I feel like even these noodles and the box are probably made out of salt the way Catherine Zeta-Jones character made trinkets out of cocaine in Traffic. Its silky and smooth and the noodles are al dente but what reasonable human would prefer this salt bomb when there are so many options on the market?

This mac is like the Seven-minute absconvo from Something About Mary. The competition is doing three-cheese? Well do four!

But the four cheeses are the wrong ones. Its too funky and just generally un-harmonious. Its a nice concept but its not working in part because mac & cheese really only needs one cheese: sharp cheddar. Anyway, this is odd on the palate, its confusing and muddled and the gorgonzola notes push it in the wrong direction.

The Bottom Line:

A mildly good idea with a specifically bad execution.

How Do I Make This Recipe

The first step to make this protein mac and cheese is to cook c dry elbownoodles, according to box directions, add 1 teaspoon salt to pasta water.

While the pasta is cooking, you can start preparing the cheese sauce. Add ¼ block of silkentofu, ¼ c milk, and ¼ teaspoon garlicsalt to a blender as the first step to prep the sauce. Blend until smooth and silky. Set sauce aside until noodles are done.

Once the pasta is al dente, drain excess pasta water. Return the pasta to cooking pot. Pour tofu and milk mixture over the pasta. Then add 1 teaspoon butter and c cheddarcheese over the warm pasta. Stir it all together with a fork until the pasta is completely coated with the tofu mixture and cheese is melted and smooth. Serve your protein mac and cheese immediately.

  • reduced fat shredded cheddar cheese I used organic Irish cheddar cheese and shredded it myself, but you can use whatever you prefer including reduced fat cheddar cheese.

Another really interesting idea with sloppy execution. I often dice up jalapenos or serranos in my boxed mac. But powder-fying them takes away everything about the peppers that is green and bright except the color itself, which is the one part that you dont want.

Anyway, Im happy to see rotini getting some shine and they stay al dente, but the spice and cheese and color dont quite work. Copy this with a better mac and real jalapenos and youre in for a treat.

How To Make This Protein Mac And Cheese:

  • Boil the pasta according to package until al dente. Pay extra close attention when using chickpea pastas as they can very easily be overcooked.
  • Drain the pasta once cooked and set aside.
  • In pasta pot, or another sauce pan, whisk together the Greek yogurt and milk over medium heat until smooth. Add in one cup of shredded cheese and stir, allowing to melt. Add another half cup and melt. Stir in seasonings, salt and pepper.
  • Add the pasta to the cheese sauce and toss to coat. You can serve it just like this or continue to prep for baking.
  • If baking, spray a 8×8 inch or 9×9 inch baking pan with oil. Pour the mac and cheese into the dish and spread to one even layer.
  • Sprinkle with remaining shredded cheese and breadcrumbs id desired.
  • Bake for 15-20 minutes or until cheese on top is melted and browning. Serve after cooling for about 10 minutes.
