Oh, and if you cant handle dairy from cows, great substitutes to use are Manchego, kashkaval, and pecorino Romano.
- Eggs This is the first time I added eggs to one of my Mac and Cheese recipes. However, the eggs are essential in this recipe to act as a binder and give firmer structure to our mac and cheese bites.

- buy a block of cheese and grate yourself. The pre-shredded kind doesnt melt that well.
- Chill or freeze the balls completely before frying. This will help them hold their shape.

Storing Leftover Mac and Cheese Bites

- Refrigerate Store them in the fridge for up to four days.
- Freeze For longer shelf life, store them in the freezer for up to two months.

Reheating
- Microwave Leftovers can be reheated in the microwave. However, you might need to brush them with butter to add moisture.
- Oven Preheat the oven to 350/177 and reheat these bites of deliciousness for 5-7 minutes or until warmed through. If frozen, reheat for 10-15 minutes. No thawing is required. Yaaay!
