    • 1 package whole wheat macaroni
    • 2 tablespoons butter
    • 2½ tablespoons all-purpose flour
    • 2 cups shredded low-fat Cheddar cheese
    • ½ cup grated Parmesan cheese
    • 3 cups low-fat milk
    • 2 tablespoons butter
    • ½ cup whole wheat bread crumbs
    • 1 pinch paprika
    • Step 1

      Preheat oven to 350 degrees F . Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes. Drain.

      Melt 2 tablespoons butter in a saucepan over medium heat. Stir in flour to make a roux. Slowly add milk to roux, stirring constantly.     Healthier Kraft mac and cheese is possible. I am not sure if it is advisable but you can do it.

    I wrote a post about this years ago and I decided to update it because it seems to be popular. Why? I think it is because we are all looking for comfort and the bright orange and blue box for $1 is an easy source.

    Since I created this recipe, Kraft has dropped artificial dyes but this stuff retains that bright orange color. There was a whole grain version as well, but I couldnt find it at my store.

    I did a review of macaroni and cheese boxes to see if I could find a healthier version. I didnt like any of them. My son likes Annies as he says it tastes better than Kraft.

    The only cooking skill Kraft Mac and Cheese requires to make it is boiling water. My teenage son and daughter will make this every day for lunch.

    I am not a fan for a couple of reasons. First – this:

    Dehydrated cheese in a packet! Does this seem like real food to you? I think this belongs on the space station. Give me a real slice of cheese over this any day of the week.

    Second – this:

    Isnt that interesting? If you look closely, the 260 calories is per 2.5 ounces and it is when it is unprepared. Who sucks down the cheese packet and crunches on the uncooked macaroni?

    Replace Half Of The Butter With American Cheese

    My third trick is to replace half of the butter with two or three slices of American cheese. The difference is incredible!

    The instructions say to use four tablespoons of butter . Were only going to use two, plus some American cheese.

    I get my American cheese sliced really thick, so two of my slices would be equal to about three slices of packaged stuff. But hey, go ahead and throw in a fourth if you want. It will just be even creamier and cheesier!

    Can you use all of the butter the instructions call for, plus the American cheese? Sure, but I actually like it better this way. It gets a little too greasy with all that butter added to the extra cheese.

    How To Store And Keep

    To Store: Make sure your mac and cheese has cooled completely. Transfer to an airtight container and refrigerate. It will last in the fridge for 3-4 days.

    ToReheat: Place the mac & cheese in a microwave-safe bowl. Reheat in the microwave until hot . You may need to add a little bit of milk if its become a bit dry.

    This wonderfully creamy stovetop macaroni is incredibly simple to make! With just eight ingredients, plus a few pantry seasonings, you can create a healthier macaroni and cheese right in your very own kitchen!

  • Boil water for pasta: Bring a large pot of water to a boil.
  • Sauté onions and squash: While water is coming to a boil, heat the butter in a separate large pot over medium heat. Add the onion and cook for 2-3 minutes, stirring occasionally. Add in the squash and season with nutmeg, thyme, paprika, 1 teaspoon salt and ½ teaspoon pepper. Cook, stirring, for 2 minute.
  • Add liquid and simmer: Add in the half-and-half and stock. Increase heat to medium-high and bring to a simmer. Immediately reduce heat to maintain a gentle simmer. Cover and cook until the squash is extremely tender, about 20-22 minutes. Turn off heat.
