Youd think, coming from an Italian family, I would have heard about cheese crisps sooner. The cheese crisps, also called frico, are pieces of lacy fried cheese that can be formed into bowls, chips or a crunchy garnish. Hailing from Northeast Italy, the dishalong with a softer version carrying the same namehas been passed down from one generation to the next.

Where have I been?!

You can use any hard cheese, like Parmesan, Asiago or aged cheddar, that will retain enough of its shape to maintain a lacy texture, but melt enough that the crisp will hold together.

How To Make Nacho Cheese:

Start by melting some butter in a skillet:

Whisk in an equal amount of flour until combined:

This is called a roux, and it will thicken our sauce.

Next whisk in some milk, and season with salt and cayenne pepper:

I like the heat that the cayenne gives, but you could also add paprika if you prefer.

Once the milk heats through, the mixture should be thick and bubbly.

Now turn off the heat and add freshly grated cheddar cheese:

The freshly grated cheese is important, because pre-shredded cheeses in bags usually have things like powdered cellulose that are there to prevent caking. Those will make your sauce grainy, so make sure you actually buy a block of cheddar and grate it yourself. It only takes a few minutes.

Whisk gently until it melts and smooths out into a creamy, wonderful sauce:

It should have a flowy texture that runs and drips off the spoon in an even ribbon:

If at any point the nacho cheese gets too thick and doesnt run off the spoon, just add more water or milk, and whisk to combine. It will smooth out again beautifully.

Basically what happens is when you cook the mixture on the stovetop, you run the risk of cooking too much moisture off, so you just have to add more. No big deal!

Pour over chips and devour.

Variations Of This Recipe

  • SPICY to make this dip spicier, you could use all or any of the following: hot diced green chiles, more cayenne pepper, hot sauce, diced jalapeno, diced serrano pepper.
  • MILD this dip is what I consider to be a mild heat level, but if youre really concerned about heat, leave out the cayenne pepper.
  • CHEESE I wanted this dip to taste similar to the jarred queso thats found by the tortilla chips, which uses cheddar but you could use any good melting cheese you like. American, Colby, Colby Jack, Monterey Jack, Pepper Jack, etc. You could also use Velveeta if you prefer that consistency.
  • MEAT For a fun twist, add some spiced ground beef , or ground chorizo! Just make sure youve drained the meat REALLY well, or you can make your sauce greasy.
  • TOPPINGS Diced tomato, jalapeno, pico de gallo, sour cream, salsa, guacamole, cilantro the sky is the limit!

How To Make Cheese Dip

Step one As always, measure out the ingredients. We like a good strong cheddar, but use your favourite cheese.

You need grated cheese, cornflour, milk, and some garlic powder, as well as turmeric and tomato puree for colour.

Step two Mix together the grated cheese and cornflour, until the cheese is well coated. I find the easiest way to do this is to tip it into a plastic box and give it a good shake.

Step three Add all the ingredients to a saucepan. Heat gently for a couple of minutes, stirring constantly.

Step four The cheese will melt into the milk. Keep stirring!

Step five When the dip has thickened, serve immediately. If you want to make it in advance, you can set it aside and then reheat in the microwave for 30 seconds on half power.

The Best Serving Temperature

Because cheese solidifies around 90ºF , its best to enjoy the sauce while still warm, above 110ºF . The texture will be more dippable, with a thick coating, but not heavy like pudding. Consuming within 30 to 40 minutes has the best taste.

It takes about 1 hour for it to get closer to room temperature. Youll notice the sauce firm up more due to starch retrogradation, where the gelatinized starches realign to create a gel-like texture. At that point, if you have any dip left, give it a quick reheat.

Tips For The Best Cheese Dip

  • The cheese dip will be a little runny at first, but will nicely thicken as it cools. With that said, this dip is best enjoyed right after making.
  • You can always scale down the ingredients for a smaller party or make a double batch for a bigger game day get-together.
  • Buy the best quality cheddar cheese you can for the best flavor.

Watch Closely & Stir Often

Melting cheese is not one of those set it and forget it cooking tasks. Whatever you do, dont leave the cheese unattended on your stove. If you do, it will likely burn and be ruined.

Stir the cheese frequently to keep it moving around the pot. This step will ensure the cheese is evenly melted through and prevent it from sticking to the pot and/or burning.

Nacho Cheese Sauce For Parties

This recipe makes a little over 2 cups of sauce, but if you would like to make an even bigger batch, the recipe doubles with no preparation changes.

You can transfer your prepared nacho sauce to a slow cooker and keep it set to warm for a couple of hours. Fair warning, it will do that cheese sauce thing where the top sets and gets kind of sad and ugly looking, but if you give it a quick whisk, it returns to looking smooth and beautiful.

This Queso Dip recipe is for everyone out there who has attempted to make a Mexican cheese dip like what you get at Mexican restaurants and found it lacking. If you want the dip to be silky smooth like the stuff you get in jars, then the recipes call for fake cheese Velveeta or other processed cheeses.

Other recipes are made starting with a roux butter & flour which is used to make a béchamel sauce into which cheese is added. While this makes a terrific cheese sauce for pouring over vegetables, in lasagna, gratins etc, it doesnt have that truly silky and rich texture of a cheese dip.

How To Make Cheese Sauce

  • You start with a roux made by melting the butter in a small pot and whisking in the flour until you get a lightly golden paste. Cooking the flour with butter first cooks the raw flour taste out of the mixture.
  • Then slowly pour in the milk, being careful to whisk out any lumps as they form, and stir until you have a nice bubbly, creamy sauce.
  • Once the sauce is thickened, turn off the heat and stir in the cheese a handful at a time. Add salt, pepper, and optional cayenne to taste, and voilà. Perfect cheese sauce ready to tasty up whatever youre going to pour it over.
  • To Make White Queso You Will Need:

    12 slices of White American Cheese

    1 cup of Half and Half

    1 can of mild green diced chiles 4 oz

    Place your cheese slices in a medium size pot along with the cup of half and half. Drain your canned green chiles VERY well. Extra liquid will affect the dip, so really squish the extra moisture out with the lid of the can and drain well and then add the green chiles to the pot. Cook on the stovetop over medium-low heat until completely melted.

    Stir frequently with a wire whisk and make sure your temperature stays on medium-low to avoid scorching the cheese.

    You want the dip to be runny, not thick. The end product should be quite thin. If the dip gets too thick, it will solidify too quickly. If it seems too thick, simply add more milk.

    There you have it! White queso dip in less than 10 minutes. My family enjoys white queso drizzled over taco salads, nachos, bbq chicken or pork nachos, and as a bunless burger with veggies on top.

    As mentioned, you can use either half and half OR milk. The taste is richer with the half and half, but you can definitely make this with milk if that is what you have on hand.

    White American cheese may be hard to find in your grocery store. If you dont have luck in the cheese section, look in the Deli.
