    Yes! Almond flour is gluten free. Its also low-carb and keto-friendly. Essentially, its just made from grinding whole almonds into a flour consistency.

    When buying almond flour there are two main options: blanched or unblanched.

    Blanched almond flour is slightly lighter and fluffier. That makes it a good option when youre making delicate pastries like macaroons.

    However for most recipes, I recommend using unblanched almond flour. Its less processed. Therefore, it retains more of the minerals and fiber from the almonds.

    So, to make these pancakes as healthy as possible, I recommend usingan unblanched almond flour in this recipe. As a benefit, youll get more fiber, calcium, iron, and vitamin E!

    Cheese That Is Not Labeled Gluten

    If the packaging does not say gluten-free, then you will need to carefully read the ingredients on the label before purchasing. As a rule, cheese with fewer ingredients has a better chance of being gluten-free. A natural cheese, like Swiss or Jack, may contain only three ingredients: milk, salt, and enzymes, which means that it contains no gluten.

    Processed cheeses, on the other hand, like American cheese usually include several different kinds of natural cheeses, like Colby, Cheddar or Jack, and stabilizing emulsifiers, as well as butter, milk, milk protein concentrate, and whey powder. Processed cheeses might also use artificial colors and preservatives, which may contain gluten. Artificial color and stabilizers or thickeners often contain trace amounts of gluten, so should be avoided. Manufacturers are getting better at clearly identifying wheat based products, so you may even see wheat listed on the ingredients, making this unsuitable for a gluten-free diet.

    This is such a great question! And of course Im not laughing! Sometimes the easiest things to make in the kitchen require a bit of know-how that no one ever talks about. Well, Im talking!

    Heres how to make a great gluten-free grilled cheese.

    Bread and butter. The foundation of grilled cheese. Since Catherine uses Udis bread, that what I used. However, you can use whatever bread you love.

    Butter each slice. You dont want too much butter nor do you want just a little. While Ive never measured it, Im guessing you want about one teaspoon per slice of Udis. And be sure to butter right up to the crust.

    Mmm! Bread and butter!

    Next grate some cheddar. About one ounce is perfect for Udis slices.

    Place one piece of bread in the pan, butter side down, and top with the cheese. Dont worry if some cheese gets into the pan.

    • As discussed, roll and shape the pastry right after you make it. It is at its flexibility peak, like me after a few wines.
    • Use your rolling pin the press down on the lump of pastry to secure it and flatten it before rolling. I find this helps prevents cracks.
    • Patch up as cracks with your fingers as they appear. The warmth from your hands will help bring it together.
    • Make sure your paper and rolling pin are well floured to prevent sticking. Nothing worse than having to scrape the whole thing up and start again.
    • Dont expect it to have as much flexibility as glutenous pastry, or even pastry with xanthan gum. It needs a little more TLC, but the gum free result is worth it.
    • If you plan to do lattice work, crimped edges or any fancy pastry work, use the starchy option. The starch free version is trickier to work with and wont hold up to intricate stuff.

    To tell the difference, the cheese thats repackaged at local stores usually is wrapped in basic plastic wrap thats held closed by a stick-on label, while cheese thats packaged at the manufacturing facility usually has a more substantial shrink-wrap-style plastic cover, sometimes with the label printed directly on it. If in doubt, of course, you should ask.

    In addition, if you purchase cheese sliced at the deli counter, you risk that cheese being cross-contaminated in the slicing machine since a few sliced deli products contain gluten. Again, youre better off purchasing cheese that was pre-sliced and then packaged at the manufacturer, although some people have reported success by asking the store personnel to slice their cheese and other deli products in the early morning after the equipment has been cleaned and before its been used for gluten-containing deli products.
