The addition of vegetables to cooked mac and cheese will bring both a satiating boost and a pleasant textural crunch to the dish.
“My favorite way to upgrade boxed mac and cheese is to add vegetables to make it a more nutritious option and to add fiber, which will make the dish more filling overall. This also allows you to clear out your vegetable crisper to reduce food waste,” says recipe developer Taylor Stinson of The Girl on Bloor.
Stinson recommends broccoli for mac and cheese purposes, but summer or winter squash, cauliflower, bell peppers, and peas also make excellent additions.

For the creamiest results, I highly recommend shredding the cheese from a block of cheese. Pre-shredded cheese contains additives that prevent the cheese from naturally sticking together. The additives also change the way cheese naturally melts however, if you need to use pre-shredded cheese for convenience, go for it!

Put the macaroni and the water into a mug. Microwave on full power for 2 minutes. Stir. Microwave for another minute. Stir. Microwave for a fourth minute, and then check to see that all the water has been absorbed. If not, microwave a bit more, until it is gone.
Bring a large salted pot of water to a boil. Add noodles and stir. Cook the noodles until they are al dente. Before straining noodles from the pot, remove about ¼ cup of the pasta water from the pot and set aside. Strain water from the noodles. In a large skillet, heat butter over medium-high until melted. Sprinkle in the all-purpose flour to form a paste. Cook for 2 minutes, moving frequently, until flour is lightly browned. Slowly whisk in the milk, stirring constantly. Sprinkle in the salt, pepper and old bay seasoning. Stir in the shredded cheeses.

Can I Freeze This
Yes, you can freeze baked mac and cheese. Transfer the cooled mac and cheese into an airtight container and freeze for up to 2 months. Allow to thaw overnight in the refrigerator.
You can also keep it in the baking dish, covered tightly with foil. When its time to eat, bake the frozen mac and cheese, covered with foil for the first 40 minutes, at 350°F / 180°C / gas mark 4 for 1 hour.

Even though weve covered the topic of macaroni and cheese many, many times, the subject is somehow never overdone.
Two evenings ago, I came across the best Ive had in recent memory, and it is numbered now among some of the most standout versions Ive ever tasted. This particular incarnation had three unique elements that could make a difference in the way that you make your mac n cheese.
