  • Add different seasonings: hot sauce, ground mustard, cayenne, paprika, and Italian seasoning are all popular additions, but feel free to get a little crazy and see whats in your spice cupboard that would give it that extra little something.
  • Salt and pepper to taste: I generally err on the side of less salty if possible, because its easy to add salt later. Taste once its cooked and adjust as necessary.
  • Add in vegetables: if you want them cooked, or slightly cooked, add during the cooking process with the pasta. Vegetables like spinach that will soften quickly can be stirred in with the cheese.
  • Add in cooked meats, like this Shredded Chicken or Instant Pot Chicken Taco meat or saute meat in the same pan before adding the liquid and pasta. This is a great way to add additional protein!

Is Mac And Cheese Unhealthy

Mac and cheese isnt necessarily unhealthy, but it depends on the recipe some recipes are worse than others. Macaroni and cheese does have a good amount of protein from all the milk and cheese. However, the calories can add up quickly, so its important to keep your portion size in check.

I also added spinach, which is another good source of fiber. Not to mention, spinach is packed with a variety of vitamins and minerals. The reduced fat cheese and skim milk help keep the calorie count down. A one-cup serving of this healthy mac and cheese comes in at just under 300 calories.

How To Make Macaroni And Cheese

This recipe has 3 main parts:

Lets start with the pasta!

THE NOODLES

I like to use elbow macaroni for this recipe, because its traditional and I love the way the little hole in the middle fills up with creamy cheese sauce. YUM!

But you can use whatever type of pasta you like. Just be sure to boil it in lots of well-salted water , and undercook it slightly. Drain the noodles one minute before the directions on the box say. This will help your final product to be extra-creamy and delish!

Toss the macaroni in a little bit of butter while its still hot, to keep it from sticking together while you prepare the other components.

THE CHEESE

  • Extra-sharp Cheddar

To me, these 3 cheeses, along with the spices in the cream sauce, combine for the perfect balance. But you can feel free to sub in any of your favorites!

I also think these would be great choices:

  • American Cheese

Just to name a few!

Whatever you decide to use, do yourself a favor and grate it yourself. Dont buy the pre-shredded stuff! It contains additives that prevent it from melting smoothly. Its so much creamier when you take a few extra minutes to shred your own cheese. I run mine through the food processor and its done in seconds.

THE CREAMY SAUCE

Once your noodles are boiled and your cheese is shredded, its time to start the sauce.

Begin by making a roux . This sounds fancy but its just melted butter mixed with flour. It will thicken the sauce, give it body, and make it so velvety.

How To Make Homemade Macaroni And Cheese:

  • Boil the noodles. Bring a large pot of water to a boil. Salt the water really well. Add the noodles and cook until just before al dente. The noodles need to have some bite so they dont turn to mush while baking in the sauce later.
  • Make the cheese sauce. The cheese sauce is made by mixing flour and seasonings into melted butter. Whisk in some milk and cook until nice and thick. Once removed from the heat, add in the cheese and cream cheese.
  • Bake. This helps the cheese bake into the macaroni noodles. A couple minutes under the broiler gives a nice crisp cheese topping.

Can You Make Baked Mac And Cheese Ahead Of Time

Instant Pot Mac and Cheese

Yes, you could make this macaroni and cheese recipe a day or two before you plan to serve it, but the pasta may seem dry once it’s reheated. As it sits, the noodles soak up moisture from the cheese mixture, and after sitting for a while, it may not deliver on the creamy satisfaction you’re wanting.

We recommend making it and serving it fresh from the oven. If you have leftovers, you can reheat them on the stovetop with a little cream or butter to add back that lusciousness.

How To Measure Pasta For This Recipe

Sometimes a reader or two has had an issue with how much pasta this recipe needs. This recipe is written by volume and sometimes people think that since a cup is 8 ounces that they can simply use 12-16 ounces of pasta or go by the weight of the dry pasta written on the box.

Youll end up with problems if you do this. Please follow the volume instructions and measure your pasta dry in a measuring cup meant for dry items . Small pastas like ditalini or little wagon wheels can go up to about 2 cups and be fine in the recipe, and large ones like bow tie or cellentani can as well. If you will stick to elbow pasta until you get the hang of things youll be better off.

