    This weekend, Barclay and I went to a food festival here in Barcelona that was fabulously, deliciously,entirely devoted to CHEESE.

    And it was just about the best thing ever.

    Literally everywhere you turned, ooey gooey cheesy dishes were being served. And youd better believe we took full advantage of them. From freshly-scraped raclette toasts, to the most amazing Korean-inspired mushroom grilled cheese sandwiches, to Spanish onion and smoked cheese soup, to vegan Mexican cheesy quesadillas, to the best ricotta Ive ever sampled, to the most dreamy Italian gyoza-ish dumplings filled with potato and cheese and served in a pecorino-sage saucethe day was all of our cheesiest dreams come true. And we left feeling so happy. And soooo full, ha.

    That said, there was one dish notably missing at the festival. But, it just so happens that Ive been on a mission this month to nail down my all-time favorite recipe for it.     Tips For Perfect Cheese Sauce

    Have you ever made a mac and cheese that wasnt creamy or smooth? Instead if was grainy or gritty? The worst! Heres a few steps you should take for perfectly creamy cheese sauce.

  • Shred your own cheese. For this recipe, grating your own cheese will give you the smoothest results.
  • Start with a white sauce. A white sauce is made with butter or olive oil stirred with flour and milk. It thickens once it cools, then you stir the cheese into it to make your cheese sauce.
  • Do NOT add the cheese to boiling sauce. When adding the cheese, remove the white sauce from the heat completely before adding the cheese. I usually move this to a different burner so it stops boiling. You dont want to add the cheese to the mixture if its boiling/bubbling. Doing so will cause the cheese to break down causing a gritty texture.
  • Add the cheese a little at a time. I usually do this 1/4 cup at a time, whisking in between until its all melted.

  • Lets start with the pasta!

    THE NOODLES

    I like to use elbow macaroni for this recipe, because its traditional and I love the way the little hole in the middle fills up with creamy cheese sauce. YUM!

    But you can use whatever type of pasta you like. Just be sure to boil it in lots of well-salted water , and undercook it slightly. Drain the noodles one minute before the directions on the box say. This will help your final product to be extra-creamy and delish!

    Toss the macaroni in a little bit of butter while its still hot, to keep it from sticking together while you prepare the other components.

    THE CHEESE

    • Extra-sharp Cheddar
    • Gruyere
    • Mozzarella

    To me, these 3 cheeses, along with the spices in the cream sauce, combine for the perfect balance. But you can feel free to sub in any of your favorites!

    I also think these would be great choices:

    • Fontina
    • American Cheese

    Just to name a few!

    Whatever you decide to use, do yourself a favor and grate it yourself. Dont buy the pre-shredded stuff! It contains additives that prevent it from melting smoothly. Its so much creamier when you take a few extra minutes to shred your own cheese. I run mine through the food processor and its done in seconds.

    THE CREAMY SAUCE

    Once your noodles are boiled and your cheese is shredded, its time to start the sauce.

    Once the flour and butter are combined, whisk in a little of the milk.

    Now you have whats called a bechamel sauce .
