Making A Mornay Sauce
It might sound fancy but a mornay sauce is just another way of saying cheese sauce.
Make a roux by melting the butter and whisking in the flour and ground mustard. Cook the mixture for approximately five minutes until it begins to darken. A roux is a cooked paste made with butter and flour that helps to thicken your cheese sauce.
Whisk in the milk, bay leaf, onion powder, garlic powder, and paprika. Simmer for ten minutes until the milk begins to thicken and coat the back of a spoon. Watch the sauce carefully. Simmering dairy can boil over quickly! Remove the bay leaf.
Temper in the egg yolk and egg. To temper the eggs, scramble the egg and egg yolk in a small glass measuring cup. Slowly pour in of the milk mixture while whisking constantly. Pour the egg and milk mixture back into the pot.
Add the cheese and season with salt and pepper. Stir until the cheese has melted. Taste and adjust seasoning if necessary.
What The Hell Is Provel
The term processed cheese product is nothing to be scared of. It just means that emulsifiers have been blended with the cheese so that it melts uniformly and without separation . Provel is a combo of multiple cheesescheddar, Swiss, and provolonefashioned sort of in the likeness of American cheese product. Provel also melts like American cheese, meaning its melting point is fairly low and it easily attains that gooey, gel-like texture. Theres a touch of smoky flavor to it as well.
Imos in St. Louis is the most famous pizza chain to feature Provel on its pies. I was so curious to sample Imos and its signature Provel that I briefly considered dropping a ton of money on Goldbelly just to purchase a four-pack of piesbut then I thought, Well, I could just make a St. Louis pie, right?
Provel Cheese Is My Weakness
A friend of mine got married this weekend. The best part about the weekend was the fact that all of his friends from out of town came to Dallas and hung out. I got to see a few people I hadnt seen in a while, and I also met some brand new folks.
I was sitting at dinner on Friday night at Babes Chicken, which is absolutely the best fried chicken Ive ever had in my life. Its probably the best in the whole world actually. If you dont believe me, youll just have to come to Texas and try for yourself.
So I sat across from a Pennsylvania couple I had never met before and the topic turned to my beloved hometown St. Louis, Missouri. As soon as I mentioned St. Louis, the guy across from me uttered possibly the most delicious words Ive ever heard in my life:
Did you say St. Louis? So you know about provel cheese and St. Louis style pizza, right?
I would have kissed him if he were a she.
Unless you are from St. Louis, Im sure youre asking, What the deuce is provel cheese? And since when does St. Louis have their own pizza? Let me educate you.
St. Louis style pizza has a cracker thin crust with cheese and toppings going all the way out to the edge. The cheese is none other than Provel Cheese, which is a mixture of cheddar, swiss and provolone . The pizza is cut into squares instead of triangle slices, and tastes divine!
If I were on death row, this would truthfully be my last meal.

Provel Is Perfect For St Louis Pizza

Use this combination of cheeses instead: four ounces of shredded white cheddar, two ounces of shredded swiss, and two ounces of shredded provolone, along with two tablespoons of cream cheese for extra creaminess and 1 teaspoon of liquid smoke.

Alfredo sauce out the jar has 390 mg of sodium per 1/4 cup serving and many recipes are almost double that. Since my per meal budget is 250 mg of sodium once again this is way out of my range. With my low sodium Alfredo sauce I am once again enjoying this creamy sauce with only 73 mg of sodium per ¼ cup.
But here is where it gets slightly tricky. I listed 1/4 cup servings so it can compare side by side with the jarred sauce. I think 1/4 cup of sauce is pretty light serving with a plate of noodles and chicken or broccoli. But even if I use two servings it is only 146 mg of sodium to sauce the meal. Still well below my sodium budget.

Through my experimenting, I realized that the Provel, which comes in five-pound loaves just like any deli cheese bricks, is excellent for anything that would normally involve the use of American cheese, adding another layer of smoky flavor with its unique flavor profile. Grilled cheese, burgers, cold sandwichesProvel is a good all-around star player. I imagine it would be terrific on a cheesesteak, too, and The Kitchn swears by its use in mac and cheese.
Honestly, if you come across Provel, Id tell you to snag a pound of it just to play with at home. Dont think too hard about how to use itjust dive right in. Best of luck to those in search of it outside of Missouri, because no matter how hard I try these days I cant find any in Chicago. Oh well. Better plan a trip down to St. Louis for some Imos and a block of the good stuff.
