What Type Of Cheese To Add Peppers To

The style of cheese chosen for this month is also a big part of my game plan. What I am looking for is an early aging cheese and that means a moister cheese. I added a cold water wash to the curds to increase this curd moisture, rather than to dry it out. The removal of whey/lactose before the addition of cold water and the drop in temperature associated, slows the acid production so that the cheese will be slightly sweeter when ready to mold.

Also I choose to use a full fat milk because of the effect that the fat has on melding the pepper/dairy flavors and subduing the heat of the peppers.

Therefore the following guideline will be for a rich full-fat cheese with higher moisture and a slightly sweet finish that will blend well with the flavors of both my smoked jalapenos and my freshly toasted black peppers.

Most cheeses contain small amounts of garlic that can be left out on the ingredients list on the packaging.

How Monterey Jack Is Made

Pepper Jack Cheese

Pasteurized cow’s milk is gently heated in the cheesemaking vat, then cultures are added to the milk. Goat’s milk may also be used. After the milk is cultured, rennet is added to coagulate it. The curds are cut into small pieces, then gently stirred and heated in the vat to remove whey. The whey is drained off, and then the curds are mixed with salt, pressed into cheese forms lined with cheesecloth, and pressed to expel additional whey. The wheels or blocks are flipped and pressed again.

For high-moisture Jack, the blocks are vacuum sealed in plastic and allowed to age for anywhere from six weeks to four months. For traditional Jack, round wheels are allowed to dry for a few days to allow the rind to begin to form. The exterior of the cheese is then oiled and allowed to age for up to 10 months or, for Dry Jack, even longer.

Form The Curd Salt And Add The Pepper

Transfer the dry curd to the colander so that it drains for a few minutes as you stir. After draining, add salt while the curds are in the colander in two to three doses and then stir properly until its well absorbed by the curd. Add the pepper directly if youre making one single cheese, stir and transfer to the molds that are cloth lined. If youre making two cheeses, separate into the molds first then add the pepper into the cheese.

A History Of Adding Peppers To Cheese

Adding pepper to cheese is not new, it has been done for many years, especially in the south of Italy.

Over the years I have had plenty of ‘Picante’ Pecorino with those fiery little red peppers they use as well as in the younger Cacciocavallo.

From further north, the Pecorino Romano with the whole ‘Pepe Nero’ as well as in the Pecorino Sardo from Sardinia.

You could also serve cubes or slices as part of a cheese platter. Try it with melons, grapes, pickled vegetables, and olives for contrast and great texture. Slice it into sandwiches with bologna for a picnic.

Try it in mac and cheese with fresh slices of jalapeño to create a spicy side dish or comforting meal. Stuff it into a chicken breast and wrap it with bacon for a flavor explosion. What Is Monterey Jack

This mild, meltable cheese originated when Franciscan monks brought their recipe for queso del pais, a fresh, white cheese, to California’s Monterey County in the 18th century. Commercial production of Monterey Jack began in the 1850s and is often attributed to Scottish immigrant David Jacks, who marketed the product as “Jack’s Cheese.” By the 1880s, Jacks had 14 dairy farms across California producing the cheese. Today, Wisconsin is also a significant producer of this style of cheese.

At the start of World War I, imported Italian cheeses were no longer available in the United States. In response, cheese purveyor D.F. DiBernardi developed the recipe for Dry Jack to act as a substitute for hard, flavorful grating cheeses such as Parmesan and Grana Padano.

Put the 2 gallons of milk into a large stainless steel pot. Over medium heat, bring the milk up to a temperature of 90°F.

Sprinkle the mesophilic culture over the top of the milk and let it rehydrate for 2-3 minutes.

After its rehydrated, stir the culture in with a large stainless steel or wooden spoon using and up and down motion.

Once its stirred in, cover the pot and let it sit undisturbed for 30-45 minutes.

You need to keep the milk at 90°F during this time. I usually leave the pot in the burner but turn the burner off.

hen I carefully cover the pot in an old beach towel to insulate and hold in the heat.

Check the temperature a few times to make sure its holding steady.

During this time the milk is culturing or fermenting or ripening depending on which book you read.

What that means is that the culture we added to the milk is growing and reproducing. This is what gives the cheese its flavor.

After this ripening period, stir the milk to make sure that any cream that has separated is mixed back in well. You will only have to do that if you are using non-homogenized milk.

Bring Cheese To The Next Level With Peppers

This reciper focuses on something special as we look at the why and how of bringing your cheese making to another level. It is the marriage of another flavor group to a base cheese and what is involved in being successful. Your goal is to make something bigger than either of the two taken separately. In other words we will focus on the synergy of a specific cheese with a special flavor partner. It’s a combo that takes a bit of thought.

Of course you have probably seen this done on a good cheese plate with the accompaniment of other tasty things like honey, figs nuts, mustards, fruit, etc. with the cheese but good as they may be, the combinations are singular and momentary.

With something like a pepper or other addition to the cheese at the time of molding then remaining throughout the aging process, the flavors tend to work their way through the cheese and change over time.

Yes, this does require a bit of thought and even experimentations on what we put together and how much we use in our additions as well as the base cheese we select to add it to, but when it is right, it is so very right!.

    Is Vegan Cheese Sustainable

    Making Triple Pepper Jack Cheese

Vegan cheese is simply more sustainable than dairy cheese because plant-based foods require far less land and water than dairy. The only greenhouse gas emissions for vegan cheese come during processing and transportation, not from the food product itself, as in the case of cow and goat milk.

According to a 2021 life cycle assessment for the European-based vegan brand Violife, their vegan cheese reduces American consumers climate impact by around 50% and uses less than 30% of the land required to cultivate dairy cheese.

Still, vegan cheese does have a carbon footprint. Nuts are one of the most resource-intensive foods vegans consume.

Soy, the other main ingredient in vegan cheese, is also associated heavily with the deforestation of the Amazonalthough the vast majority of soy goes to livestock feed, not to humans.

For plant-based eaters concerned with animal welfare, non-dairy cheese clearly takes the cake. No animals are confined or killed, and per unit of protein produced, the water and land usage is far more productive than it is for animal proteins.

Form Curd Salt & Add Pepper

The dry curds can now be transferred to a colander or draining pan where they should be allowed to drain for a few minutes with a gentle stirring.

Add Salt while still in the draining colander as soon as the curds have drained well. Your final cheese weight should be about 2.5-2.75lbs. Adding 2.5% salt to this would be just about 1 oz. of salt. Add this in 2-3 doses and stir in until it absorbed by the curd.

If making one single cheese, you can add the pepper directly to the drained and salted curds and stir well before transferring to the cloth lined molds.

Here I am making two cheeses with different peppers , so I drain the curds first and then add to the molds in layers for each separate form. I mix the additions in well as I go. In either case make sure the additions are mixed evenly into the cheese.
