Macaroni and Cheese Recipe | How to Make Mac and Cheese

The first modern recipe for macaroni and cheese was included in Elizabeth Raffalds 1769 book, The Experienced English Housekeeper. Raffalds recipe is for a Bchamel sauce with cheddar cheesea Mornay sauce in French cookingwhich is mixed with macaroni, sprinkled with Parmesan, and baked until bubbly and golden.

Best Freezer Mac And Cheese

The way you prepare your mac and cheese also makes a difference. While you can successfully freeze any type of mac and cheese, preparing what’s called a “make ahead” mac and cheese may give you a better finished product that’s less grainy after you reheat your mac and cheese.

To prepare the make ahead mac and cheese, all you have to do is add some cream cheese into your cheese sauce mixture when you’re cooking it. You may also want to decrease the amount of flour a little bit, since the cream cheese will thicken it a little bit and reducing the flour will help prevent graininess when reheating.

Another helpful tip that comes from cooking instructor Linda Carucci in an interview with the Washington Post is to cook the pasta al dente if you’re planning to freeze it and reduce the amount of pasta you use. Carucci says that this can help prevent mushiness and dryness after freezing mac and cheese, since the pasta will be firmer and there will be less to absorb the cheese sauce.

Making Mac And Cheese Ahead Of Time

Homemade Macaroni and Cheese Modern Honey®
  • Make as directed , transfer to baking dish and cool completely. Cover tightly with foil and refrigerate 1-2 days ahead.
  • Before baking, let dish sit on counter for 30 minutes.
  • Bake at recipe temperature for 25-35 minutes, until hot and bubbly.

As a caveat, this recipe, as with most mac and cheese recipes, loses some of its creaminess when made ahead. This dish has been tested when made right away, which yields the best results.

I would increase the amount of sauce slightly if you need to make this recipe ahead of time.

To Bake Or Not To Bake:

You dont have to bake the mac and cheese in this recipe. Everything gets fully cooked and is essentially ready to eat after the cheese and noodles are added. However, I love the extra gooeyness that comes when the cheese is baked and I think baking it adds a level of sophistication you just dont get without.

How To Make Homemade Mac And Cheese Step By Step Photos

Start by shredding an 8oz. block of sharp cheddar. Its very important to shred the cheese yourself instead of using pre-shredded cheese. For more information on that, see the section above the recipe titled Avoid Pre-Shredded Cheese.

Next, boil 8oz. of macaroni according to the box directions . Drain the macaroni in a colander.

You can start the cheese sauce either while the macaroni is boiling, or wait until its draining and just make it in the same pot to save on dishes. Add 3 Tbsp butter, 3 Tbsp all-purpose flour, and ½ tsp onion powder to the pot.

Place the pot over medium heat and allow the butter to melt. Whisk the butter, flour, and onion powder together as the mixture begins to get bubbly and frothy. Cook and whisk for about one minute after it becomes bubbly.

Whisk 2 cups of milk into the butter and flour roux. Continue whisking as the milk begins to heat .

Allow the milk to come up to a gentle simmer, at which point it will thicken to the consistency of heavy cream or gravy. Turn the burner off at this point.

Season the sauce with ½ tsp salt and ½ tsp hot sauce, or the seasonings of your choice .

Begin adding 8oz. shredded cheddar to the pot, one handful at a time, whisking until it is completely melted before adding more. If the sauce cools down too much to continue melting the cheese, you can put it over low heat briefly, but avoid allowing the sauce to simmer again. Overheating cheese sauces will cause them to break and become grainy and oily.

Why Bake Mac And Cheese At All

If youâve ever opened a box of the instant stuff or made stovetop mac and cheese from scratch, you know thereâs no real requirement to put it in the oven. You save time and get more or less the same thing without that extra step.

In my opinion, there are two arguments for baking it. First is the crispy topping. In some recipes, you put the mac and cheese in a baking dish and toss it in the oven until the top is bubbling and browned. In others, you take it a step further and add a crunchy topping of some sort. I prefer the latter approach: As long as weâre going for some crunch, we might as well go for maximum crunch. In my recipes, that means a buttery panko bread crumb topping, baked until golden brown.

The second reason for baking mac and cheese is that it transforms it into a make-ahead dish. You can assemble it in advance, refrigerate it, and then finish it in the oven when youâre ready to serve. Of course, the longer you try to hold it, the more moisture the pasta will gradually absorb from the sauce, which makes for a softer texture. But I donât really mind that. In many ways, overcooked pasta is actually preferable to al dente in a cheesy baked dish like thisitâll make for more of a cohesive, scoopable mass, not unlike a savory, Americanized kugel.