Ive made this recipe with every pasta shape on the market and if you will measure in cups, your recipe will be just right.

How To Avoid Grainy Cheese Sauce:

Southern Baked Macaroni and Cheese: Easy Recipe (Fast Bake)
    • The type of cheddar makes a difference. High quality aged cheddar cheese will give you a stronger taste and smoother texture. More mild and inexpensive cheddar cheeses will have less flavor and almost a grittier taste.
    • Use fresh grated cheese. Pre-shredded store-bought cheese will not melt the same as freshly grated cheese, and grating the cheese helps it melt smoothly and evenly in the sauce.
    • Bring the cheese to room temperature. I like to grate the cheese very first, before moving forward with the recipe. That allows it to sit at room temperature while I prepare the white sauce.
    • Use low heat. In order for the cheese to melt properly and smoothly we want it to have gradual changes in temperature . When its time to add the cheese to the white sauce, remove the sauce from heat and let it cool for a few minutes. It only needs to be warm enough to melt the cheese.
    • Dont over-stirthe sauce once the cheese has melted. Add the noodles and quickly assemble in pan and put into the oven.

    • Pasta Shapes to mimic the classic recipe, I normally use elbow pasta. But any short-cut pasta works just as well! Medium shells, penne, rotini, etc. Just note that different pastas will have slightly different cook times, so use the recipe times as an approximate.
    • Cooking Liquids like I mentioned above, I prefer the taste and consistency of chicken broth, evaporated milk and heavy cream. However, feel free to test out different proportions of those liquids, or try out different liquids. Just note that I can only vouch for this recipe as written.
    • Cheeses As with most mac and cheese recipes, the types of cheese called for are not the only ones you can use. Monterey Jack, Pepper Jack, Colby, Gruyere, sharp cheddar any and all!
    • Seasonings feel free to add in additional seasonings that you love in your mac and cheese.

How To Make Macaroni Salad From Scratch

Sometimes you just dont mess around with the classics. While some might look at this macaroni salad recipe and think its too simple thats exactly why its a time-proven favorite.

While Ive always been a fan of potato salad its taken me years to come around to macaroni salad. The reason being is that every time I tried one, it was never a good one. They were either too dry, too plain, or too heavily loaded with a goopy, flavorless mayo dressing that coated the macaroni like oil on a dipstick and likely came from a pre-packaged box from the deli counteryes! That stuff usually comes from a box!

Theres nothing worse than that acrid taste of fake mayo macaroni salad. You know. Youve been there.

But, this old-fashioned macaroni salad from scratch is everything those others were not. First off, its homemadetoss the box! Its simple but well-seasoned. Its dressed just right with a tangy but light mayo dressing. And the pasta is neither clumpy nor starchy, but smooth and satisfying with every bite.

I really do love this salad but Im going to defer to my husband on this one, who as a self-proclaimed macaroni salad connoisseur did attest, Honey, this is still the best macaroni salad Ive had. Ever.

    • Cream Cheese: I use this to help make the cheese sauce a bit creamier and a little more stable, not as likely to break when reheated and the macaroni and cheese reheats nicer, its not as greasy.
    • Seasoning: garlic powder, onion powder, ground mustard, salt and pepper.
    • Elbow Noodles: I typically use small elbow noodles, but you can use large also.

    Italian Pasta Salad Dressing

Crock Pot Macaroni and Cheese Recipe

I use a bottled Italian dressing to make this dish quick and simple, but if you have the ingredients on hand, you can create your own Italian dressing, which is very delicious. Prepare ahead of time. This spaghetti salad dish is particularly delicious since it becomes better as it sits and the flavors combine! Its the perfect side dish to prepare ahead of time because it just takes around 20 minutes to put together. What could be more satisfying than that?

Once chilled, the acids in the dressing work to help break down the starches in the pasta and proteins in the vegetables, resulting in a more flavorful and tender pasta salad . To make Homemade Italian Dressing, mix the ingredients listed below:

Can You Freeze Baked Mac And Cheese

If you want to get ahead for a busy weeknight, you can make a dish of this mac and cheese in advance. But don’t bake it. Instead, follow all the steps, assemble it, and cook it completely. Then cover it with aluminum foil, and put it in the freezer.

