  • Soak cashew in cool water for 2 3 hours, drain and rinse .
  • For a quick method of soaking, let cashews sit in hot water for 5 minutes, drain, rinse and continue with recipe.
  • Why soak cashews? Soaking will help soften the cashews by plumping them up with water and helps the cashews blend easily.     For this first round I went with two that I didnt even know existed until the other day at Whole Foods. The first is Annies Homegrown organic and gluten free elbows with a creamy sauce.

    Ingredients required: non-dairy milk and optional non-dairy buttery spread

    Cook time: Pasta was supposed to cook in 8-10 minutes but really took closer to 12.

    Texture & Consistency of Pasta: chewy and slimy and not what I would describe as elbows.

    This almond ricotta could not be easier to make. Ive seen quite a few almond ricotta recipes with incredibly complicated and time-consuming instructions like soaking, straining, letting it sit for 8-hours. This recipe is much more simple and a lot quicker. All you need is a food processor or blender, five ingredients, and 10 minutes.

    To make the almond ricotta all you need is slivered blanched almonds, water, lemon juice, nutritional yeast and sea salt. I like buying the slivered blanched almonds from Trader Joes or Whole Foods bulk bins. I find these to be the best deals. The nutritional yeast is optional but it adds a little cheesiness and a boost of protein and B vitamins. The lemon juice and salt are necessary for that salty ricotta-like tang. The ingredients are blended together in a food processor or high-speed blender and thats it! It can get much easier than that.

    To make an herb version, after the ricotta is blended stir in 2 teaspoons dried basil, 1 teaspoon dried oregano, 1/2 teaspoon garlic powder.

    Soak the blanched almonds overnight. Or for at least 6 hours.

    Chefs note: If youre in a rush, you can use un-soaked almonds and use more water when blending. Though it wont blend quite as smooth.

    Add the almonds and the rest of the ingredients to a food processor. Blend till smooth.

    Chefs note: For quick almond ricotta then only add half of the water, to begin with, and increase the amount of water, if/as needed. This will stop you from having to drain the cheese at all.

    Youll probably need to stop and scrape down the sides of the jug a few times.

    Taste and adjust any of the seasonings as needed. I.e., more nutritional yeast for cheesiness, acidity with either lemon juice or ACV, more flavor with garlic/onion powder, etc.

    Optionally, place the mixture in a cheesecloth or nut milk bag and let it drain for between 2-3 hours . You could also allow it to chill in the fridge to further set/harden, or use it immediately.
