You CAN use your favorite mixture of cheese but make sure that it has a strong flavor or it will get lost in the sauce mixture itself and you wont be able to taste it.

You can use all cheddar or all gouda, but we like to mix this. If you want a stringier dip then you can use mozzarella instead of the gouda.

Ill tell you what, there arent many problems that cant be solved with a hearty bowl of warm cheese sauce. At least thats what Im telling myself lately.

I made this cheese sauce for a big ol pretzel party I held at The Bakehouse a few weeks back. We went through it. I cant be sure some people didnt double dip but really, could you blame them?

The pretzels you might recognize from these Sourdough Everything Pretzel. Its by go-to recipe but thats mostly because I try to keep a sourdough starter in my fridge. If you want to get at some soft pretzel action, heres another recipe that doesnt require a starter.

Whatever you do cheese sauce. Mmmmkay, lets play.

Ok heres what youll need:

  • lots of shredded sharp cheddar cheese
  • butter and flour, for a thickening roux
  • and beer! It is beer sauce, afterall. A light beer will be best, a pilsner.
  • whole grain mustard and Worcestershire sauce
  • salt and coarse black pepper + chili powder and garlic powder.

In a large saucepan, melt the butter until it spits and crackles just a bit.

Whisk in the flour and cook it down, escaping some of the flour taste. The mixture will be thick, quick thick.

To the thick flour and butter, we slowly pour in the milk, whisking ferociously.

With the milk whisked well, well add the beer.

Its frothy and satisfying. Get it in there.

Flavor, too! Mustard first.

Worcestershire is important for that deep umami flavor.

I dip, you dip, we dip!

On my podcast, Recipe of the Day, when I talked about this dip, I talked about how you can make it perfect for New Years Eve if you do a couple of ingredient swaps. To make this into a fancy fondue-inspired Champagne and Swiss Dip, youd use an inexpensive dry sparkling wine, like a prosecco, instead of the beer.

Then, instead of the Cheddar cheese, youd use Swiss. The only other thing that you need to change is to omit the cayenne pepper. I dont think that heat goes as well with the Champagne and Swiss flavors as it does with the beer and Cheddar.

If you wanted to add something else for flavor though, the best thing would be a touch of kirsch. Kirsch is a cherry flavored liqueur that is traditionally found in cheese fondue. How To Make Creamy Beer Cheese

First, melt some butter in a pot and stir in your flour. This is what is called a “roux”. Cook this down, swirling often with a wooden spoon, about 10 minutes or so to cook out the raw flour taste. Learn more about How to Make a Roux.

Next, add in your preferred seasonings. I’m using spicy chili flakes and some salt, but you can vary it up here, or add none at all for an easy cheese sauce.

Some flavor ideas for you include garlic powder, cayenne pepper for some heat, a few splashes of hot sauce. Worcestershire sauce is a nice touch, too.

Next, swirl in your beer.

In this particular case, I used a cream ale from my own home brew batch, though you are free to use any type of beer you would like.

I suggest a full flavored light colored beer, as a darker beer can affect the appearance, though perhaps that is what you are looking for.

I judge not!

Truly, any beer is good, though a simple light beer probably won’t add much flavor. Keep stirring until the roux becomes nice and thick.

Next, swirl in the cream cheese until it melts through. This should take 6-7 minutes or so.

Once that is melted through, add in the shredded cheese a bit at a time and stir constantly until it is incorporated and melted evenly.

Like the beer, you can use many different types of cheeses, so long as they are melty cheeses. Like to use a sharp cheddar cheese or pepper jack.

Some won’t melt as well, so avoid those harder cheeses or ones that don’t melt consistently.
