Stemming from a desperate craving for dry noodles without resorting to instant mi goreng had me rummaging the fridge for what could go together. I first cooked pasta and mixed in pork belly sauce but felt like it was missing something. So I added some texture and nuttiness with the peanuts and kimchi. Also, a ton of hot sauce. Ive never looked back.
I think of it as a tale of harmony between growing up as a Vietnamese refugee in Canada and never having been taught proper Western recipes because my mother either didnt know how to make it or I just didnt have enough English proficiency to do so myself. Nowadays, through the help of many books and years of ESL, Ive excelled at English and often assist my parents with translation back into Vietnamese. This food is like the bastardized spaghetti and meatballs, and Im quite proud of how noodles can travel across so many different cultures.

I find colby jack perfect in this recipe, but if you wanted to use another cheese you totally could.
Or, if you like spicy sauce, double the paprika in this recipe for a spicy nacho cheese or use pepper jack cheese.
I definitely plan on making a white cheese/queso blanco sauce based on this recipe in the future.

Its been a while since Ive been home-home: in my parents house where I grew up. Sitting in the kitchen one recent afternoon, I noticed that we owned, not one, not two, not three, but FOUR rice cookers. It made me contemplate how important rice is in my life.
Growing up poor and Asian, I definitely am not a picky eater. Ill basically eat anything. Therefore, I was a little surprised when I realized I actually have a strong preference in grains. I was watching Oprah for Weight Watchers on TV saying, I love bread! over and over again when it dawned on me that I just did not empathize with her sentiment. Bread is fine. Couscous is OK. Oats are passable. But put rice on anything and I become a fiend about it. To my palate, rice elevates the dish to another level.
This preference has contributed to many experimental fusion dishes. My favourite college experimental recipes were to take meals that would involve wheat products and replace those products with rice. Tuna melt paninis became tuna melts on rice. Spaghetti and meatballs became rice and meatballs . The eponymous Philly cheese steak transformed into its Asian counterpart: beefsteak and melted cheese with onions sitting comfortably on a bed of warm white rice.

Ketchup And Soy Sauce
In my family, there is a technique we use to mix ketchup and soy sauce on your plate, without the soy sauce seeping everywhere. Pour ketchup into a U or O shape on the side of the plate and pool soy sauce in the ketchup before whipping together with chopsticks! We enjoy this sauce on the side of steaming short-grain white rice, and with any meals usually enjoyed with barbeque sauce stir fries, steamed vegetables, and grilled meats, are particularly good. - Sharp cheddar cheese + American cheese: make sure to shred the cheese yourself. You can use American cheese Kraft singles squares .
Champagne And Swiss Dip Variation
On my podcast, Recipe of the Day, when I talked about this dip, I talked about how you can make it perfect for New Years Eve if you do a couple of ingredient swaps. To make this into a fancy fondue-inspired Champagne and Swiss Dip, youd use an inexpensive dry sparkling wine, like a prosecco, instead of the beer.
Then, instead of the Cheddar cheese, youd use Swiss. The only other thing that you need to change is to omit the cayenne pepper. I dont think that heat goes as well with the Champagne and Swiss flavors as it does with the beer and Cheddar.
If you wanted to add something else for flavor though, the best thing would be a touch of kirsch. Kirsch is a cherry flavored liqueur that is traditionally found in cheese fondue. You would just add in a splash at the very end and then taste. It has a fairly powerful flavor so you dont need very much.

How To Make Nacho Cheese
More than anything, we love that the recipe is so simple. All it takes is mixing the ingredients together in a saucepan in this order:
BUTTER + FLOUR. Melt butter in a saucepan over medium heat. Stir in flour.
ADD MILK. Pour in milk and stir until mixture thickens.
CHEESE. Add cheese and salt. Stir over heat until cheese has melted and ingredients have blended together.
Tip: If you like spice, add chopped jalapeños to the cheese mixture. The jalapenos add some spice, but if you dont want that, you can also add salsa or even some hot sauce for a bit of nip.
Crockpot? I dont make nacho cheese in the crock pot because it is so simple and quick. However, I do use the crockpot to keep it warm.
Can I Make This In Advance
Yes. Unlike a lot of cheese sauces, this sauce reheats pretty well . It will solidify in the refrigerator but returns to its pourable state when reheated. To reheat:
- On the stove: Transfer sauce to a small saucepan and reheat gently over medium-low heat, stirring frequently. Do not allow to come to a boil.
- In the microwave: Microwave in a microwave-safe dish, stopping to stir sauce every 10-15 seconds as needed until just heated through. Heads up, the sauce will pop and sizzle in the microwave.

How Much Did This Cost Me
I bought the entire package of cheese for only $.50. I used 3 slices of cheese.
That means this cheese sauce only cost my family $.04 to make!! You cant really get more frugal than that.
Plus, I love that you can make what you need. When you buy the ones from the store you have to buy the jar and often you dont need an entire jar.

I tested soooo many different ingredients to try to recreate the taste of Taco Bells nacho cheese. Everything from cheddar cheese powder, cheddar cheese slices, American cheese slices, cream cheese, and at least 5 different brands of pickled jalapeños.
At the end of all that testing, I believe I have found 4 ingredients, easily accessible to any home chef, that gets you about 98% close to that Taco Bell cheese sauce taste:

Whats more: American cheese brings enough emulsifying power for the whole party, which is why I cut it with equal parts sharp cheddar. If you go all-American all the time, your nachos end up tasting like a can of Easy Cheese exploded in a 7-Eleven chip aisle. But, like, in a bad way.
Now that you have your basic nacho cheese theory, heres how you put it to practice. Heat a saucepan over medium heat, add in 1 cup of whole milk, and let it come to a simmer. Lay out a bed of tortilla chips on a large flat surfacecookie sheet, cutting board, Twister mat, whateverthen drown them in liquid cheese. Top with your favorite nacho accouterments and then go binge eat them somewhere away from the public eye. Its better for everyone that way.

And since parmesan is a long-lasting cheese, it should still be okay for a few weeks past that date. Once you open the package, the parmesan should retain best quality for about 1 to 2 months. When it comes to shredded or grated parmesan thats sold refrigerated, it should have a use -by date too.
