Macaroni and Cheese Recipe | How to Make Mac and Cheese

If you want to get ahead for a busy weeknight, you can make a dish of this mac and cheese in advance. But don’t bake it. Instead, follow all the steps, assemble it, and cook it completely. Then cover it with aluminum foil, and put it in the freezer.

When you’re ready to bake it, thaw it in the fridge for 24 hours, then bake it. You may need to add 5 to 10 minutes of cook time for the casserole to be completely done. But just monitor it for a bubbly, browning top. That’ll be your cue it’s ready to come out of the oven.

  • Preheat oven to 400°F. Prepare pasta according to package directions.

    Microwave milk at HIGH for 1 ½ minutes. Melt butter in a large skillet or Dutch oven over medium-low heat whisk in flour until smooth. Cook, whisking constantly, 1 minute. Gradually whisk in warm milk, and cook, whisking constantly, 5 minutes or until thickened.

  • Step 3

    Whisk in salt, black pepper, 1 cup shredded cheese, and, if desired, red pepper until smooth stir in hot cooked pasta. Spoon pasta mixture into a lightly greased 2-qt. baking dish prepped with cooking spray top with remaining cheese. Bake at 400°F for 20 minutes or until golden and bubbly.

Baked mac and cheese. Its nearly the universal comfort food, and there are SO many variations! In fact, I almost didnt post this recipe, as there are SOOOO many mac and cheese recipes available, and most people already have their favorite way of making it.

Of course, theres no right way or wrong way, so Im here sharing the way I like to make my mac and cheese .

Making Mac And Cheese Ahead Of Time

  • Make as directed , transfer to baking dish and cool completely. Cover tightly with foil and refrigerate 1-2 days ahead.
  • Before baking, let dish sit on counter for 30 minutes.
  • Bake at recipe temperature for 25-35 minutes, until hot and bubbly.

As a caveat, this recipe, as with most mac and cheese recipes, loses some of its creaminess when made ahead. This dish has been tested when made right away, which yields the best results.

I would increase the amount of sauce slightly if you need to make this recipe ahead of time.

Now its time for seasoning! Add about 1/2 teaspoon salt, 1/2 teaspoon seasoned salt If youre sensitive to salt, start really low and work your way upand remember that the cheese imparts quite a bit of salt to the mix.

BUTand this is importantbe careful not to UNDERSALT the mac & cheese. It really needs ample salt to put the flavor over the top.

*I also use paprika, cayenne pepper, even ground thyme every now and then. Play with different ground spices and see what you like best.

  • Add pasta, liquids, butter, hot sauce and seasonings.
  • Dont stir. Just gently press down with a wooden spoon to make sure all the pasta is submerged. This ensures the pasta will cook and not be hard. Stirring could result in a burn notice on your Instant Pot.
  • Pressure cook for 4 minutes.
  • Quick release. I tested performing a natural pressure release, and it usually resulted in overcooked pasta, so I prefer to do a quick release.Be aware, this recipe is starchy, and can sputter quite a bit when venting. I usually place a folded paper towel loosely over the vent to prevent any kitchen messes. Keep in mind, this isnt recommended by Instant Pot, just something I do do this at your own risk.
  • Turn off your Instant Pot. This prevents any possible overcooking by keeping it on keep warm.
  • Stir in heavy cream, and cheeses. Add in the cheese a handful or so at a time, stirring really well after each addition. Keep stirring until a creamy sauce forms.
