I discovered this cheese at a holiday gathering while the host was putting together another appetizer platter for the party. I had already tasted it earlier and thought it was a whipped version of cream cheese. But while conversing in the kitchen I saw the little tub of cheese she was using and noticed it wasnt cream cheese as I was used to seeing.
I am not advocating for this particular brand, but seems to be the most common in the grocery stores around here
I was shocked to see how low the sodium was in it as compared to what I was used to with cream cheese. Yeah, the taste and texture was slightly different but if I had not found out, I would have thought nothing of it. It is creamier than and maybe not as rich as cream cheese, but with a slightly sweet taste it is very pleasing.
I have used it as an appetizer and in several dishes that call for cream cheese to be melted in with great success. You can count on me to use it as a low sodium cream cheese alternative from now on. Its likely, if you didnt know it replaced cream cheese you would never know the difference. And the sodium savings are significant as cheeses are among the hardest ingredient to cut sodium from.

How Much Milk Does It Take To Make A Pound Of Cottage Cheese
If you use 2% cows milk, you should get about ½ lb. of cheese from this recipe . Thus, 4 liters of milk will make about a pound of cottage cheese. Yields tend to be lower if you use sheeps milk.
Your yield will also vary depending on how well you drain and squeeze out your curds. You could end up with less or more cheese than me depending on how thoroughly you express the whey.
The curds absorb the cream that is added at the end of the recipe. As you may notice in the photos, the end product is not liquid-y at all.
This may come as no surprise, but the skim milk curds absorbed more cream than the low-fat milk curds. I used about ½ cup of cream with the skim curds and 6 tablespoons of cream with the 2% curds. Depending on the amount of cream added at the end, starting with skim milk may not result in a lower calorie cheese.

No Salt Added Cottage Cheese
Was on vacation in Florida, and found some Friendship brand Cottage Cheese NO Salt Added. It was labeled all natural and contained 60 mg sodium per 1/2 cup serving. I love cottage cheese, but can do without the usual 400mg sodium per serving in the regular brands so I really liked this no salt added kind. Trouble is, vacation is over, I am back in the extreme suburbs of Philly , and no one carries CC without added salt. Anyone know of a place that sells it up here?
