In other words, this isn’t that stiff, tough ball of vacuum-sealed supermarket mozzarella, and it’s definitely not the low-moisture cooking mozzarella that you throw on pizzas or lasagnas. It’s mozzarella for savoring on its own, perhaps with a sprinkle of sea salt, or torn up for a simple Caprese salad. This mozzarella? You buy it when it’s still warm, and it never goes into the fridge.

    But what about those of us who don’t have the benefit of living or working close to a great fresh-mozzarella source? Is there a way that everyone out there can get their hands on the good stuff? A quick Google search for homemade mozzarella will give you an emphatic yes: There are countless recipes for fresh mozzarella and dozens of different DIY kits for sale, all of which promise better-than-store-bought results.     Pour the milk into a large stockpot or I like to use my dutch oven.

    Remember to use raw milk or you can use normal pasteurized whole milk, but NOT ultra-pasteurized. Ultra-pasteurized wont work properly and wont produce a good curd.

    I find I get the best results with raw milk. But that can be a little more difficult to find for us here in the States. If in the States try places like Sprouts, Natural Grocers, Whole Foods, etc.

    Set the heat in between medium-low and medium. We dont want to heat the milk up too quickly.

    Gently keep stirring the milk so it heats evenly and reaches right around 115 F/46 C.

    A thermometer really comes in handy for this. But if you dont have one it should feel like hot bathwater.

    Once the milk gets to that temp, turn off the heat, and add in the vinegar. Stir in the vinegar for about 30 seconds so it evenly mixes in with the milk. It will start to curdle almost immediately.

    Add a lid to the pot and allow it to sit undisturbed for about 5 minutes.

    NOTE: Classic cheesemaking uses ingredients like citric acid and rennet. But white distilled vinegar works too! It turns out a little different but still amazing.

    If you would like to go the more classic route you can pick up a cheesemaking kit that has everything you need minus the dairy of course.

    Drain Curds & Release Whey

    When the curd is ready, it can be ladled into a colander lined with Butter Muslin to drain. When all of the curd has been transferred, simply fold the layers of cloth over the draining curd and place it in a cool area or in the fridge.

    Drain for 1-2 hours for a traditional Mascarpone texture. Or, drain for up to 12 hours in a refrigerator for a whipped Cream Cheese texture.

    Warm The Mixture To 105 Degrees

    If your milk has curdled into a solid piece, use a long knife and cut the curd into 1-inch squares. The curd will float on top of the whey. Turn on the burner of your stove to medium heat. Begin to stir the mixture slowly and gently until the temperature comes up to 105 degrees. Remove from the heat and stir for an additional five minutes.

    Set And Curdle The Milk

    Add the rennet mixture to the warm milk and stir a few times slowly to mix well. Then cover the pot and set aside for 5 minutes.

    Tip: If you can, stir in an up and down motion rather than swirling. The quicker the milk becomes motionless after the rennet is added and mixed in, the better as otherwise, it may not set correctly if its still whirling away. I aim for 15 seconds max of mixing.

    After about 5 minutes, the milk should have set and be a consistency similar to a thick yogurt or pudding that you can slice through. If you can cut through it nicely in a straight line, you can move to the next step. If not, set aside for another 5 minutes and try again.

    Vegetable Or Animal Rennet

    Rennet is an enzyme used in making most cheese. Vegetable rennet is obtained from special types of mold or plants. Animal rennet comes from the stomachs of calves, lambs or baby goats.     A Few Things Of Note When Choosing Milk:

    If you have access to a reputable dairy that has raw milk, I would recommend this over any other option. Its going to give you a fantastic cheese.

    If raw milk isnt an option, then be sure you purchase milk that is not homogenized or ultra-pasteurized.

    Ultra-pasteurized milk is processed at a much higher temperature than standard pasteurization. The proteins in the milk end up broken down and it makes it nearly impossible to make a good curd.

    And of course, the fresher the milk, the better the cheese.

    Rennet can easily be found in most health food stores or homebrew supply stores, or you can purchase it online.

    I prefer liquid rennet when making cheese because its one less step I need to worry about.

    You can use rennet tablets, which is what I had on hand, but youll need to crush the tablet well and mix it in water until its dissolved. Its not difficult, it just adds another step to the process, and Im all about easy and quick in the kitchen.

    And again, powdered citric acid is quite easy to get your hands on. Most homebrew supply stores carry it, or you can purchase it online if you cant source it locally.

    Its best to create a grid pattern through the curds, first slicing one way, then the other. Make sure to cut deep into the cuts, by touching the bottom of the pot.

    Then, heat the curds over medium heat and stir very slowly but continuously. Try not to break the curds too much. They only need to reach 41ºC/106ºF, so they will warm up quite quickly .

    Remove the pot from the heat as soon as the required temperature is reached. Continue to stir, slowly, for another 5 minutes. During this time, the curds will begin to separate from the whey.

    NOTE: If you would like to add salt, you can add cheese salt, flaky sea salt, or kosher salt right when you are heating and stretching the cheese. Use 1/8th to 1/4th of a teaspoon.
