Crack Chicken Dip is made up of 6 ingredients. Cream cheese, sour cream, ranch dressing mix, cheese, chicken and bacon.

First, cream together the cream cheese and sour cream. This works best if the cream cheese is at room temperature. Remember though, we want 5 minutes of prep time! If you forgot to take yours out of the fridge, place it in a ziplock bag, squeezing all of the air out before zipping it shut. Set the baggie covered cream cheese into a bowl of hot water and let it sit for a minute or so. This will soften it right up for you!

After the cream cheese and sour cream are mixed together, add in the cheese and ranch dressing mix. Mix until well combined and smooth.

Next, fold in shredded chicken. You can totally prepare the shredded chicken beforehand in the crockpot or Instant Pot, but to make this extremely easy, you could use a rotisserie chicken.

Spread the mixture out into either an 8×8 pan or a pie plate.

Top the dip with a little more shredded cheese and crumbled bacon. I cooked my bacon up in the air fryer as I was mixing the other ingredients, but you could totally use bacon bits or microwavable bacon from Costco.

Toss in the oven for 15-20 minutes or until the cheese has melted and the dip is HOT!

Serve with potato chips, tortilla chips, slices of French bread.. seriously, whatever your heart desires!

    Slow Cooker Buffalo Chicken Cheese Dip

    Olive oil. You could also use butter, but in sticking with our healthy theme, I like to use heart-healthy olive oil. Only a little bit is necessary to sauté the veggies, about two teaspoons.

    Onion and Garlic. The base of any good buffalo chicken dish. And just about anything else.

    Greek Yogurt. You can use whole milk, low-fat, or non-fat Greek yogurt. Just make sure its plain and not flavored. I usually buy one of those little seven-ounce containers of FAGE or Chobani Greek yogurt.

    Shredded chicken. For this particular recipe, I used the leftovers from this Roast Chicken, so it was a combination of dark and white meat, which I think gives the dip more flavor. You can buy a rotisserie chicken and shred it. You can also roast a chicken breast, then shred it. Whatever is quickest and easiest for you!

    Crumbled blue cheese. I usually use crumbled gorgonzola, but whatever blue cheese you prefer will work great.

    Light mayo. As we mentioned, this is a healthy buffalo chicken dip WITHOUT cream cheese, but we need something with just a hint of creaminess. Thats where the mayo comes in. All you need is just a tad! A tablespoon will do. I have been crucified before for saying I believe light mayo tastes the same as full-fat mayo, but I truly dont believe using full-fat will reap any greater results.

    What To Do With Chicken Dip Leftovers

    This reheats so well that you can and may be tempted just to much at it all week if you are lucky enough to have leftovers but its also fun to use this cheese flavorful chicken mixture as parts in the dishes.

    Here are some of my favorite ideas.

    • Buffalo Chicken Wontons or Eggrolls just add a spoonful to egg noodle wrappers and fry or air fry!

    • Make it ahead of time Also, you can definitely make this dip ahead of time. I have made this dip the night before and stored it in a baking dish in the refrigerator. The next day, I just put the dip in the oven or crock pot to warm is back up to serve.
    • You can bake it You can put it on a low oven setting and itll take 20-25 minutes to warm is up or turn the oven up and itll be nice and bubbly in under 10 minutes for your guests to enjoy!
    • Prepare it on the Stove If you are short on time, melt everything together in a pan on the stove over medium heat. Then transfer it to the crock pot to stay warm.
    • Serve with Ranch If you are making this for a party, I would serve with ranch on the side. That way if people are sensitive to spice, they can dip in ranch as well to help offset the spice.
