Sure, single-wrapped slices might seem all clean and neat. But basically, Kraft Singles were invented to never expire. At first, because they looked perfect, people were all for buying them. The Singles didnt curl, all the slices were the same thickness, and they didnt get hard but thats because they werent real cheese .
When Kraft Singles became popular after World War II, a lot of food production was industrial. People valued that their cheese came from a factory. Standardized meant high-quality.
Nowadays, we know better. We eat clean, we avoid processed foods, we detox, and we stay away from long ingredient lists. My advice? If youre eating a simple food like cheese or fruit, the ingredient list should only have one item the food itself. Pick another cheese next time youre getting hangry.

Why Is Parmesan Lactose
Parmesan is made from cows milk and cows milk does contain lactose. So, why is Parmesan lactose-free? To further investigate this, we will take a look at some parts of the production process. Traditionally, the production begins with the milk in copper-lined vats. Certain thermophilic lactic acid bacteria are added to the milk. This also starts the lactose breakdown process by the bacteria. The cheese maker control the pH-value of the milk. When the desired value is reached, calf rennet is added. This starts the coagulation. After this, there are couple more steps involved, but the further steps are not important regarding the lactose breakdown. But finally, the cheese has a round form like a wheel. Each cheese is placed on wooden shelves and has at least 12 months to ripen or typically even more. This is very important, because during these 12 months, lactose is further broken down to lactic acid. So, the long aging time is not only important for an awesome flavor, but it also guarantees that Parmesan is lactose-free.
A Rind Is A Terrible Thing To Waste
The cheese James is selling is still getting moldy and contaminated. When the customer opens the Kraft jars, they introduce air and contaminate the cheese. His process extends the shelf-life a bit, but he needs to find a way to make cheese last longer.
Pasteurization, invented by Louis Pasteur for the French win industry exists, but it’s primarily used by American beer brewers. Pasteurized milk is a foreign concept.
James Kraft gets a big copper kettle and starts playing mad scientist. He adds different kinds of cheese but ends up with big globby messes. A year goes by, Kraft still doesn’t have a prototype, but he’s relentlessly focused on going all-in on creating the world’s first pasteurized cheese.
After three years of experimenting, kraft creates a product that doesn’t cause the oil to separate using multiplying salts. But he doesn’t know if it’s shelf-stable. Bacteria on cheese can cause diphtheria and tuberculosis. He leaves his product out for a full 10 days.
Miraculously, it’s safe. Kraft has just created a cheese that can be shopped and last a long time, but best of all tastes amazing.
