Blue cheese and dessert wine is always a fantastic match. The saltiness you get from blue cheese is crying out for a sweeter wine. Gorgonzola Dolce is a milder style of blue cheese. Itself sweet and creamy but still with that noticeable tang coming from its blue veins. An ideal pairing then for a dessert wine from England. Englands wines have become known for their high acidity and this is no different when it comes to dessert wines. In comparison to Sauternes, Takaji and Germanys Eiswein, English dessert wines are less cloying and more refreshing a result of that natural high acidity. Hattingley Valley Entice is my wine of choice with Gorgonzola Dolce. This milder style of blue works fantastically well with this refreshing English sweet wine, neither overpowering one another. Add a sliced peach and you have a delicious summers day lunch. If dessert wine isnt for you, pair Prosecco with Gorgonzola Dolce.”

PDO Gorgonzola is a cheese made from cows milk with a raw and soft paste.
Gorgonzola is probably one of the most famous Italian cheeses in the world, even though it was first produced in the valleys in Lombardy. Mild Gorgonzola cheese is the most beloved Gorgonzola type. It is creamy and, although it is called mild, it has a rather intense flavour it tastes exceptional spread on a slice of bread or in many recipes: pasta or risotto dishes, sauces for meat or fillings for many different quiches. Its melt-in-the-mouth texture is truly one of a kind.
The Carozzi Gorgonzola cheese is produced by experts with the utmost care, in order to obtain an ideal marbling which isnot too overwhelming to the palate.
Gorgonzola cheese ages for over two months it is the last processing step which takes place in the Val Taleggio valley.

What Is Gorgonzola Cheese
Gorgonzola has a soft, crumbly texture and a flavor that ranges from buttery and creamy to nutty and sharp, depending on how long it’s aged. Its color ranges from white to pale yellow, and it is marbled with the blue to blue-green mold that is its unique signature. Because the milk isn’t heated, and the cheese itself isn’t pressed, gorgonzola retains plenty of moisture.
Gorgonzola is considered to be an ancient cheese, with a tradition that dates back to the 11th century and perhaps even further. It gets its name from the town of Gorgonzola, located near Milan, in the Lombardy region of Italy, an area known for its numerous natural caves which are said to have been used traditionally in aging the local cheese.
Gorgonzola made in the E.U. has protected DOP status, although in other parts of the world, including the United States and Australia, the word gorgonzola is considered generic.
How Gorgonzola Is Made
To make gorgonzola cheese, whole pasteurized cow’s milk is combined with penicillium roqueforti cultures, enzymes, rennet and salt. The milk begins to curdle immediately, and within 20 minutes, the curds are gently cut into small pieces. The whey is drained, and the curds are transferred into round molds. The wheels are turns several times, then rested overnight before being salted. At this point, each wheel weighs about 40 pounds, but they’ll get lighter during the aging process. A finished gorgonzola wheel will weigh about 26 pounds.
The salted wheels are held in a warm room for 3 to 7 days, after which they are transferred to a cold room, around 49 F and up to 95 percent humidity, where each wheel is punctured numerous times with thin skewers, which allows oxygen to circulate throughout the cheese, helping to produce its characteristic blue veins. A saltwater solution is applied to the cheese, which is what produces the rind.
Finally, the cheese is aged for 2 to 6 months. Less aging is required to produce the mild, creamy version, while the more pungent, crumbly one is aged longer.

How Does It Taste Like
There are two types of Gorgonzola cheese. The Gorgonzola creamy is soft and creamy that can be beautifully melted in sauces. This is the type of cheese more suited for cooking. The other type is Piccante which has a sharper flavor.
Gorgonzola has a strong and pungent flavor. It also has a sweet aftertaste. The texture is rich and creamy. I usually enjoy it with dried fruits.
Aside from being a dessert cheese, Gorgonzola can be used on freshly cooked pasta. It can also be folded into risotto, or in dressings and salads.
