Cheese: I love using Velveeta for this recipe because the results are so consistent and so delicious. I wouldnt recommend swapping it for shredded cheeses or cream cheese. The texture just wont be as creamy and dippable.

RO-TEL: RO-TEL is a combination of canned petite diced tomatoes with green chilies. It adds just the right amount of spice and flavor to this dish. If you dont have any, you could replace it with a combination of canned diced tomatoes and a bit of diced pickled jalapenos.

Meat: I like to use browned ground beef as the meat in this recipe, but you could also use ground turkey, Jimmy Dean sausage, hot Italian pork sausage, chorizo, crumbled bacon, or shredded rotisserie chicken.

Spices: Were making an easyhomemade taco seasoning blend with salt, pepper, smoked paprika, chili powder, and ground cumin. You could also replace this with some store bought taco seasoning if youd prefer.

When I made this cheese dip, I found it to be too salty with only the velveeta cheese. So I decided to add a little bit of cream cheese to help balance out the salt. The tanginess of the cream cheese does wonders in this case. Of course, you dont have to use it, but if you find your Rotel cheese dip too salty, you can either add some cream cheese or even Greek yogurt or sour cream!

While this traditionally is made with the original Velveeta Cheese, you can also make it with the Velveeta Queso Blanco, Sharp Cheddar, 2% Milk, Mexican or Jalapeno Cheeses. The last two will turn up the heat, so just make sure that is what you are going for.

Ro*Tel Original Diced Tomatoes & Green Chilies The most important thing to take note of is that you are using the Rotel UNDRAINED. You can drain it, but the dip will be thicker. I find that leaving the tomato juices in helps create a wonderful flavor and texture in this dip.

There are a variety of options when it comes to Rotel. You can use the Original, Serrano, Mild, Hot, Fire-Roasted, No-Salt, Mexican Style or Chipotle. Whichever suits your taste will work.
