What Makes It Extra Cheesy
For this extra cheesy homemade mac and cheese, I did use slightly more roux and added about 30% more cheese than I generally do to my simple stovetop mac and cheese recipes. And Im not even sorry about it. The thicker sauce and extra cheese made this mac and cheese so lusciously creamy and cheesy that I couldnt stop sneaking forkfuls between photographs. AND the best part is that it even stays smooth and creamy when reheated in the microwave. Mac and cheese heaven!

Easy And Amazing Mac And Cheese Cups
In a large skillet, melt the butter and add the cooked macaroni. Sprinkle the cornstarch over the macaroni, then add the milk and stir together until the cornstarch is combined. Add the cheeses, onion powder, and salt. Stir together over medium heat until the cheese is melted and smooth. Preheat the oven to 400°F.
Step 1: Make Roux by this point, you already know the ins and outs of a roux and how to make it , so were going to skip to step 2. Step 2: Whisk in Milk slowly add milk to the roux, whisking constantly so it doesnt burn. Continue to whisk for around 4-6 minutes, or until things begin to thicken.
Spray the inside of two muffin tins with nonstick cooking spray and then scoop your macaroni into each cup. In a small bowl, combine the panko bread crumbs and parmesan cheese. Sprinkle it over the top of each muffin. Bake in the oven at 400 degrees F for 30 minutes or until golden in color. Serve warm and enjoy!
Stir in 2 cups of the cheese. Stir in cooked macaroni. Divide mixture evenly among cups. In a medium microwaveable bowl, microwave remaining 1 tablespoon butter, uncovered, 30 to 45 seconds or until melted. Stir in breadcrumbs and parsley. Spoon on top of macaroni mixture in cups. To make a simple and flavorful roux, start by melting a stick of butter in a medium saucepan. Whisk in the salt and pepper. A very important step is to continue stirring for a good 2-3 minutes until roux turns a bit darker in color. It becomes richer and even more fabulous.
Slowly whisk in the milk until mixture is thick and creamy. This step will take a couple minutes over medium heat.
Stir in cheese until creamy and cheese is melted through. I prefer a finely shredded mild cheddar. It melts quickly and has a perfect cheddar flavor.

Put the macaroni and the water into a mug. Microwave on full power for 2 minutes. Stir. Microwave for another minute. Stir. Microwave for a fourth minute, and then check to see that all the water has been absorbed. If not, microwave a bit more, until it is gone.
Bring a large salted pot of water to a boil. Add noodles and stir. Cook the noodles until they are al dente. Before straining noodles from the pot, remove about ¼ cup of the pasta water from the pot and set aside. Strain water from the noodles. Place the pot back on the stove top and turn heat to medium/low.
Make the cheese sauce by combining a fat , and starch , then whisking in the milk products. Cook the sauce until its nice and thick. Add in shredded cheeses, stir well. Combine cheese sauce with cooked pasta. Transfer half of the mac and cheese to a baking dish, sprinkle with more shredded cheese.
