I dont think Ill ever become a cheesemaker but I find it fascinating to learn to make things that I otherwise take for granted this its important to me that I learn a bit about how to make cheese. When it comes to ricotta, its super easy, limited equipment or special ingredients are needed and the results are very quickly achieved. Ricotta is a fantastic gateway drug into the world of making cheese.

Ingredients/ Equipment

  • 2 liters of skim milk whole milk will produce richer results
  • 0.5 teaspoon of salt
  • 3 tablespoons of distilled white vinegar
  • Colander

Instructions

  • Pour cold milk into a large pan. Stir in salt.
  • Place the milk on medium and gently raise the heat to a near-simmer. If you have a thermometer , remove at 180 degrees farenheight. If you do not, look for small bubbles to be forming . I stir regularly to prevent scorching and to ensure the heat is distributed through the pan.
  • Remove from heat and turn off burner.
  • Add vinegar and stir for 1 minute. You should see small curds starting to appear .
  • Cover pot and let rest for 2-3 hours
  • Line a colander with a few layers of cheesecloth. Pour the contents of the pot through it and let it drain. If you are impatient , gently shift the colander back and forth and more whey will drain on dry parts of the cloth that hasnt been clogged with tiny cheese particles. You could let it rest like this but I waited a total of 10-15 minutes after draining.
  • Thats it!

The amount each person needs can vary between 2 and 3 cups each day, according to USDA’s Dietary Guidelines for Americans recommendations choosemyplate.gov/eathealthy/dairy. For cheese, that looks like 1 ½ ounces of natural cheese, or 2 ounces of processed cheese to equal 1 cup.

The following cheeses are naturally lower in fat than others. And if you choose reduced-fat versions, you can save on calories and fat even more.

Here are 10 low-fat cheeses and how they compare to each other.

    Why Do People Buy Low

“Low-fat cheese allows people to modify their diet for better health but still enjoy delicious flavor and a favorite food,” says Isabel Maples, MEd, RDN, registered dietitian nutritionist and spokesperson for the Academy of Nutrition and Dietetics.

“Cheese is loved by itself, paired with other foods or in recipes. People might choose low-fat cheeses to lower their intake of fat, boost their intake of protein, or simply to cut calories.”

How To Eat Cheese To Lose Weight

“Because cheese is so concentrated , a little goes a long way and the calories can add up,” says Maples. “Instead, moderation in one’s portion size helps find that personal balance to meet individual weight management needs.”

    A few tips:

    • Pick a strong cheese. “A strong cheese can help add flavor without going overboard on calories ,” says Maples. “For instance, use a strong cheese vs a mild one. Example: sharp cheddar vs Colby on a sandwich or in a casserole. Or blue cheese vs American cheese on a salad.
    • Go with freshly grated cheese. “Grated cheese can stretch flavor further,” says Maples. “One ounce cheese = 14 cup grated. That’s why grated cheese is a good choicea little really goes a long way. “

Plus, freshly grated cheese is fluffier and may seem like you’re getting more than you actually are. Maples suggests using a Microplane or box grater.

“They can make grating easier and faster. Also, hard cheeses like parmesan grate easier at room temperature whereas a cheddar consistency grates easier when cold. “

    What Does It Taste Like

Fat-free cheeses will vary in flavor according to what type of cheese it is. For instance, fat-free ricotta is already a thing, as is fat-free mozzarella. But fat-free cheddar and Monterey jack will take some getting used to, in part because of their flavor , but also their mouthfeel. Fat-free cheeses are typically much more crumbly and harder they’re not altogether creamy.

It is worth noting that some manufacturers make up for the lack of flavor in fat-free cheese by adding additional salt. So it’s possible that you might find fat-free cheese to be a bit saltier than what you’re used to. This also has implications for those who are trying to manage their sodium intake .

    How Is Cheese Made

Cheese is made by combining milk with a starter culture of bacteria that digest the milk sugar, called lactose, and produce lactic acid. It’s this starter culture that helps determine the ultimate flavor of the cheese. Next, an enzyme called rennet is added which causes the milk to curdle, producing solid lumps called curds, leaving behind a protein-rich liquid called whey.

The whey is drained away and the remaining curds are cooked, cut up and pressed together, squeezing out still more whey, and aged for several weeks, up to 12 months or even longer. Salt and other flavorings are added, and the resulting product is cheese.

These days, the fat content of the cheese is controlled by manipulating the fat content of the milk that’s used to make it. Each cheese has its own particular fat content. In general, higher-fat cheeses are creamier, such as mascarpone, and lower fat cheeses are harder, such as Parmesan.

Fat-free cheese is cheese that is made using fat-free milk. But how is fat-free milk made?

    Can Eating Low

Easy Ricotta Cheesecake | Weight Watchers Ricotta Cheesecake #ricottacheesecake#weightwatchers

Of course, eating low-fat cheese alone won’t help you lose weight.

“Definitely, cheese can help one lose weightbut theoretically, any food can,” says Maples. “We tend to think of foods as ‘healthy’ or not, but there really are no good or bad foodsall foods can fit into a healthful diet. But while someone is losing weight, the combination of foods needs to be lower than that person normally consumes , so substituting low-fat cheese may do the trick to lower one’s calories.”

Adds Maples, “Protein foods are digested more slowly, so can be more physically satisfying. And as people cut calories, adding a protein food like low-fat cheese can help hold off hunger without adding too many calories.”

Low-fat cheese can also help you reduce saturated fat intake.

“If you like low-fat cheese and don’t taste a difference compared to regular cheese, it’s a good way to reduce saturated fat in your diet,” says Haber Brondo.

    What Is Low

“The fat in cheese is saturated fat a type of fat known to raise our cholesterol levels,” says Sammi Haber Brondo, MS, RD, CDN, registered dietitian nutritionist, and author of The Essential Vegetable Cookbook. “Limiting this type of fat and replacing it with healthy, unsaturated sources of fat can be a really healthy swap. Low-fat cheeses remove a lot of the saturated fat that’s naturally in them.”

However, the less fat, the less flavor.

“The caveat though: that fat is usually replaced with some kind of binder to make the texture of the cheese still work,” says Haber Brondo. “While the binder is usually totally safe and no big deal, these cheeses also might not taste as good.”

    How Is Fat

Milk is an emulsion of fat, protein and water. When milk comes out of the cow, its fat globules are large, and since they’re lighter than the water, they separate and float to the top in the form of cream. In the old days, that’s how a bottle of milk came. You could either shake it up to combine the cream with the milk, or just enjoy the cream from the top of the bottle.

These days, though, milk is homogenized, by forcing it through a fine-mesh filter, which breaks up the fat globules into smaller globules, so that they are distributed evenly instead of floating to the top.

Those fat globules can be removed altogether, using a centrifuge. This device spins the milk at high speed, causing the fat globules to separate entirely, leaving skim, or fat-free milk in one container, and all the fat in another. The fat can then be added back into the skim milk in the precise proportions necessary for making the various kinds of milk, including whole milk , 2 percent, 1 percent or skim milk .

To make fat-free cheese, then, it’s simply a matter of removing the fat from the milk and then using the fat-free milk to make the cheese.