Make The Cheese Sauce

While the macaroni is cooking, make the cheese sauce. It’s really easy but there are a few notes that we’ll go over to ensure your success!

Make a Roux

This homemade mac and cheese sauce starts with a roux. What is a roux? It’s a mixture of fat and flour that is used to create thick sauces. Start by melting the butter and then adding the dry ingredients .

Use a whisk to combine the ingredients until the mixture is homogenous . Let it cook for about 60 seconds before moving on!

Add wet ingredients.

After the roux has cooked for 60 seconds, add the milk and whisk the mixture really well. Add the sour cream or Greek yogurt and whisk again. At this point the mixture will be fairly runny. Cook over medium heat whisking every 10-15 seconds until the sauce starts to thicken.

Do NOT let this mixture boil! If you do you may end up with a mac and cheese sauce that is too thick. Once the sauce has thickened enough to stick to a spatula, turn the heat to low. Then it’s time for the next step…

Add the cheese & whisk until smooth

Add the cheese and whisk until the sauce is smooth and all the cheese is melted. This will take 1-2 minutes over low heat. At this point it is important to taste the cheese sauce and adjust the salt/garlic according to your tastes!

Do You Keep Water Boiling When Cooking Pasta

You need the intense heat of boiling water to set the outside of the pasta, which prevents the pasta from sticking together. That is why the fast boil is so important the water temperature drops when you add the pasta, but if you have a fast boil, the water will still be hot enough for the pasta to cook properly.

Make The Cheese Sharp White Cheddar

If youâre looking for the smoothest, creamiest cheese sauce for the best macaroni and cheese ever, youâll want to use sharp white cheddar. This cheese, according to , makes for the most luxurious sauce. Other kinds of cheeses can get gritty, stringy, or otherwise unappetizing, but not sharp white cheddar that one stuns every time. Plus, the flavor is the perfect compliment to your otherwise rich, fatty dish. The sharpness of the cheese will cut through the butter and cream flavors to round things out.

Tips To Make Homemade Mac And Cheese

  • Cook your pasta al dente as the noodles cook extra in the sauce and you dont want them mushy.
  • Dont forget to salt your pasta water.
  • While not everyone agrees with rinsing the pasta after cooking, in this particular recipe it stops the noodles from cooking and the sauce is created with a texture that pairs perfectly with the rinsed noodles.
  • A sharper cheddar cheese will add a stronger cheese flavor.
  • Pre-shredded cheeses contain additives to keep it from sticking together which affects the way it melts. The sauce is best if you shred your own cheeses.
  • Allowing the baked macaroni and cheese to rest for a few minutes after baking will thicken the sauce.
  • Most importantly of allDo not over bake this recipe.

When cooking your macaroni noodles, cook them according to the package directions but you want them to be still firm. If your package says 6-8 minutes, just cook them 6 you get the idea. I choose not to top this baked macaroni casserole with a bread crumb mixture but if you really like bread crumbs on your macaroni and cheese, by all means, add some!

And stir together until its all melted. Go ahead and turn off the heat.

Now its time for seasoning! Add about 1/2 teaspoon salt, 1/2 teaspoon seasoned salt If youre sensitive to salt, start really low and work your way upand remember that the cheese imparts quite a bit of salt to the mix.

BUTand this is importantbe careful not to UNDERSALT the mac & cheese. It really needs ample salt to put the flavor over the top.

*I also use paprika, cayenne pepper, even ground thyme every now and then. Play with different ground spices and see what you like best.

And finally, add plenty of black pepper, of the Black Dust variety. Honestly, I love freshly ground pepperbut not in homemade Mac & Cheese. For me, it has to be the powdery stuff.

Now THATs what Im talkin about.

And guess what? You can just steam some fresh broccoli and spoon some of this over the top. Kids from all over the land will show up at your doorstep.

Did you know a single serving of broccoli is positively loaded with Vitamin C?

Now just dump in the drained, not-fully-cooked macaroni!

And stir the mixture together.

I use a little less than the full amount of cooked macaroni, because I love it extra creamy and coated. Just add it according to how you like it.

Now, you can either dish it up as it is right now, which makes for an ultra-creamy love fest

OR you can pour the macaroni into a buttered baking dish. This is a 2-quart dish, but a 9 x 13 pan would work just fine.

Kinda like this.