When you’re ready to bake it, thaw it in the fridge for 24 hours, then bake it. You may need to add 5 to 10 minutes of cook time for the casserole to be completely done. But just monitor it for a bubbly, browning top. That’ll be your cue it’s ready to come out of the oven.

    • Preheat oven to 400°F. Prepare pasta according to package directions.

    • Step 2

Microwave milk at HIGH for 1 ½ minutes. Melt butter in a large skillet or Dutch oven over medium-low heat whisk in flour until smooth. Cook, whisking constantly, 1 minute. Gradually whisk in warm milk, and cook, whisking constantly, 5 minutes or until thickened.

    • Step 3

Whisk in salt, black pepper, 1 cup shredded cheese, and, if desired, red pepper until smooth stir in hot cooked pasta. Spoon pasta mixture into a lightly greased 2-qt. baking dish prepped with cooking spray top with remaining cheese. Bake at 400°F for 20 minutes or until golden and bubbly.

How Can I Store The Homemade Mac & Cheese

If you have any leftovers, you can put them in a freezer-safe storage container and freeze them for up to three months. However, take into consideration that, most likely, this dish wont have the same taste defrosted as fresh from the oven.

On the other hand, you can always just store the mac and cheese in the fridge for up to 5 days. I strongly advise you to go for the second way of storing it. Not to mention that if you adjust the ingredients quantities, you can prepare the exact amount of mac and cheese you need for one meal.

    Ingredients For Macaroni Salad

    • Elbow Macaroni Elbow macaroni is the most classic choice for macaroni salad. While you can get away with swapping in rotini or penne, nothing compares to the creamy dressing getting stuck in tiny crooks of the macaroni!
    • Red Bell Peppers We like to use red bell peppers for their subtle sweetness. If you cant get your hands on them, any other color will do.
    • Red Onion Red onion works best for its pop of color and strong flavor.
    • Celery Fresh celery adds just the right amount of crunch and texture.
    • Hardboiled Eggs You can snag premade hard-boiled eggs or whip up your own using my guide on perfect-boiled eggs.

Pro Tip: In this recipe, we prefer to use bell peppers, red onion, and celery as the veggies of choice, but feel free to swap those out for any other crunchy veggies you like best .

    Macaroni And Cheese Recipe

If youve never made macaroni and cheese before, it can seem a bit overwhelming. But dont worry, with these ingredients, Ill show you how simple it is!

Begin by spending a few minutes grating the cheeses. Bagged cheese is coated in additional ingredients that prevent it from melting nicely. Our favorites are cheddar and gruyere. You can be very creative with your cheese choices. Mozzarella, Gouda, Swiss, Colby, whatever you know you like!

It starts with a traditional roux which is melted butter and flour that thickens the sauce. This is where using Wondra flour makes a big difference. It is totally fool-proof and will make any sauce lump free. In a large pot over medium to low heat, melt the butter and then add the flour, mixing or whisking until it is creamy.

After the roux has cooked for 60 seconds, add the milk and whisk the mixture really well. Hint: Do not let this mixture boil! If you do you may end up with a mac and cheese sauce that is too thick. Be sure to stir in constantly and cook over medium to low heat.

Tips For The Best Baked Mac And Cheese

    • Shred your own cheese. I know its so much easier to buy pre-shredded cheese, but its actually coated in an anti-caking substance which messes with how nicely it melts.
    • Do not overcook the pasta. In fact, its best to slightly undercook the pasta by about a minute. Also, allow the pasta to cool slightly before mixing with the bubbly cheese sauce.
    • Time permitting, allow the milk and half-and-half to come to room temperature before very slowly whisking into the roux.
    • Use your favorite cheese. I used classics like mozzarella, cheddar, parmesan, and Gruyere. Pepper Jack cheese, crumbled feta, or even dollops of goat cheese would taste fantastic.
    • Macaroni and cheese is traditionally made with elbow macaroni, but any short pasta will work.
