milk should be cool, but if the roux is cool, the milk should be hot. When you combine the ingredients at different temperatures, they heat up at a moderate rate not too fast, and not too slow creating a velvety-smooth sauce.
  • Pour in the milk gradually while whisking the roux until the mixture is smooth, then add seasonings if you wish. Traditional seasonings for béchamel are diced or grated onion, a bay leaf, a couple cloves, and a pinch of nutmeg.
  • Simmer the sauce until it gets to the consistency you want, then strain out any seasonings. If youre in a hurry, you can simmer the sauce over high heat, but youll want to keep whisking to prevent it from burning.

    How To Make Homemade Mac And Cheese Step By Step Photos

    Start by shredding an 8oz. block of sharp cheddar. Its very important to shred the cheese yourself instead of using pre-shredded cheese. For more information on that, see the section above the recipe titled Avoid Pre-Shredded Cheese.

    Next, boil 8oz. of macaroni according to the box directions . Drain the macaroni in a colander.

    You can start the cheese sauce either while the macaroni is boiling, or wait until its draining and just make it in the same pot to save on dishes. Add 3 Tbsp butter, 3 Tbsp all-purpose flour, and ½ tsp onion powder to the pot.

    Place the pot over medium heat and allow the butter to melt. Whisk the butter, flour, and onion powder together as the mixture begins to get bubbly and frothy. Cook and whisk for about one minute after it becomes bubbly.

    Whisk 2 cups of milk into the butter and flour roux. Continue whisking as the milk begins to heat .

    Allow the milk to come up to a gentle simmer, at which point it will thicken to the consistency of heavy cream or gravy. Turn the burner off at this point.

    Season the sauce with ½ tsp salt and ½ tsp hot sauce, or the seasonings of your choice .

    Begin adding 8oz. shredded cheddar to the pot, one handful at a time, whisking until it is completely melted before adding more. If the sauce cools down too much to continue melting the cheese, you can put it over low heat briefly, but avoid allowing the sauce to simmer again. Overheating cheese sauces will cause them to break and become grainy and oily.

    Make The Cheese Sauce

    While the macaroni is cooking, make the cheese sauce. It’s really easy but there are a few notes that we’ll go over to ensure your success!

    Make a Roux

    This homemade mac and cheese sauce starts with a roux. What is a roux? It’s a mixture of fat and flour that is used to create thick sauces. Start by melting the butter and then adding the dry ingredients .

    Use a whisk to combine the ingredients until the mixture is homogenous . Let it cook for about 60 seconds before moving on!

    Add wet ingredients.

    After the roux has cooked for 60 seconds, add the milk and whisk the mixture really well. Add the sour cream or Greek yogurt and whisk again. At this point the mixture will be fairly runny. Cook over medium heat whisking every 10-15 seconds until the sauce starts to thicken.

    Do NOT let this mixture boil! If you do you may end up with a mac and cheese sauce that is too thick. Once the sauce has thickened enough to stick to a spatula, turn the heat to low. Then it’s time for the next step…

    Add the cheese & whisk until smooth

    Add the cheese and whisk until the sauce is smooth and all the cheese is melted. This will take 1-2 minutes over low heat. At this point it is important to taste the cheese sauce and adjust the salt/garlic according to your tastes!
