Daiya touts that many of their cheese products have been vetted by the American Diabetes Association . However, there is no explanation given on that page for what this actually means.
Elsewhere, I found a video where a Daiya rep was interviewed for Diabetes Health TV at the American Association of Diabetes Educators conference.
Again, however, there is no explanation given as to why Daiya is actually better for diabetics. He just explains how its completely dairy free and why its so delicious.
Personally, I dont see any reason why Daiya would be better than normal cheese for diabetics. As covered above, Daiya has almost as much saturated fat as real cheese. Daiya also has more total carbs .
Daiya cheese is probably not the absolute worst food for diabeticsit doesnt contain any added sugar, after all. But saturated fat is thought to be a cause of insulin resistance. And Daiya contains almost as much saturated fat as real cheese.
So, I would not say that Daiya is particularly good for diabetics. Its a processed food that could contribute to weight gain, higher sodium intake, and higher saturated fat intake if youre not careful.
Based on everything Ive studied about nutrition over the years, Id say that real cheese and Daiya cheese are both pretty bad choices for diabetics.

This is the straight out truth about products that are being sold as healthier alternatives when they cause worse health problems in the long run. Before responding ask yourself if you have been engineered to eat natural food or a SCIENCE PROJECT made in a lab?
I am all for veganism, really, I love cashew cheese, just do not sell me crap and tell me it is good for me simply because it is vegan. My standards are higher than that and so should be yours.

What Happens To Vegan Cheese When You Cook It
When you heat dairy cheese, the solid milk fats begin to liquefy, which results in that ooey-gooey texture you get on top of pizza or in mozzarella sticks.
To see how vegan cheese reacts to heat, I cooked up two grilled cheeses — one with Daiya and one with Sargento cheddar. Using the same skillet, the same type of bread and the same burner at the same heat on my stovetop, I melted two slices of Daiya between two pieces of bread and immediately followed up with two slices of Sargento.
I have to say I was pleasantly surprised. I’d never had vegan cheese before and was kind of expecting it to retain its shape and lack the gooey-ness of a traditional grilled cheese. It took slightly longer to melt than the regular cheese: I cooked the Daiya sandwich for about 6 minutes, versus about 4 minutes for the Sargento.
The end results were surprisingly similar — based on appearance and texture alone, I might not have noticed that the Daiya sandwich was vegan if someone else made it for me. As for the taste, the Sargento sandwich was sharper and more flavorful than its vegan counterpart.
I can’t speak for all types of vegan cheese, but based on my Daiya experiment, vegan cheese comes close to the impressive similarities between lab-grown meat and the real deal.
