Choosing Wood For Smoked Macaroni And Cheese

When smoking macaroni and cheese, you should prefer using light woods such as maple wood, pecan wood, and cherry wood. These woods introduce a hint of fruity and flavorful smokiness to the dish without being overpowering. Woods like Hickory and Mesquite are not recommended for baking mac and cheese. Easy Mac And Cheese In A Mug Recipe

Macaroni and cheese is the gift that keeps on giving, because, simply put, people love mac and cheese, its so easy to make, and, well, its absolutely loaded with cheesy goodness! But what if we told you that you could make macaroni and cheese in just 10 minutes in a mug? It is absolutely possible, thanks to chef and recipe developer Ting Dalton of Cook Simply. Dalton perfected a mac and cheese in a mug recipe, and it can go from the microwave to your table in just about no time.

Depending on the type of microwave you have, cooking times may vary. The issue here is that people have different microwave strengths, so what might be seven minutes for me, might only be five minutes for someone else, Dalton says. The cooking time of this recipe also depends on the type of pasta you use. While Dalton uses macaroni in her recipe, you could also opt for penne or shells. Just keep in mind that different pasta has different cooking times. Nevertheless, The water does boil over, so you need a dish underneath, Dalton notes. If it boils up too much, you may need to add more water.

    Key #: Use Evaporated Milk

Creamy Stovetop Mac and Cheese (Easy, Homemade Macaroni and Cheese)

The second big key was to use evaporated milk as the base liquid. Evaporated milk is a highly concentrated source of milk protein micellesbundles of proteins that can act as powerful emulsifying agentswhich help to keep the sauce creamy and smooth.

To make two servings, just think in sixes. All you’ve got to do is cook six ounces of dry pasta until the water is almost absorbed and the pasta is just shy of al dente , then add six ounces of evaporated milk and six ounces of grated cheddar cheese . Stir it all together until it’s creamy and emulsified, and you’re ready to eat.

    Wasn’t that easy?

Now, normally I do all my research on existing recipes before I start working on my own version. This time, I was so excited to get into the kitchen that I completely neglected to do so until afterward. Good thing I eventually did, too, because it turns out that there are quite a few similar recipes out there. Many call for cooking pasta directly in milk, a technique that works okay, but it can lead to scorching if you’re not super careful with stirring. I prefer the evaporated-milk route because it ensures a clean pan with no burnt bits on the bottom.

Of course, it also turns out that Pillsbury has a recipe that’s almost completely identical, save for a few differences . Looks like I’ve got more in common with the Doughboy than just an overly poke-able belly.

How To Make Cheesy Mac And Cheese

    1. Cook the pasta.

I like to cook elbow macaroni for only 4-5 minutes because it will continue to cook in the oven.

If you cook the pasta until its ready to eat, it will likely turn mushy in the oven.

    2. Grease the dish.

This part is important! The pasta will stick to the bottom of the dish if you dont.

    3. Combine the cooked macaroni, butter, cheese, salt, and pepper.

Add the ingredients directly to the dish for easy clean-up just be sure you have a tall-sided dish, so nothing spills out.

    4. Whisk together the milk and eggs.

This mixture serves as the base of the sauce. When baked along with grated cheese, they turn into a thick and creamy mixture, kind of like savory custard.

Pour the mixture over the macaroni.

    5. Bake the dish.

It will need around 40 to 50 minutes at 350 degrees Fahrenheit.

    6. Add more cheese!

This step is optional, but I like to add extra cheese and broil the dish for about 3-5 minutes.

    7. Serve and enjoy!

Let the dish sit for a few minutes before serving.

    Tips For Cheese Sauce Success

    White Cheddar Mac and Cheese

Here are a few tips to help make sure your nacho cheese sauce is a success:

    • Make sure to cook the flour in the butter for one minute. This helps cook out the floury flavor.
    • Use medium cheddar for smoother results. Sharp cheddar tends to break or become grainy easier than medium cheddar.
    • Remove the pot from the heat before stirring in the cheese. Overheating the sauce once the cheese has been added can cause the sauce to seize up and become thick and/or grainy. If needed, use only low heat to help the cheese fully melt.
    • Use block cheese and hand shred it when possible. Pre-shredded cheeses sometimes contain a lot of anti-caking powders, which can cause a powdery flavor in your cheese sauce.

And stir together until its all melted. Go ahead and turn off the heat.

Now its time for seasoning! Add about 1/2 teaspoon salt, 1/2 teaspoon seasoned salt If youre sensitive to salt, start really low and work your way upand remember that the cheese imparts quite a bit of salt to the mix.

BUTand this is importantbe careful not to UNDERSALT the mac & cheese. It really needs ample salt to put the flavor over the top.

*I also use paprika, cayenne pepper, even ground thyme every now and then. Play with different ground spices and see what you like best.

And finally, add plenty of black pepper, of the Black Dust variety. Honestly, I love freshly ground pepperbut not in homemade Mac & Cheese. For me, it has to be the powdery stuff.

Now THATs what Im talkin about.

And guess what? You can just steam some fresh broccoli and spoon some of this over the top. Kids from all over the land will show up at your doorstep.

Did you know a single serving of broccoli is positively loaded with Vitamin C?

Now just dump in the drained, not-fully-cooked macaroni!

    And stir the mixture together.

I use a little less than the full amount of cooked macaroni, because I love it extra creamy and coated. Just add it according to how you like it.

Now, you can either dish it up as it is right now, which makes for an ultra-creamy love fest

OR you can pour the macaroni into a buttered baking dish. This is a 2-quart dish, but a 9 x 13 pan would work just fine.

    Kinda like this.
