Ill be using old yellow cheddar cheese, and an Italian cheese blend that contains mozzarella, asiago and garlic brick. You can pretty much use whatever cheeses you want! However, I would recommend you have mozzarella and old yellow cheddar cheese at minimum.     First of all, if you have never been to Shake Shack, get in the car and start driving. It is my FAVORITE place to eat fast food. Better than In N Out. Better than Five Guys. Shake Shack has the best burgers, the best shakes, the best fries

    Anyway, of course I had to try out their recipe. I made it and then ordered 3 large cheese fries from Shake Shack to be delivered, so that I could compare.

    No surprise, the homemade one was better. It was more flavorful. I followed the exact recipe as shared , but they must have to add some preservatives or something in order to mass produce? I dont know. What I do know is that this stuff is liquid gold and Im now adding cheese sauce to everything.

    Since processed cheese or pasteurized cheese product, as its more technically called, does indeed melt, this explanation needs some tweaking! What you will have noticed is that American cheese melts differently from, say, cheddar cheese. American cheese melts and becomes creamy, but the fat does not separate from the solids. It stays nice and smooth! Other natural cheeses, depending on the fat content and firmness, will separate, so that the fat becomes a liquid that is not bound with the solids. This can result in a clumpy, greasy mess sometimes, depending on how you use the cheese.

    So, notwithstanding that all cheese is processed, so-called processed cheese and natural cheese both melt, but in different ways, with different properties. The ability of Velveeta cheese to melt into a perfect creamy dip that holds its emulsion is why we use it for nachos so often! You dont have to add anything other than your salsa or other ingredients to get a perfect dip for your tortilla chips.

    The magic word here is emulsion. What is different about American cheese is that it is cheese that is mixed with whey protein and other emulsifying ingredients. These ingredients hold the fat together with the solids and resist letting it go, even when heat is applied. If youve ever made a bechamel or white sauce, youve made an emulsion.     This is a personal choice, but I think the best Cheese Fries are made with steak fries that you season yourself with seasoned salt.

    I dont recommend the already seasoned steak fries they sell in stores because the flavor can be over whelming when combined with all the toppings.

    Fast food style thinner fries are a good back up option, however they usually dont hold up to the toppings as well as steak fries.

    Also, in a pinch, a crinkle fry is a good runner up to the steak fry. They are thicker and will do a little better than the thin fries.

    Prepare the fries however you would likein a traditional fryer, air fryer or in the oven. You just need hot fries!

    If you are preparing the fries in something other than the oven, make sure you still preheat the oven so you can pop the fries in and melt the cheese right at the end.
