Youd think, coming from an Italian family, I would have heard about cheese crisps sooner. The cheese crisps, also called frico, are pieces of lacy fried cheese that can be formed into bowls, chips or a crunchy garnish. Hailing from Northeast Italy, the dishalong with a softer version carrying the same namehas been passed down from one generation to the next.

Where have I been?!

You can use any hard cheese, like Parmesan, Asiago or aged cheddar, that will retain enough of its shape to maintain a lacy texture, but melt enough that the crisp will hold together.

Equipment Needed To Make Baked Cheese Crisps

First of all, is an:

Oven I would suspect that every kitchen has one.

Cheese grater to grate block cheeses. You may also use bagged, shredded cheeses to make the crisps.

Large baking sheet or cookie sheet a half-sheet is perfect.

Parchment paper this is a must because it allows the hot crisps to be removed without much sticking.

Cooking oil spray to spray a little bit on the parchment paper so that the crisps release easily.

Thin spatula a thin metal turner works best to pick up the cheese crisps.

  • Sheet pan: Everyone needs a sturdy sheet pan, and this is my favorite. The raised sides are great for roasting meat and veggies without overflow!
  • Sometimes I make these for a party, but sometimes its just for me. The best part about this recipe is its easy to make as many or as few as you need with no changing of measurements and cook times!

    Make It In The Air Fryer

    • First be sure that the tortilla will fit in your air fryer. If its too big, just cut it into thirds or quarters.
    • Lightly mist one side of the tortilla with cooking spray.
    • Place the cheese and other toppings on the other side of the tortilla. Because these are thin they will cook fairly quickly. I suggest you air fry them at 350°F for only 2-3 minutes.
    • Check and add more time if needed.

    Dips and snacks are my first to-go for these crunchy, carb-free discs, but sometimes I make WAY too many and have to find other uses for them.

    These are a great crunchy alternative to add to a salad, or a fun element to add with your tomato basil soup instead of grilled cheese!

    One fun part of this recipe is, before they cool, you can easily mold or shape them into other forms! Place them over the underside of a muffin tin before cooling and use them as mini cheese bowls, or roll them into tubes to be stuffed for a fancy keto appetizer.

    Can You Freeze Shredded Parmesan

    To freeze, you may want to consider freezing the grated Parmesan cheese in the container given to you at the store, assuming it has an air-tight lid. Remove the quantity that you would like to keep in the fridge, and then seal the container tightly. Frozen grated Parmesan cheese should keep up to a year in the freezer.

    How Do You Melt Cheese In The Oven

    In an oven pre heated to 375 degrees Fahrenheit, you want to allow the butter to melt completely before you put the cheeses in. Once the temperature is reached, put your cheesecakes in for about 30 second. Then put them back in again for another 30 sec. After this, turn off the heat and let the rest of your ingredients cool down. If you are using a microwave, follow the same procedure. This will ensure that the mixture is fully cooked.

    HOW TO MAKE PARMESAN CHEESE CRISPS

    They can be if you choose the right cheese for them. In this case, the recipe calls for only 1 ingredient: finely grated parmesan cheese. Make sure you choose real, aged parmesan and dont use any powdered canned stuff with fillers and anti caking agents.

    You can also opt for any hard aged cheese you like. Just dont use a block of Kraft or pre shredded cheese in a bag. The moisture content is too high and they wont turn out right. Bagged cheese is also covered in cellulose which will inhibit melting.

    I also recommend looking for a grass fed cheese which is higher in beta carotene and omega-3 fatty acids. Organic valley and Aldi both sell nice varieties of grass fed cheddars.
